Muesli - Low Fat, Low Gi, Diabetic

My doctor gave me this with instructions to eat it every day,
and it would lower my sugars, cholesterol, triglycerides, and
kick start my weight loss.
And he was right, all those things happened.
Buy all these goodies as organic as you can, unsalted and unsweetened.
When I make it, I leave out the nuts and raisins -- posted by Barefoot Beachcomber

Chewy-Ewwy Granola Energy Bar

This is a modified energy bar from Mollie Katzen's Protein Bar recipe, found at {http://www.fabulousfoods.com}. I try to steer clear from dairy as often as possible and it was tough finding a granola/energy bar recipe that didn't use milk or yogurt. So I kinda took what I liked from this recipe and left what I didn't and added a few other things. It's a really great tasting bar that is egg-free and dairy free (except for the chocolate chips, use carob chips instead or just omit them altogether if you want a truly vegan bar) and packed with nutrition. They're pretty sweet so if you like a less sweet bar use less sugar, choose a less sweet nut butter, and/or substitute dried fruit and chocolate chips for nuts and carob chips. Eat one fresh out of the oven then freeze the rest in freezer zip-bags. Just make sure to defrost or warm them before eating. They're great for breakfast, gym snacks, workday pick-me-ups, and even after-school snacks (I'd bake them in a cookie shape for the latter purpose). -- posted by Annie Made

Power Breakfast Smoothie

A fortifying healthy smoothie that will get you going on a busy morning. I usually just throw this all together and make one big smoothie that satisfies me until lunch, but I will try and estimate portions for the other Zaarites. :)

You can use a combination of berries, I usually use strawberries but sometimes I will make a blueberry and banana shake, or strawberry and banana.

**I had to use "frozen strawberries" and "orange juice" so Recipezaar would take the nutritional info but you can use any berry or juice you like. This can be easily customized to fit your tastes. -- posted by The Tiny Chef

Nut 'n Honey Pancakes

This recipe is my own variation of an eggless pancake, dressed up with a rich peanut flavor. Chopped, roasted peanuts are added to the batter, and smooth peanut butter subs for regular butter between these tender breakfast cakes. Everything is topped with the sweetness of honey. Don't forget to leave some peanuts left over for a garnish! (Note: This recipe was created with ingredients found in a Korean grocery, though Western chefs shouldn't have any trouble with the recipe, see substitutions noted below.) -- posted by mizmoxie

Yule Oatcakes

I've been making these oatcakes at Yuletide for the last 5 years or so. They've become one of my favorite parts of the Holiday! I originally began making them to leave as gifts for the deer and other animals around our home, and under the trees we decorate in the woods. However nobody can ever keep their mitts off them! (especially right out of the oven) I had no idea they'd be so tasty. So now the baking of the Yule cakes has become an event. We usually pick a night and roll out about 4 batches. These are super easy to make (we usually partake of some wine during this event - that tells you how easy they are lol) They come out crispy and sweet. Perfect for breakfast or just snacking. -- posted by Nikoma

Adapted from a recipe in 'The Australian Women's Weekly's 50 FAST desserts'. Simple to make - and delicious.Since Australian recipes are considerably less sweet than Australian recipes, American chefs may well want to add more sugar. Judge according to what tastes right for you. In her review, Karen=^..^= says that she used Fuji apples. Excellent choice: they've SO delicious. Granny Smith apples would also work well.
Easy Arabic Yogurt

It is unknown where exactly yogurt originated though it is thought that the Arabs, Turks, or Persians are responsible. You can make your own yogurt at home with only milk and a bit of yogurt. Very easy, no yogurt maker required. I have been making it for a few years and know that anyone can make this. It makes great yogurt especially if you use whole milk; very creamy and thick. You can use nonfat milk but it is a little thin and the consistency isn't that great compared to with more fat. It is best to go with 2% or whole. I also use organic milk, I find the flavor to be more full and sweet.I found it in an Arabic cookbook. -- posted by Leah's Kitchen

Fluffy Egg-Free or Eggless Pancakes

My son has an egg allergy and we wanted him to eat pancakes as light and fluffy as the ones we love. After all, we don't want to cook twice! You can adjust the cinnamon and vanilla to your tastes. Top with real maple syrup or fruit preserves. I used whole milk because my son is under 2, but you can easily use 2% or skim. He loves to eat these pancakes. I spread the left overs on a cookie sheet and place them in the freezer for a few hours. Then I toss them in a big ziploc bag and place back in the freezer so he can take them to his daycare. -- posted by redjonesy

Chewy Honey Almond Energy Bars

These ingredients are what I normally have on hand, but feel free to substitute or add other nuts, seeds or dried fruit such as dried cranberries, cherries, shredded coconut, toasted oats, etc. These are packed with protein (and calories), and are great for athletes, or anyone who needs a hit of energy!
Gluten-Free Sourdough Pancakes

Use quinoa, a high-protein and high-iron seed, as the basis for the healthiest sourdough pancake you will ever meet. The secret to the smooth and bright texture is sprouting the quinoa ahead of time, and using a high-powered high-speed blender like my Vitamix.

The taste is similar to english muffins or mild injera (Ethiopian flatbread). The texture is amazingly light, almost frothy, but still chewy, holding its shape with no problem.

As a general purpose gluten-free batter, this sour quinoa batter is surprisingly versatile and easy to work with. This recipe has been used for sourdough crepes, okonomiyaki (Japanese savory pancakes), and even as the base for savory pies. -- posted by Naomi Most

Healthy Peanut Butter Balls

I wanted a sweet but healthy snack that we could all just grab out of the fridge when we wanted. I eyeball the ingredients, adding more until I get a consistency that is sticky enough to roll into balls (you kind of have to pack them more than roll them) and not so stick they need to be rolled in something- I usually just make them plain with out the optional add ins. They would be really tasty rolled in powdered sugar, cocoa, crushed peanuts, wheat germ, etc. Have fun playing with this and adding your favs!
Ana Gourmet: Oat Bran Pancakes

Fluffy, low cal, vegan pancakes made with whole wheat flour and oat bran. My whole family loves them and don't seem to suspect for one minute that they're a diet friendly food item. They have a lovely oaty flavor to them and they're very filling. The only downside is they're not completely fat free, but they are very low in fat. See the nutritional information table for more details. Try these with your favorite sugar free syrup, jam or fresh fruit for a satisfying low cal breakfast.
Blueberry Breakfast Biscuits - 1 Point

These aren't really biscuits, but they do make a nice low point breakfast treat. If you are expecting a traditional baking powder biscuit, this is the the recipe you want. The oatmeal gives the biscuits a nuttier flavor and they end up tasting more like a blueberry muffin than a biscuit. The batter is rather runny, so I recommend you use a cookie scoop when putting them on the baking sheet. I was given this recipe by a friend in WWs. These are 1 point per biscuit. -- posted by Erindipity

Superfruit Smoothie

My absolute favorite smoothie - banana, kiwi, mango, peach, and clementine! When fresh fruit is in season, I like to play around with different combinations, but this is the one that I make the most. Not only does it taste absolutely amazing, but it is loaded with natural nutrition too; Vitamins B & C, potassium, dietary fiber, omega-3 F.A.s, antioxidants, calcium...much more wholesome (and yummier!) than a vitamin pill in my opinion. And because of the fiber and protein, it is filling enough to be a hearty snack or a meal substitute. Before you get too excited, a quick word of warning about the kiwi - if you eat too much at once it can make your mouth feel tingly and raw (yes... I've had this happen. I can't help myself!) I hope you like this smoothie as much as I do! :) -- posted by Oenophilly

This isn't breakfast exclusive, but it's very easy to make for those mornings before your coffee is done brewing. All the measurements are loose, because this is made on a single piece of toast, so you can eyeball how much you want/need. Also, you can put whatever seasonings you feel like on it. Sometimes I put crushed red pepper flakes on there. This is single serving, but I think you can manage to make more than one! Enjoy. -- posted by Kyene

Gluten-Free Teff Banana Bread (Vegan + Soy-Free)

This vegan gluten-free banana bread recipe is made with super nutritious teff flour and sorghum flour. If you don't have those flours on hand you can replace them with brown rice flour, though the bread won't be as flavorful. This recipe comes from www.glutenfreewholefoods.blogspot.com which is a modified version of the Banana Walnut Muffin from The Whole Life Nutrition Cookbook. -- posted by Whole Life Nutrition

Easier-Than-You-Think Strawberry Shake (A.k.a. the Mistake)

Like the title states, this recipe is easier than you think. The original recipe called for a frozen banana but in the morning when I took the banana out of the freezer, it was no good.
Sarah's Vegan Oatmeal Amazingness Cookies

This vegan chocolate chip oatmeal cookie eats more like a breakfast food than a cookie. If you are looking for a sweet desert cookie for kids, this recipe might not work. However, if you are trying to eat healthy, preserve the environment, and indulge in a little yumminess, then this is an excellent cookie to bake! (I personally like the cookies chilled.) I thank my friend, Sarah F., for giving me this fabulous recipe.
NOTE: For the ease of posting, I listed an egg in the ingredients. Egg Replacer works perfectly well in this recipe and it is usually how I make. If you live near Trader Joe's, their orange flavored cranberries are perfect for this recipe. Also, you can substitute currants or dried berries for the raisins. -- posted by The Bad Cook

Fat Free, Low Cal Biscuits!

Let me start off by saying HALLELUJAH!! My parents are BIG biscuit eaters, and dinner every night is a battle for me to turn down the biscuits. I adapted this recipe from a traditional "mayo" biscuit, and it is yummy! They come out very fluffy and are not cursed with the nasty baking powder flavor that most healthy biscuits have. I hope to soon experiment with oat flour in this recipe!!
Seviyan - Sweet Asian Vermicelli (Toasted)

There are many, many versions of Seviyan (& spelling), you will find it differs from house to house & of course there are regional variations. Seviyan is the name of the toasted vermicelli used to make sweets aswell as savoury dishes in countries such as Pakistan & India. It is eaten throughout the year but comes into it's own during Ramadan. This is great fro Suhor (the morning meal before dawn) or as a desset after Iftar (the evening meal). I also like to make this a little drier & reduce the sugar somewhat. Recently I discovered that it's fun to swap the almonds & pistachios for a handful of prepared 'tropical fruit & nut mix' like you find in the health food shops & supermarkets). Seviyan is easy to find in most Asian supermarkets as well as the international isle in your regular supermarket - where it'll be sold as Pakistani Vermicelli. I most recently bought mine from Tesco in the UK - 2 packs for 50p -- posted by Um Safia

Apricot-Walnut Oatmeal

Cinnamon Raisin Bread (Abm)

Modified from "The Biggest Book Of Bread Machine Recipes," my 5 yr old son loves helping me make this, and even more, he enjoys devouring it. It makes a 1.5 pound loaf. It's supposed to be great when slices are toasted, but we never get it to last that long. -- posted by SnoBahr
