Crunchy Crust Peach Cobbler

I was looking for peach cobbler recipe that was a bit different and found this one at TOH. Dh ended up making this so that speaks to the ease of the recipe. This would be easy to substitute other fruit for peaches and I personally would increase the fruit filling but it was good as written as well. This makes for a nice cobbler with a crunchy crust with a light meringue flavor. -- posted by Ceezie

Maple-Pecan Praline Topped French Toast Bread Pudding

Whenever I make a loaf of gluten free bread, I can't seem to eat all of it before it goes stale or moldy. While I could slice and freeze half, I prefer to use it for bread pudding, stuffing, meatloaf, etc. This is an excellent use for bread that is too hard and stale to eat. I would not make it from fresh squishy bread, as I think it would probably dissolve in the egg custard. The original recipe, Debbie Tate's "Make Ahead French Toast" at allrecipes, suggests 8 slices of French bread. I would assume that sourdough, old hard sandwich rolls, etc. would also work beautifully. This morning I used the last quarter loaf of bread made from Bob's Red Mill GF Homemade Wonderful Bread Mix. I would be happy to serve this for company, or Christmas morning. It is *extremely* rich - most people will be too full to finish off two helpings. -- posted by Lelandra

Breakfast Bake

This is a hash brown and egg bake, like so many others but it is sized for two or three people. I looked at many of the other bakes to create this recipe, which includes the things we like, and was looking for a shorter bake time, than the hour average on most of them. You can easily make this up ahead of time, according to others you should be able to make this up to 2 days ahead in the fridge, or 2 months in the freezer. If you freeze it make sure that it's in the fridge at least overnight to thaw before baking otherwise you may need to increase baking time. -- posted by Vyrianna

Marcy Goldman's World Famous Potato Pancakes Latkes

This latke recipe is from Marcy Goldman's new cookbook, "The 10th Anniversary Edition of A Treasury of Jewish Holiday Baking". It uses an unusual method - parboiling the potatoes first. These will be the lightest, crispiest and fastest potato pancakes you ever made! For kids or onion haters, use 1 teaspoon onion powder instead of the grated onion. Make these bite-size for a tender centre and crisp outside and use tongs for both putting the batter in the oil and taking the latkes out. -- posted by blucoat

Next-Day Baked Cinnamon-Apple French Toast

We made this for Christmas morning this year (2009). My mother found the recipe in her local paper -- The Daily Breeze in Redondo Beach, CA. When I made it, I added in not just the apples, but all the liquid -- as a result the dish was more like bread pudding than french toast ... it was still great, and I'd make it that way again. But if you'd like a drier texture, don't add the apple liquid. I also swapped out the cinnamon and nutmeg for two teaspoons of Recipe #45672 . -- posted by KLHquilts

Scrambled Eggs in the Microwave (Great for Work!)

I can only eat so much oatmeal and peanut butter toast without getting bored. I started making scrambled eggs in the microwave to break up the breakfast monotomy at work! I serve these alongside a piece of whole wheat toast and a glass of vegetable juice. In order to cut down on unhealthy cholesterol but keep the healthy protein, I use only one egg yolk; three works fine too (just increase the water [or milk] to 3 T). I'll sometimes make these at home when I need a quick breakfast. -- posted by Robyn's Cookin'

Apple Streusel Muffins

These muffins are great grabbed straight out of the oven, warm with vanilla ice cream or with a steaming cup of coffee for breakfast. The addition of sour cream makes these muffins super moist, with a awesome rich flavor. This recipe makes two dozen muffins, which is a great because you can share with friends! Use your favorite apples, this recipe used Northern Spy. Honey Crisp are one of my favorite apples, along with Gala and Fuji. A tart apple would do well here too.
German Pancake (Also Called Dutch Baby)

The German pancake, also called Dutch Baby, is like a crepe crossed with a popover. It's ridiculously easy to make (the batter is made in under 2 minutes in a blender) and is always a crowd pleaser. Watching the pancake puff up before your very eyes is always entertaining. You can add fresh fruit to the batter, add it on top after baking ,or go crazy and do both! Then you have the option of topping it with the more traditional squeeze of fresh lemon juice and powdered sugar or simply drizzle on the maple syrup, for the syrup lovers. -- posted by P ROD

I found this recipe on Pillsbury.com and revised it. Even my picky 9-yr old son liked it fairly well and my husband and I loved it! You can vary the add-ins to your taste or try it different ways. You could use sausage or ham instead of bacon, add mushrooms, etc. You could also top with a white gravy.
Easy Crustless Ham or Bacon Quiche

My grandmother got this recipe from a friend years ago and has been making it frequently ever since. It is my FAVORITE quiche recipe. I'm not a huge fan of crusts since I love the flavors of the quiche itself and feel that the crust just gets in the way. The Bisquick makes its own sort of crust anyways. You can used leftover ham pieces or crumbled bacon. Either way is delicious. Sauteing the onions in a little butter or oil first is key to a good flavor. You could always add other veggies here as well such as bell pepper or mushrooms. -- posted by BrinaBear

Blizzard Bread

We have a lot of snow days in N.E. Pennsylvania. So, we sprinkle a little snow on our French Toast too. Well, not real snow, but confectionery sugar is a great substitute. When snow is in the forecast, you have a hard time finding bread, eggs, and milk on grocery shelves. Get them early! Why? Because along with snowy days...comes comfort food - French Toast for breakfast. It's also a favorite for sleepovers. The kids always request Blizzard Bread for breakfast, even if it's 100 degrees outside. -- posted by ChaCha3

Herb and Mushroom Quiche - from Get Cracking!

This is one of my favourite quiche recipes. I received the recipe card and spice packet from the Egg Producers of Nova Scotia. I do change it slightly for our tastes, by using either a mild cheddar or marble in place of the swiss. I also go the 'crustless' route. If you add extra mushrooms and onions (like I often do), I suggest putting them, along with the cheeses in the pie plate first. Then pour the egg mixture on top. ;) -- posted by Diana #2

Auntie Lu's Amazing Egg Bake

A cheesy, delicious, breakfast meal for a crowd. Auntie Lu would always make this when we would stay overnight and it was a HUGE hit. We use a "perfect brownie" pan so that every piece is a delicious, crusty edge piece. The recipe works with either white or wheat bread, you can't tell the difference. I use a spicy sausage so there is no need for additional spices, but you can add your own spices to the eggs before you pour it on or in the meat when you cook it. Sauce is optional but very delicious. -- posted by Scott Johnson

Brandi's Yummy Spinach Omelet

I was experimenting with ingredients I had leftover from making spinach quiche and decided to try making a yummy omelet with some of them. I love pepper so I chose to increase the amount of it in my omelet. I also used frozen spinach. There's no need to thaw it. I used a knife to shave off what I needed. Cheese is optional because this omelet has great flavor without it and is much healthier. If you decide to add cheese I recommend Laughing Cow brand Creamy Swiss. -- posted by Lucidity

Toast-Less French Toast - South Beach Phase 1

I invented this in my kitchen at the end of the first week of Phase 1 out of desperation for a sweet instead of savory breakfast. Enjoy plain, or with sugar free syrup, or jam. For Phase 2 I would recommend fresh fruit (like berries), and fat-free no sugar added whipped cream; or you could core and slice some apples and saute in margarine before adding the egg mixture. This is also good with some yogurt on the side - try plain with fruit infused stevia (apricot is excellent!) This saved me from falling off the wagon and I hope it works for you too. -- posted by Chef #1532737

Breakfast Tostadas

This is my twist on a Huevos Motulenos recipe from my Latin America (mostly Indian) cookbook. The original recipe calls for making the black beans part (Tsah Bi Bu'ul) from scratch, but I find using refried black beans is much simpler...it also calls for frozen peas (what?!?) and from-scratch Chiltomate sauce, but I personally like salsa verde better with eggs. All amounts listed for ingredients are approximate. Load up your tostada however you like it. -- posted by Chef #1534395

Better Banana Walnut Bread

I love banana bread! Unfortunately, it is always loaded in fat when you buy it or follow traditional recipes. There are tons of low fat recipe options out there but the always take out the walnut. Removing them will take away from those "scary numbers" we all watch; however, walnuts are such a rich source of nutrition that they are worth keeping.
Side Note: Many people use "Splenda" as a sugar substitute, if you get an icky aftertaste try Stevia, like "Truvia". I personally prefer "Sun Crystal", a mix of natural sugar cane and stevia. Ultimately, it's your choice. -- posted by Southern Kitchen Gardener

Eggs in Purgatorio

I'm grateful to andypandy for telling me about Eggs in Purgatory in answer to a community question about varying poached eggs. I checked out the various recipes and then adapted them to my needs and came up with this.
Rather than an Italian style tomato sauce, it is more like a Latin salsa. The garlic and onions can either be done first in the skillet, adding a bit more oil to the skillet after that so as not to let the eggs stick,, or, if rushed then can use garlic powder and dried minced onions in the salsa/sauce. (Salsa just means 'sauce' in Spanish)
I get a kick out of watching it cook because the edges of the egg look kind of ragged as the tomato sauce bubbles up and the pattern looks like flames,,, haha and thus the name of the dish.
I'm not fussy about the exact amounts of ingrediants and many of you 'tweak' recipes anyway,, so please understand that the amounts are approximations,, and it also depends on how many eggs are being poached. The fry pan should be a size so that the number of eggs fits with just a little bit of space between and around the eggs and the sauce has some depth, so don't use a huge pan for two eggs. -- posted by Rainbow - Chef 536866
