I love blue cheese and cranberries. This is DELICIOUS and I make it every Christmas. Got it from a "Diamond" ad in a 2002 magazine. (To say that the filling of this pie, that has blue cheese, tastes like "stuffing" is beyond me...) -- posted by MillaKette

Pistachio Cake With White Chocolate Buttercream

This recipe is fabulous! It is the kind of cake that brings WOW's from your guests! ;) I've had it for eons just never posted! The caramelized pistachio shards make the cake look & taste like it was specially baked in a high-end bakery! BH&G Magazine, published in 2002, Meredith Corp. It has an hour chilling time and an hour standing time, for which I didn't factor in the time..It has a long laundry list but you will see it all goes together quite nicely, as it has a few item repeated.;) It is truly worth it!! :) -- posted by Manami

Crispy Prosciutto Pinwheels

A former coworker gave me this recipe years ago. It is a delicious appetizer, perfect for parties. Always enjoyed by all. Be sure to use Champagne mustard as it has a mild flavor and compliments the prosciutto nicely. Do not use Dijon mustard as it will compound the saltiness of the prosciutto. You may want to taste test your prosciutto before using to ensure it is not overly salty. -- posted by swissms

Singin' Hinnies - Northumbrian Tea-Time Griddle Cakes/Scones

Served warm and oozing with butter, these fabulous fruity griddlecakes make a great treat for breakfast or afternoon tea. I remember my grandmother making these when I was little; she lived in a very old stone cottage in Northumberland, and made these on a huge cast iron black griddle, or girdle as they were also called! We used to eat them hot from the griddle, with butter – in front of a roaring wood fire during the winter months. Singin' hinnies are a type of fried fruit scone or griddle cake, so called as they 'sing' and sizzle whilst cooking. 'Hinny' is a Northern term for endearment used especially to children - my grandmother used to call me "hinny". Similar to singin' hinnies are Northumbrian griddle cakes, also known as Gosforth gridies.
If you are making them for a children’s party or at Christmas, put coins that have been briefly boiled, then wrapped in greaseproof paper, in the middle of some of the singin’ hinnies. -- posted by French Tart

Twice-Baked Potatoes

These twice-baked potatoes, stuffed with cheddar cheese and bacon, are just the way my mother used to make them. I always loved the addition of the green onions. When you are feeling indulgent (these potatoes may not be for the weight conscious!) and are in the mood for a good steak and potatoes, try these! They are also good served alongside prime rib, chicken, or pork (even good all by themselves). Double or triple the recipe for your dinner parties. And, they can even be prepared upto 2 days ahead...just cover with plastic wrap and refrigerate until ready to do the final bake. -- posted by Alan in SW Florida

I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts. -- posted by Annacia

Christmas Deli Salad With Pomegranate, Parma Ham and Gorgonzola

A fabulous wilted salad boasting the rich, festive colours of vibrant crimson reds and lush holly greens, as well as being full of flavour - this is simply a wonderful salad for the Christmas, New Year or Thanksgiving family table. Please do use any blue cheese or ham of your choice; Stilton or Roquefort would be lovely as well as Prosciutto or Bayonne ham.......and, if you are serving any vegetarians, just leave the ham out of the equation! The dressing can be made up a few hours or a day beforehand, just wilt the leaves and assemble the salad right before serving.
Jewel Studded Holiday Fudge With Ginger and Cranberries

A delectable holiday fudge, which is the ultimate treat for anyone with a sweet tooth. This buttery, crumbly fudge is enhanced and made more festive by studding it with rich, jewel-like fruit. If you do not have stem ginger handy, you can use crystallised ginger or glace ginger instead. Making fudge the proper way involves using a sugar, jam or candy thermometer - or you can use the "soft ball" method if you do not have a suitable thermometer. Drop a small spoonful of the fudge into cold water, if it forms a malleable soft ball, the setting temperature has been reached. If you plan to make this fudge for gifts or to sell, pack the squares into attractive cellophane bags, glass jars or boxes and add a pretty ribbon as well as a label of ingredients.
Chocolate Malt Crinkles

Found this gem in The Seattle Times. Keeping because I have just enough Ovaltine to try these out. Have some friends coming in tomorrow to serve as tasters. Note the recipe calls for a 2 hour (preferably overnight) refrigeration of the dough not included in the prep time... Update - made these tonight & they are sooooo good! I rolled them into balls, coated in the Ovaltine & chilled them on the greased baking sheet until my oven came to temp. Next time I'll let them sit at room temp because they didn't spread very much. Taste? Like amazing dark rich little rich brownie bites - we served them with fresh whipped cream... soooo good!
Easy Eggnog

I drink this stuff by the gallon full. It's best if you leave it stand overnight to let the flavours really mix. I use 2% milk in mine, just to keep the calories down so I don't feel so bad about drinking so much. And I just leave a plastic spoon in the container and give it a quick stir before I pour. I've had so many people ask me for the recipe now, even people who don't like eggnog like this, that I figured I'd post the recipe. It's also great in coffee, or as french toast.
Eating Well 2005- says,"Portobello mushrooms are so meaty that even carnivores will be satisfied with this lusty vegetarian dish. Instead of pounding the caps, we weigh them down in the skillet to flatten them while they cook".
Carl Andersen's Ris Alamande, Danish Christmas Dessert

Having lived in Copenhagen since 1994 I can testify that 90% of Danes will have a variation of this dish for dessert on Christmas Eve, which is the big day here. Carl Andersen was the founder and longtime owner of Chatam Restaurant in Hollywood, a favorite of the stars of the past. The recipe is from his daughter's "Star Food" cookbook.
PLEASE REMEMBER: You can not use "converted" rice to prepare this dish. You also can not hurry up the cooking times-it says two hours in the oven, and that is what you must do.
I have modified the dish by leaving out 1 cup blanched, slivered, almonds, which I have never seen used in the dish here. One whole blanched almond may be added just before serving-the person who finds this in their serving traditionally receives a "mandelgave", some small gift, from the host/hostess. NOTE: If there is any excess milk floating around after the cooked rice has cooled, pour it off and proceed with the recipe. -- posted by Dan-Amer #1

Chocolate-Dipped Orange Cookies

This recipe originally called for lemon in place of the orange but orange and chocolate translates to Christmas for me. Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters. Several folks would not believe these were not purchased! They are that good with bittersweet chocolate & about 3+ teaspoons orange zest. Will make next with tangerine zest! -- posted by Buster's friend

Crispy Vanilla-Spice Sugar Cookies

Sugar cookies kicked up a bit with minced ginger - Mmmmm! Bonus - these do not have to be rolled (but the cookie painter's in this house DEMAND those paintable shapes LOL!) Found in The Washington Post who noted this recipe was adapted from cookbook author Nancy Baggett. The dough only has a 10 minute rest time notes - so it is fast too. Bet it would be OK wrapped in the fridge if you are like me - dough one day, bake the next. -- posted by Buster's friend

Momma's Hot Cheese Dip

This is a recipe our Dear Late Mother used to make often for family gatherings and is an all time favorite of everyone in the family. We serve this in a crock pot on warm since it is best served hot, but can be served in a Sourdough bowl. Mom always cubed sourdough french bread to serve this with, and it usually took more than one loaf to satisfy the many who would have it. You may find as we have that for large family gatherings we had to double this recipe. *** Note*** although this recipe calls for Velvetta Cheese, you can substitute any good quality American Processed Cheese. -- posted by jacques lee

Ingram's Old Fashion Sugar Cookies

This is a recipe from my grandmother's kitchen. My mother has made these for Christmas every year since I was a child (over 30 years now) and every person that has tried these think that are delicious!

Icing the cookies is a family tradition and is one that is fun and can take some time so be sure to set a couple hours aside to do so. Although it can take time to icing these cookies it'll be well worth the work in taste and family fun. I use fresh or frozen corn, but canned corn can be used also. You would just add 1 (15) oz. can of whole kernal corn. You can use Tabasco Sauce for the hot sauce, I usually use Sriacha Asian Chili Sauce, any kind will do..Enjoy! -- posted by Chef#856954

Ed's Sugar Cookies

This is my husband's recipe and it has withstood the test of time. These delicious cookies are light & airy and fun to decorate. My husband is the Sugar Cookie king in our family and our grown kids still anxiously ask each year if Dad is making sugar cookies this Christmas :). Ed prefers using insulated cookie sheets. Yield and baking time may vary, depending on rolled dough thickness, the size of the cookie cutters and oven accuracy. NOTE: Chilling time is included in prep time. Overnight refrigeration is best, but if you are in a hurry, you can get by with chilling the dough for at least two hours. Do not skip the chilling step or the cookies may not hold their shape. -- posted by Kat's Mom

Boxing Day Festive Roast Pumpkin and Cheese Lasagne - Lasagna

Roasted pumpkin and creamy cheese lasagne (lasagna); a Boxing Day special - although I have made this for Christmas Eve too! This is a wonderful addition to the festive vegetarian table, but is ALSO hugely popular with meat eaters. This is my adapted version of Nigella Lawson's pumpkin lasagne; I have changed a few of the methods and added (as well as omitted) a few ingredients! Boxing day is the day after Christmas day, also called St Stephen’s Day – the 26th December; it is a public holiday in the UK and most Commonwealth countries……….generally a turkey curry day, or a turkey-free day, one of the two! Serve this with a large bowl of salad and some crusty bread for mopping up the delicious sauce. -- posted by French Tart

Best Glazed Butter Cookies (America's Test Kitchen)

The geniuses at America's Test Kitchen have created tender, crispy cookies that roll out easily. Cream cheese—a surprise ingredient—gives the cookies flavor and richness without altering their texture. For a dough that's incredibly easy to handle, this recipe uses the "reverse" creaming method: incorporate slightly softened—not melted—butter into the flour and sugar (rather than first creaming the butter and sugar).
If desired, the cookies can be finished with sprinkles or other decorations immediately after glazing.

Escargot Vol-Au-Vent. Garlic Butter Snails in Mini Vol-Au-Vents

Garlicky buttered snails served in little light vol-au-vent cases, what a treat for all snail lovers! Living in France gives me access to some wonderful escargots, as well as superb garlic and butter too. These are just brilliant when served as appetisers for New Year or any other festive gathering. The beauty of these over the classic snails served in a baker or in their shells, is that you can eat the WHOLE thing! EVERY single bit of that naughty but exceedingly nice garlic and herb butter, all in one amazing mouthful! If you are unable to get hold of mini vol-au-vents, I have posted an alternative way to make your own little puff pastry cases, using readymade pastry for ease of preparation! Allow 2 to 3 per person if these are being served with other nibbles and appetisers. (Prep time includes baking the cases if not using readymade vol-au-vent cases.) -- posted by French Tart

Mrs. Kern's Date Balls

As a child, my parents traveled quite a bit and a retired couple (Mr. and Mrs. Kern) would stay with us kids. I'm sure keeping 4 kids busy wasn't easy, and Mrs. Kern would make these no-bake treats for us. It's a simple-to-prepare recipe, one that Mrs. Kern allowed us to help make — we were in charge of rolling the date balls in coconut. -- posted by *Kathy*

Raspberry Meringue Pie

This is so good! Smooth and creamy! Great for Valentine's Day! This works great for the holidays too! Very festive! If you aren't a meringue fan, do like I do and use whipped cream for the meringue!
Major Grey's Chutney Cheese Ball With Cherries and Pecans

This is a great tasting cheese ball that is very simple and easy to prepare! Requires several hours chilling-- so plan ahead. Serve with assorted crackers or crusty bread, add a nice bottle of wine and grapes for a party or tucked into the picnic hamper.
Fruit and Cheese Bites

This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. Perfect for the holidays, New Year's parties or anytime you need a no cook appetizer.
Enjoy! ChefDLH -- posted by ChefDLH
