Watermelon and Feta Salad With Serrano Chile Vinaigrette

"Sweet, salty, tangy, and hot. This salad hits all the points of your palate," says chef Hugh Acheson, head chef of Five&Ten in Athens, Georgia. InStyle magazine claims this is the "Summer's Best Salad" in their June 09 Issue.
The season's most refreshing dish combines tasty watermelon and feta spiked with chiles. This appetizing recipe goes well with grilled chicken, but you can also serve it as a sophisticated dessert. -- posted by College Girl

Burcu's Turkish Cream

I got this super-simple recipe from a Turkish friend. It has a texture sort of like a very thick custard, and she uses it as a base for savory dishes (e.g. with addition of some cumin and shredded chicken, omitting vanilla), and as a base for desserts as prepared here. She suggested using strawberries with strawberry gel or a thick chocolate custard with chocolate chunks, but it's amenable to just about anything you can think of, including being eaten alone! -- posted by LightEra

Moist Low-Fat Apple Spice Cake

My boyfriend and I invented this recipe for his mom's birthday and it came out great! It is very moist, with a denser texture than most cakes. Due to the large amount of apples, you can use less fat, and eggs are not needed at all. For best results, use firm, tart apples such as McIntosh, Courtland or Fuji. -- posted by Sephardi Kitchen

Egg Dairy Nut Free Carrot Cake

This is delish! Now I just need to work out how to make it gluten free and I have one wonderful anti alergy cake!

This is a mixture of different egg free recipies I have tried. Although we are not allergic to diary - i find this works best with water... however - there is no stopping me topping this with a cream cheese icing! To keep it diary free I simply spread some apricot jam on the top for a glaze

I often sub the carrot with zucchini and the sultana's with diced dried apricots -- posted by happygurl06

Sarah's Vegan Oatmeal Amazingness Cookies

This vegan chocolate chip oatmeal cookie eats more like a breakfast food than a cookie. If you are looking for a sweet desert cookie for kids, this recipe might not work. However, if you are trying to eat healthy, preserve the environment, and indulge in a little yumminess, then this is an excellent cookie to bake! (I personally like the cookies chilled.) I thank my friend, Sarah F., for giving me this fabulous recipe.
NOTE: For the ease of posting, I listed an egg in the ingredients. Egg Replacer works perfectly well in this recipe and it is usually how I make. If you live near Trader Joe's, their orange flavored cranberries are perfect for this recipe. Also, you can substitute currants or dried berries for the raisins. -- posted by The Bad Cook

Lemon Verbena Syllabub for Lazy Summer Days or Dinner Parties!

Just the job when it is hot and humid, a simple and elegant dessert to finish off a special summer dinner party outside and under the stars! This is also a wonderful accompaniment for fresh summer berries or gently poached fruits. Try to make sure that you give these little syllabubs plenty of time to chill and set before serving. Serve with a squirt of Chantilly cream and some fresh Lemon Verbena leaves as a garnish. Lemon Verbena is a very lemony herb, think of fizzy lemon sherbet (as in Barratt’s Sherbet Dipper) and you will have an idea of the taste! -- posted by French Tart

Tea-Infused Rice

I found myself with a partial can of sweetened-condensed milk, and just couldn't let it go to waste.

Sadly, you have to use bagged tea or this just won't work. If you have your own tea bags/pouches, you can bag whatever loose leaf flavours you wish! Check out the "winning combinations" at the bottom, to see which variations I've tried and love.

This chocolate-coffee-cinnamon flavored cake is pure ooey, gooey perfection. The cake turns out moist and rich and is meant to be served piping hot from the oven with a scoop or two of vanilla (or your favorite) ice cream. Don't bother slicing it into squares--just use a serving spoon! And the best part for those with allergies is it's egg and dairy free! If you're making this for children and don't want all the caffeine from the coffee, just substitute decaffeinated coffee. -- posted by MarthaStewartWanabe

Walnut Brownie Energy Bites

Found this recipe at deliviouslivingmag.com. I haven't tried it, but I've seen recipes like it and wanted to put it here for safe keeping. The brownie bites are super healthy and I think they should be super delicious too. These are essentially raw brownie bites. Here's what it says on the website about them "Decadent and rich, these are made with good-fat almonds and antioxidant-laden cacao and sweetened with fiber-rich Medjool dates. They provide whole-food nutrition, so enjoy as a snack or treat. These can be kept at room temperature for a couple of days or will keep for at least a week refrigerated. Ingredient tips: Bob’s Red Mill makes almond meal (flour), but if you can’t find it, just use whole raw almonds and process them into a powder using your food processor. Prep tip: Keep batter from sticking to your hands by lightly coating them with coconut oil, olive oil, or even water." -- posted by dimply dots

Seviyan - Sweet Asian Vermicelli (Toasted)

There are many, many versions of Seviyan (& spelling), you will find it differs from house to house & of course there are regional variations. Seviyan is the name of the toasted vermicelli used to make sweets aswell as savoury dishes in countries such as Pakistan & India. It is eaten throughout the year but comes into it's own during Ramadan. This is great fro Suhor (the morning meal before dawn) or as a desset after Iftar (the evening meal). I also like to make this a little drier & reduce the sugar somewhat. Recently I discovered that it's fun to swap the almonds & pistachios for a handful of prepared 'tropical fruit & nut mix' like you find in the health food shops & supermarkets). Seviyan is easy to find in most Asian supermarkets as well as the international isle in your regular supermarket - where it'll be sold as Pakistani Vermicelli. I most recently bought mine from Tesco in the UK - 2 packs for 50p -- posted by Um Safia

Homemade Soy Vanilla Ice Cream

Need a healthier alternative to regular ice cream that is easy to make? My family (including the meat and dairy lovers) loved this ice cream, and no one would have known that it didn't have milk or eggs!

You can top it however you want, and experiment with the ingredients (we've made blackberry ice cream, strawberry ice cream, healthy chocolate chip cookie dough ice cream, healthy or "fake" butterfinger ice cream), etc.! You can make blizzards (aka Frosty or shake) by briefly blending it a bit in a blender.
Yum Yum Yo Yo Biscuits

Adapted from a recipe I found on the Simply Great Meals website. Faced a dilemma in settling on a name for these. They are n-e-v-e-r called Yo Yo Biscuits, just Yo Yos... the Simply Great Meals website called them Yo Yo's, but the apostrophe makes no sense, and without the apostrophe the name looks like Yo YOS - which sounds silly and is NOT what they are known as! Conversions: 150g = just under 5oz; 60g = 2oz. Personally, I'd prefer to omit the food coloring. Not anti-pink, just prefer to avoid unnecessary chemicals. Seems to me that even a 1/2 teaspoon of cherry juice would achieve the pinkness if that's what you're after. The slivered almonds are not generally found in a traditional Yo Yo: I've added those. I'm of the belief that yummy nut never goes astray, be it in sweet or savoury dishes. -- posted by bluemoon downunder

Chocolate Chip Oatmeal Vegan Cookies

Hearty, heavy, comfort food vegan cookies! So good as a treat, but I usually have two for breakfast and it gives me energy all day! They are chewy and dry, more like a scone than a cookie and really good with tea or juice!
Rich Mallow and Honey Almond Fudge

I’ve adapted this recipe from one I found on the Simply Great Meals website. The original recipe uses pistachios; I’ve used honey-roasted almonds. Obviously, you could use whatever nuts you fancy or a mixture of several different nuts. Once you’ve melted your chocolate, butter and marshmallows, no more cooking is required. Great for lunchbox snacks, picnics and potlucks! For the best results, use top quality chocolate rather than cooking chocolate. I’ve suggested Lindt, and if you choose one with orange or peppermint chips, you’ll add another subtle flavour. I’ve wondered also about using a fruit juice instead of the water but haven’t tried this yet. The conversions you may need: 90g = 3oz; 250g = 8oz. -- posted by bluemoon downunder

Chocolate-Orange Cake

I love this cake for several reasons. I love chocolate and orange together, I love cake in general, and sometimes I like to cook without eggs or other high-allergen foods just to keep my game up, although this cake does require yogurt so probably can't be made vegan . I found the original recipe on a blog by Shyamala Ramanathan-Edwards http://srefoodblog.blogspot.com/, who based her recipe on one from the eggless baking book by Cintia Stammers, published by the Bhaktivedanta Trust. Then I put chocolate in it.
I have never made the orange-sultana (raisin) filling, instead using (eggless) orange curd such as http://www.recipezaar.com/fresh-orange-curd-357753 and/or chocolate ganache. -- posted by Shoga-chan

I didn't have eggs or brown sugar so I did the best I could to make cookies. They turned out delicious! A large portion of it came from the Chewy Oatmeal Raisin Cookies recipe on EatingWell.com.

The cookies will be too sticky to form a ball so I just plopped them on the sheet. -- posted by Tharidra

Super Sneaky Brownies

This is an even sneakier version of the "sneaky chef" brownies by Missy Chase Lapine. It is made with some of her "purple puree" but also utilizes black beans, which is a trick from Weight Watchers. No added fat to this recipe! No cholesterol! And if you omit the chocolate chips, it is vegan. It makes a very good, not overly sweet, cake-y brownie. NOTE: the purple puree part of the recipe makes a good 1 1/2 - 2 cups. This recipe uses only 1/2 cup, so reserve remainder for another use. It freezes well. -- posted by Susiecat too

Nut and Egg Free Cookies

These cookies are sure to be safe in any school! And taste awesome too! One of our children started at a new school this year and it turns out to be a nut and egg free school because of the seriousness of the allergies that some of the children that go there have. As a result my wife started scouring different recipes for snacks that were egg and nut free to send along with our daughter for school. She didn't really like any of the ones she tried so she ended up creating her own out of a combination of all the cookie recipes she tried. Hope you enjoy them as much as we do. -- posted by Chef Ryoni

Griswold Inn Indian Pudding

The Griswold Inn, built in 1776 in Essex, Connecticut, has promised first-class accomodations to travelers since the stagecoach-steamboat days. This traditional molasses-rich dessert isn't as popular as it used to be, but it remains a very tasty treat. Despite the title, early New England settlers did not adapt this recipe from native Americans: 'Indian' refers to the 'Indian meal' used - cornmeal, as wheat flour wasn't available. Serve warm with vanilla ice cream. -- posted by Molly53

Vegan Lemon Loaf/Bread/Cake

I'd really say this is a lemon loaf, but it is more cakey, than it is bread-y--that's for sure! The brown sugar in this recipe gives it a richer, more buttery taste and all of my non-vegan friends were shocked that this didn't have a drop of dairy in it. This is an adapted and doubled recipe from a Moosewood recipe and although it's not amazingly healthy, it is so yummy that it's silly...! -- posted by MellyLou

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Chef Joey's Vegan Chocolate Chip Cookies

Don't you just hate it when you come across a great cookie recipe and the instructions are lacking? I sure do. This recipe was one of those. Not to be discouraged, I made these and now can impart what I learned. These cookies are very chewy. Make sure you flatten them to about 1/4" as they don't really spread, but they do rise. Their flavor is very mild even with the chips, nuts and seed additions. The batter is very stiff. I have a little tablespoon measure made by chip clip that has a rubber bottom so I can pop the batter out without it sticking. These cookies would be great dunkers! -- posted by Chef Joey Z.

Sour Cherry and Almond Spoon Sweet

Another yummy spoon sweet recipe! This particular recipe is from figbaywine.blogspot.com***************************************************************************************"This description of what a "spoon sweet" is is from "The World Of Greece: Odyssey" Magazine - May/June 2008 issue. "Syrup-laden baklavas, karydopitta, or even the thicker, cakey ravani-style desserts are served on holidays and special occasions, but the everyday sweet is customarily a spoonful of a glyko koutaliou. To this day, spoon sweets are a traditional offering, literally a sweet welcome for visitors into the Greek home, whether they’ve come for a chat or on a more formal occasion. Spoon sweets are also served at the village kafeneion, a teaspoon-sized serving on a small dish set before the guest or visitor with a glass of iced water and a cup of strong Greek coffee. Traditionally each household put up their own spoon sweets according to the availability of fruit in season. Sweets were made in small quantities, usually to recipes handed down from one generation to the next." * * * **************************************************************************************

I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like. This variation is great for the holiday season! You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. I would recommend the bigger "extra serving" pie crust because this yields quite a bit of filling. -- posted by J.J.
Soy Free, Vegan, Dairy Free, Delicious Pumpkin Pie!

I developed this recipe because I was unable to find a tasty pumpkin pie recipe that was all of the above. This pie is SO good! Just like real pumpkin pie. Let me warn you that this pie is a no bake, so it has a lighter texture. Also, preferably you will need a high speed blender. -- posted by Chef #629158

Bacon Caramels

“Where would we be without salt?” – James Beard
I casually sprinkled the thick-cut Hempler’s bacon with cayenne before frying to a nearly blackened crisp. Once the caramel had reached its perfect molten temperature I stirred in a handful of the bacon then reserved the rest to get sprinkled on top. The caramel set beautifully. Some were cut and served as is while a select few were covered in tempered dark chocolate. All of them were devoured.

Shortbread Crescents (Egg, Soy, Nut and Peanut Free)

This recipe is from the Food Allergy News Cookbook. My 2 yr. old grandson has many food allergies and finding tasty food for him is a priority for me. These cookies are quite good, and to him, they are delicious! You cannot find store bought cookies for children allergic to soy. I will continue my quest to help this child have good food that is safe for him. -- posted by Sunshine Forever

Great recipe to use up a few leftover marshmallows and lighter than most! Feel free to throw in a few nuts at the very end.
