Marinated Mushrooms

Sourced from www.taste.com.au This recipe lists as serving 12 as finger food. Toothpick food really :) It's very easy to halve. I quartered my mushies as they were quite large.
Preparation Time is marination time.
I thought they were even better the next day with some hot crusty bread. Matt has also lightly grilled (broiled) them and was very happy with the results and prefers them like this. -- posted by Rhiannon&Matt.gauci

It's a mixture of a bunch of recipes with our own little twist! Oh, and it tastes EXACTLY like (actually, even better than) the ones at the boardwalk! You just have to try it!

Punjabi Style Homemade Roti

Being an American, it took a LOT of time and hard work to accomplish the art of making roti (or chapati). But it is a very healthy and delicious flat bread. Enjoy!

One thing you'll need to get started is a large non-stick skillet, some tongs for beginners -to prevent burning your hands, and a gas (open flame) oven is best. A rolling pin and a nice flat surface is necessary. -- posted by GIBride

Oriental Steak Skewers (Or Appetizer Bites)

Cubes of sirloin steak are marinated in a flavorful oriental sauce and broiled or grilled until done. You can skewer the meat for a meal, or cook seperately and serve with toothpicks for an appetizer. Prep time includes 2 hours of marinade time, you may want to do longer. Number of serving depends on how you're serving the steaks, this makes approx. six meals or 12 appetizers.
Salmon and Tuna Zingers

This is an adaptation of tuna salad sandwiches that is healthier, spicier, and slightly exotic. These measurements are aproximately what I used, but you can adjust and modify this to suite your tastes. If you do not like spicy leave out the chili oil. Also, the alfalfa sprouts are strong flavored so if you do not like their flavor, leave them out. Also, for an extra flavorful version, try with fresh boiled, baked, or grilled salmon and tuna instead. -- posted by Chef #501923

Easy Chicken Tacos (Low Fat if You Choose Soft Shell over Hard)

I try to avoid cooking with pre-made spices and sauces (some are better than others), so this recipe is based off my re-interpretation of all the good things a taco should be: spicy, tasty, moist, and most of all packed with delicious veggies; using chicken and what I can find in my pantry at a moments notice. You could even simply top a bowl of lettuce and tomatoes with the taco meat and eat it as a taco salad - that would be very low fat! -- posted by SuzanneThePainter

Traditional Scottish Recipes - Broken Biscuit Cake

Another recipe I found on rampantscotland.com which is resourceful, easy, rich and makes a huge amount. Hope you enjoy this. This is the description of this on their web site.

In the old days, when biscuits were sold loose, grocers sold mixed, broken biscuits at a lower price. This recipe was a good way of using them up and as a cake which requires no cooking, it can be easily made by the kids as well as experienced cooks.
Scottish Baps - Soft Morning Bread Rolls

These classic Scottish bread rolls are so easy to make - with only one kneading required. They are soft with a distinctive floured finish and are excellent for all manner of fillings, but especially bacon or cheese and salad. These baps are quite wide without much height, and they must only be baked for a maximum of 10 minutes in order to maintain their soft texture. Preparation time includes the proving and kneading time. They are best eaten on the day that they are made - they are delicious toasted the next day however. -- posted by French Tart

Ma'amoul

These are delicious arabic biscuits / pastries, they can be made with a variety of fillings, including pistachios, walnuts or dates. They are often eaten in the Middle East as a celebratory food, for example at weddings, the end of ramadan, rosh hosana, christmas, easter etc. They contain very little sugar so they are quite healthy. The pistachios are considered the most desirable fillings. Almonds also work quite nicely though.

Italian Marinated Tofu

A simple marinated tofu recipe, great for a make-before simple lunch or even breakfast if you marinate the tofu before (I've only made this once, but I imagine if you marinate overnight it'll be a much stronger flavor).

This comes from Isa Moskowitz' Vegan With A Vengeance book, slightly modified.

Greek Pasteli (Sesame Seed & Honey Snacks)

While in Greece I saw this "candy" that I loved from childhood...little bites of sesame and honey that were soft because they did not have any sugar. Inspired, I set out to see if I could buy them in the US but found instead that they are incredibly easy to make! So here is a recipe adapted from one found on www.globalgourmet.com.
Yorkshire Parkin - Sticky Oatmeal Gingerbread for Bonfire Night

A wonderful tradition from Northern England, in particular from the county of Yorkshire; this wonderful gingerbread is traditionally eaten on the 5th November which is Bonfire Night, also called Guy Fawkes night or Fireworks Night. There are many ways to make ginger parkin; this is my recipe for this deliciously, sticky and dark gingerbread with oats. This recipe is an egg free parkin, and I was always told that Parkin should NEVER contain eggs in it, whether that is true or not, I'm not sure! Try to plan ahead when you make this recipe, it is MUCH better when kept for 2 to 3 days before eating, as it become stickier and more intense in flavour. This keeps for up to 2 weeks in an airtight container and freezes well, if there is any left! I use jumbo porridge oats in my parkin, for a nice chewy texture - but any porridge oats or oatmeal will be suitable. Please note, if you make this with the suggested alternatives of corn syrup and molasses, it will not be quite the same flavour, but it should still be sticky! -- posted by French Tart

Gravlax, Salt-Cured Salmon

With a sharp knife carefully slice on the diagonal to get slices as thin as you can without them falling to bits, leaving the skin.
With practice you can become pretty good at this.

Serve on bagels with cream cheese, a thin slice of onion and capers, and a squeeze of lemon.

Or on toast, or crackers.

The traditional Swedish way is on pumpernickel bread with equal parts dijon mustard, sugar, white vinegar emulsified with 3 parts regular olive or canola oil. -- posted by Kevinf

Delicious Healthy Truffles

These make a great snack or dessert. I keep them in a bowl in the fridge, covered, for about three days, and my family munches one or two when they want a bit of something instead of having a piece of chocolate or a cookie.
Oatcakes

This is my best attempt to duplicate Scottish oatcakes, which I had previously only had from a box (brands such as Nairn). I don't know how they would compare to homemade oatcakes in Scotland or Ireland, although in my search for a recipe, I've found that there are many varieties, including sweet or yeast-leavened. This recipe is based on one I found in a Saturday Evening Post many years ago--which I adapted, lost, and then had to recreate from memory. However, I am quite pleased with the final result! Everyone seems to love them. I think they are traditionally served with cheese, butter, jams, etc. but we just eat them plain. (Note: You may use up to 1 tsp. of salt, or no salt at all, as in the original.) -- posted by TapestryThreads

Smoked Trout & Cucumber Sandwiches

Delicate and delicious finger sandwiches which are super-quick and super-easy to make. Smoked salmon or canned red salmon can be used instead of the smoked trout. This yummy recipe has been adapted from a recipe by Sophie Hansen in from the current issue of the 'BBC Australian Good Food' magazine. If the occasion does not demand elegance - if you are simply making these for yourself for lunch, for example - use whatever is your favourite bread, crusts on! I enjoyed these today with crusty ciabatta! Conversions: 200g = 61/2oz; 150g = just under 5 oz. -- posted by bluemoon downunder

Brown Rice & Quinoa Sushi Rolls

I like to make vegetarian sushi rolls at home and have worked on perfecting a brown rice version. I came across a recipe online that added quinoa to the mix and I love it! Adds that extra bit of protein to make this a well rounded light meal, snack or appy. I've changed that original recipe a bit and have streamlined the cooking process (less dishes the better!). My kids like to help roll these up. I've included cucumber, carrot and avacado as filling...of course you can fill with whatever you fancy. This makes enough to fill 4 nori sheets, which you can cut into 6 or 8 pieces each. Enjoy! -- posted by magpie diner

Perfect Summer Sandwich (Tomato, Basil, Cheese)

This sandwich screams summer to me. I made it after going to the farmer's market and getting lots of fresh ingredients, including wonderful herbed ciabatta bread. If you don't like garlic much, just rub a clove on there (sliced to get the flavor. This is also delicious cold, or with a drizzle or balsamic vinegar on the tomato. For a slightly different (equally tasty, if you ask me) option, use havarti slices instead of mozzarella.
Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

Bacon Caramels

“Where would we be without salt?” – James Beard
I casually sprinkled the thick-cut Hempler’s bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

Jewel Studded Holiday Fudge With Ginger and Cranberries

A delectable holiday fudge, which is the ultimate treat for anyone with a sweet tooth. This buttery, crumbly fudge is enhanced and made more festive by studding it with rich, jewel-like fruit. If you do not have stem ginger handy, you can use crystallised ginger or glace ginger instead. Making fudge the proper way involves using a sugar, jam or candy thermometer - or you can use the "soft ball" method if you do not have a suitable thermometer. Drop a small spoonful of the fudge into cold water, if it forms a malleable soft ball, the setting temperature has been reached. If you plan to make this fudge for gifts or to sell, pack the squares into attractive cellophane bags, glass jars or boxes and add a pretty ribbon as well as a label of ingredients.
