Creamy Egg Calzone

This was made for me once and I mimiced what I remembered of it. You could add fresh vegetables or a breakfast meat if preferred. Fairly quick to prepare, but will taste like you worked very hard on it.
Next-Day Baked Cinnamon-Apple French Toast

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 . -- posted by KLHquilts

Gateau Basque (French Custard or Jam Tart)

Another great recipe from Dorie Greenspan. It is a traditional dessert from the Pays Basque region of France with a double cookie-like crust and a custard or jam filling (use Recipe #405945). It's not overly sweet and can be enjoyed any time of day. It's very sturdy and therefore good for transporting.
You can use different fillings like blueberry jam, sweet cranberry relish, or even lemon curd. This simple dessert is best plain or with a little whipped cream or ice cream.
Doug requires at least 30 minutes to chill.
Storing: Wrapped well, the jam-filled cake will keep for a day or so at room temperature. You can also keep the cream-filled cake overnight, but it will need to be refrigerated. However, because refrigeration can dry cakes. It's best to serve the cream-filled cake the day it is made. -- posted by blucoat

German Pancake (Also Called Dutch Baby)

The German pancake, also called Dutch Baby, is like a crepe crossed with a popover. It's ridiculously easy to make (the batter is made in under 2 minutes in a blender) and is always a crowd pleaser. Watching the pancake puff up before your very eyes is always entertaining. You can add fresh fruit to the batter, add it on top after baking ,or go crazy and do both! Then you have the option of topping it with the more traditional squeeze of fresh lemon juice and powdered sugar or simply drizzle on the maple syrup, for the syrup lovers. -- posted by P ROD

Bacon & Cheese Biscuit Casserole

I found this recipe on Pillsbury.com and revised it. Even my picky 9-yr old son liked it fairly well and my husband and I loved it! You can vary the add-ins to your taste or try it different ways. You could use sausage or ham instead of bacon, add mushrooms, etc. You could also top with a white gravy. If you can find the clear vanilla, it's really worth it. I didn't list it but it really makes a difference. It's sometimes hard to find, but it won't do any harm using the regular.
Ham Potato Scallop

Was looking for a recipe to use the leftover ham from Christmas and came across this recipe in a really old Sunset Casserole Cookbook. It turned out to be delicious. The only change I made was omitting the bell pepper because I didn't have any on hand and adding a little extra celery instead. You could always try the bell pepper if you'd like! I also sprinkled some extra Cheddar cheese on top. I love that this recipe uses real potatoes, milk, & cheese instead of mixes and soups and its still quick and easy to prepare! -- posted by BrinaBear

Easy Crustless Ham or Bacon Quiche

My grandmother got this recipe from a friend years ago and has been making it frequently ever since. It is my FAVORITE quiche recipe. I'm not a huge fan of crusts since I love the flavors of the quiche itself and feel that the crust just gets in the way. The Bisquick makes its own sort of crust anyways. You can used leftover ham pieces or crumbled bacon. Either way is delicious. Sauteing the onions in a little butter or oil first is key to a good flavor. You could always add other veggies here as well such as bell pepper or mushrooms. -- posted by BrinaBear

Hash Brown Casserole With Bacon and Cheddar

Wonderful for a weekend brunch. My whole family absolutely loves it. Lots of flavor from the onions, chives, and bell pepper. There are lots of variations of this recipe but I like that this one uses milk instead of sour cream or cream cheese which are high in fat and this one still has just as much flavor. It came from Debbie Macomber's Cedar Cove Cookbook that a friend got me for Christmas. I only switch the whole milk to 1 % and keep the skillet at medium-low instead of low when making the sauce. Can easily be doubled to serve more people. When I do, I use a 12 oz package of bacon and a 1 lb 14 oz bag of hash browns since that's what they usually come in anyways. Also, the easiest way to snip the chives is with kitchen scissors. So much faster than with a knife! Enjoy! -- posted by BrinaBear

Blizzard Bread

We have a lot of snow days in N.E. Pennsylvania. So, we sprinkle a little snow on our French Toast too. Well, not real snow, but confectionery sugar is a great substitute. When snow is in the forecast, you have a hard time finding bread, eggs, and milk on grocery shelves. Get them early! Why? Because along with snowy days...comes comfort food - French Toast for breakfast. It's also a favorite for sleepovers.
Herb and Mushroom Quiche - from Get Cracking!

This is one of my favourite quiche recipes. I received the recipe card and spice packet from the Egg Producers of Nova Scotia. I do change it slightly for our tastes, by using either a mild cheddar or marble in place of the swiss. I also go the 'crustless' route. If you add extra mushrooms and onions (like I often do), I suggest putting them, along with the cheeses in the pie plate first. Then pour the egg mixture on top. ;) -- posted by Diana #2

Peanut Butter and Honey Bread

My family loves the combination of peanut butter, honey, and bananas, so I decided to make it into a bread. Make sure to use all natural peanut butter and feel free to add more chopped nuts or chocolate chips if you desire. This recipe works well for small loaves or muffins of any size. -- posted by sszz

Auntie Lu's Amazing Egg Bake

A cheesy, delicious, breakfast meal for a crowd. Auntie Lu would always make this when we would stay overnight and it was a HUGE hit. We use a "perfect brownie" pan so that every piece is a delicious, crusty edge piece. The recipe works with either white or wheat bread, you can't tell the difference. I use a spicy sausage so there is no need for additional spices, but you can add your own spices to the eggs before you pour it on or in the meat when you cook it. Sauce is optional but very delicious. -- posted by Scott Johnson

Brandi's Yummy Spinach Omelet

I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier. If you decide to add cheese I recommend Laughing Cow brand Creamy Swiss. -- posted by Lucidity

Cheese & Butter Green Peas

Have kids who hate green peas? Well, everyone seems to have that problem! I randomly added cheese & butter to my green peas (despite being a lover of peas) and it tasted great! In fact, at the end of the day, I got more sick of the cheese than peas. Amount of cheese? One slice. (: This is even for the health-conscious...enjoy! For me, I can polish off the whole thing, but to be on the safe side serve this for two. (: You can do this for just about any vegetable, in particular non-leafy ones like carrots & peas. -- posted by Chef #1531879

Toast-Less French Toast - South Beach Phase 1

I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!) This saved me from falling off the wagon and I hope it works for you too. -- posted by Chef #1532737

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

Delicious, hearty breakfast for your family. You can use mild Italian sausage for this dish, if you like a little less spice in the morning -- posted by The Foodgitive

Eggs in Purgatorio

I'm grateful to andypandy for telling me about Eggs in Purgatory in answer to a community question about varying poached eggs. I checked out the various recipes and then adapted them to my needs and came up with this.
Rather than an Italian style tomato sauce, it is more like a Latin salsa. The garlic and onions can either be done first in the skillet, adding a bit more oil to the skillet after that so as not to let the eggs stick,, or, if rushed then can use garlic powder and dried minced onions in the salsa/sauce. (Salsa just means 'sauce' in Spanish)
I get a kick out of watching it cook because the edges of the egg look kind of ragged as the tomato sauce bubbles up and the pattern looks like flames,,, haha and thus the name of the dish.
I'm not fussy about the exact amounts of ingrediants and many of you 'tweak' recipes anyway,, so please understand that the amounts are approximations,, and it also depends on how many eggs are being poached. The fry pan should be a size so that the number of eggs fits with just a little bit of space between and around the eggs and the sauce has some depth, so don't use a huge pan for two eggs. -- posted by Rainbow - Chef 536866
