Chinese Eggs and Tomatoes

This classic Chinese dish is so simple, but full of flavor! It's one of my favorites, and I order it with nearly every meal in China. You can have this as a side dish, or even a main dish over rice. There are a few different ways to make this; but this way is my personal favorite. Don't be afraid to throw in some ground pork, cumin seeds, more or less eggs or tomatoes, etc. I will frequently drizzle sesame oil on top of the finished dish. -- posted by Mrs.R

Mom's Quiche

This is a staple at my mom and dad's house... and is quickly becoming one at mine too! It's super versatile and you can make it with just about any combination of fillings. I go for the vegetables and have been attempting to incorporate as many as I can from my garden (hence the base recipe below)... my parents will often make a version with spinach and smoked salmon. Also, I use soy milk, but my mom's original recipe calls for heavy cream. -- posted by Veggie_Girl

Vegetarian Spinach Quiche

This is a simple, delicious, and healthy vegetarian dish! Quiche is basically a pie filled with egg custard, and sometimes vegetables, meat or cheese. I used my Better Homes and Gardens cookbook as reference for this recipe, but I changed a few things. I wish I could include a picture, but we ate it all too fast! Enjoy (:

*Quiches can be filled will all kinds of things, including peppers, broccoli, and ham. Just be sure to keep the 4 eggs to 1 1/2 c. milk ratio for the custard. -- posted by Chef #1242666

Bulgarian Vegetarian Mish Mash

Great vegetarian dish. Very simple to make with just a few ingredients. Could be served either as a main course or as a side dish. You can use 2 yellow (instead of green) and 2 red bell peppers if you prefer. If you like feta, you could use more. I personally, love feta and double the amounts for the feta. This super cheese dish goes great with a crispy crust bread like ciabatta. Enjoy! -- posted by Nadia Melkowits

Fluffy Spinach, Onion and Roasted Red Pepper Quiche With Gruyere

In my quest to find out what makes a quiche fluffy, I've cobbled together this recipe. And it makes a great tasting quiche with a beautiful presentation. The key (surprisingly) is not to overbeat the eggs, not to use too hot of an oven, and don't overdue the liquids. -- posted by Wish I Could Cook

Corn and Cheddar Souffle

This is from the September 2008 Homemakers magazine. Our family has always enjoyed souffle and this was a twist on our usual. I really like the fresh corn but you could likely substitute frozen or canned in the off-season. Goes great with in-season asparagus or green beans, and fresh bread.
Lighter Carbonara

We love Carbonara, but not all the fat that comes with it. Here is my version that is a little lighter. (compare to "regular" carbonara with 35 + grams of fat and 650mg + grams of sodium per serving).
Easy Baked Meatballs With Two Sauce Options

What an easy recipe, and only 4 ingredients. This was on the cover of the newest issue of Kraft's "What's Cooking" magazine. I did add minced garlic and some Italian seasoning....just couldn't help myself :) I baked the meatballs on a rack to eliminate excess fat. Two sauce options were given as serving suggestions. I have listed them in the instructions so that they will not interfere with the nutritional values of the meatballs. These are terrific for freezing, making future meals even faster. -- posted by Diana #2

When used the next day as a sandwich with grilled Cheddar cheese - watch out!! They say to serve it with Dijon mustard - well, we made a combination of ketchup and Dijon - fantastic!!

Pork Sausage and Egg Casserole

This is an easy to prepare, tasty dish using simple ingredients...my family loves it! If you can't find the hash browns with onions already in with the potatoes, just saute 1/3 cup chopped onion and add that to the mix before baking. While I use a 4 cheese blend, cheddar cheese alone would be fine also...the cooked cheese makes a delicious crust in the casserole. Frozen hash browns would work too just thaw them before adding to the mix. Perfect for a brunch, we also love it for supper too! -- posted by Chef Learnee

Rice Porridge (Congee) With Century Egg and Pork (Or Chicken)

I grew up eating a Filipino version of Congee called "Arroz Caldo". My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! (note: I use leftover shredded chicken or pork but you can poach your own prior to making recipe, and use the ground white pepper - it really makes a difference!) -- posted by mlao77

Classic Chili Rellenos With Anaheim Peppers

Anaheim's are very popular in Southwestern US Cuisine. Also called "New Mexican Chile". These were developed by Dr. Fabian Garcia in New Mexico about 100 yrs ago who was seeking a chile pepper that was bigger, fleshier, and milder.

They got the name "Anaheim" when a farmer named Emilio Ortega brought these seeds to the Anaheim area in the early 1900's. This chile can be roasted and peeled and used in recipes or stuffed to make chile rellenos just as the Poblano Chile.
V's Simple Savory Mexican Quiche

This quiche is beautiful & delish! If you crave something savory for breakfast try my simple quiche. These are ingredients I always have on hand and can whip this up a head of time or in the morning. Measurements can be altered to taste. If you like spicy, savory add more, if not, add less. The salsa gives this quiche a nice kick and the flavors of cilantro, sausage and potatoes add to the taste and textures. This is a family favorite in my house. Great for overnight company as it feeds alot. Serve with sliced avocado, sour cream or salsa on the side. -- posted by Vseward (Chef~V)

I normally use shrimp, ham, chicken, peas, corn, carrots, peppers, eggs, and etc. -- posted by BOOMBAMBONBON!

Ham & Swiss Rosti

This recipe was from EatingWell recipes. They wrote "Rosti is a traditional Swiss potato pancake typically served as a side dish but we added ham and cheese to transform it into an easy weeknight supper". I made a few changes to the original recipe (like using garlic instead of rosemary). It was very easy to make and delicious. We served this with a nice salad. My whole family liked it! -- posted by Jennibear

Rat Mash (Grain Free Dog & Cat Food)

We have two chihuahuas and two cats, all under 8 lbs,(the rats, as we call them) that we make this dish for. This will feed all four animals for two meals. Dogs and cats shouldn't eat grains as they make them fat (just like what happens to people when they eat grains) and they're not easily digestable. Cats need a high protein/fat diet and it for sure won't hurt dogs to eat it either.
--------------------------------------------------------------------------------------------------
Just like people, our animals get a varied diet. Try not to feed them the same meal day in and day out. Our pets have the softest, shinest coats, clean teeth, a healthy weight, don't have the bad breath and "wet dog" smell that grain fed animals have.
--------------------------------------------------------------------------------------------------
This can be stored in the fridge for up to 4 days. -- posted by ThatSouthernBelle

I found this recipe on Pillsbury.com and revised it. Even my picky 9-yr old son liked it fairly well and my husband and I loved it! You can vary the add-ins to your taste or try it different ways. You could use sausage or ham instead of bacon, add mushrooms, etc. You could also top with a white gravy.
Easy Crustless Ham or Bacon Quiche

My grandmother got this recipe from a friend years ago and has been making it frequently ever since. It is my FAVORITE quiche recipe. I'm not a huge fan of crusts since I love the flavors of the quiche itself and feel that the crust just gets in the way. The Bisquick makes its own sort of crust anyways. You can used leftover ham pieces or crumbled bacon. Either way is delicious. Sauteing the onions in a little butter or oil first is key to a good flavor. You could always add other veggies here as well such as bell pepper or mushrooms. -- posted by BrinaBear

Herb and Mushroom Quiche - from Get Cracking!

This is one of my favourite quiche recipes. I received the recipe card and spice packet from the Egg Producers of Nova Scotia. I do change it slightly for our tastes, by using either a mild cheddar or marble in place of the swiss. I also go the 'crustless' route. If you add extra mushrooms and onions (like I often do), I suggest putting them, along with the cheeses in the pie plate first. Then pour the egg mixture on top. ;) -- posted by Diana #2

Sarasota's Steak & Eggs With Pesto Bread and Tomato Relish

I love to take an ordinary steak recipe and make it affordable any night of the week. This is one of those. I love steak and eggs, but I also love to cook a tender good steak. So, this is one of those dishes. One (1) strip steak made affordable for 3, served over grilled pesto bread and of course topped with fried eggs and a tomato basil relish.
Eggs in Purgatory

From the New York Times, Jan 29, 2010. Eggs are poached in a rich, pork-infused tomato sauce, then served over chestnut polenta. The reserved meats may be shredded and added to leftover sauce, then served over pasta. Prosciutto scraps may be used if available (and will generally be cheaper). Chestnut flour may be obtained from Italian specialty stores, or online. NOTE: Since the pork shoulder, pork belly and prosciutto are not actually served in this preparation, the nutrition information is very inaccurate. -- posted by DrGaellon

Onion Quiche or Gratin (Adapted from Julia Child)

The cook time does not include time for baking the pastry shell. -- posted by coconutty

Weight Watchers Ww Broccoli Mushroom Quiche

Nice low point quiche that no one will know is a Weight Watcher recipe. No crust, it is not as eggy or custardy as traditional quiches, but very good. -- posted by Chef #880889
