Georgian Egg Salad - Azelila

This recipe adapted from "The Georgian Feast: the vibrant culture and savory food of the Republic of Georgia" by Darra Goldstein is a nice departure from the regular egg salad. It also happens to be low carb! According to Ms. Goldstein, the name Azelila "comes from the Georgian verb ‘to mix.’ This version is piquant, in the Abkhazian style; the variation is more subtle." -- posted by Julesong

This tasty beef and potato salad makes a beautiful and delicious addition to a cold buffet. Although it does take some time to prepare, it is well worth the effort.
Bulgur Pilaf With Mixed Greens and Garlic

This recipe is from Nizip, in southeastern Turkey. The secret is cutting the greens into thin strips and steaming them with the bulgur so the grains become infused with the flavor. This is best prepared with Tuscan kale, which is also called black, lacinato or dinosaur kale. Sweet greens include spinach, mache, Swiss chard, pea shoots, young nettles, lamb's quarters and salad burnet. Earthy greens include turnip, beat and collard greens and Tuscan and Russian kale. -- posted by Bec

Russian Beet Salad

This salad is ubiquitous in Russia during the winter months. It is called "vinigret", so it must have been served with vinaigrette dressing at some point, but not any more. It is a cool and savory dish perfect for lunch or as a side. You can keep it in the refrigerator for at least a week. -- posted by Orie

Belarussian Carrot Salad

This recipe comes from “Delia’s Vegetarian Collection”; Delia of course, being the famous Delia Smith. She in turn was given this recipe by a family she dined with on a trip to Minsk. Delia says this “simple, but oh-so-good carrot salad…..is prefect for winter when other salad ingredients are not at their best". But it would be good year round too.

This recipe needs standing time to allow the flavours to develop; the minimum time for this is shown as cooking time. Once made, the salad will keep for two days in the fridge. Recipe posted for the Zaar World Tour 2005. -- posted by Mrs B

Russian Potato Salad (Salat Olivier)

This very flexible salad is great with meats, on picnics, with all sorts of things. It is fine in the fridge for a few days. Vary the ingredients and seasonings to taste (and convenience). The finer the chopping, the more "gourmet" it is to Russians. The technique here is easy; it just takes a lot of chopping, so give yourself enough time. -- posted by Sarah Chana

Eggplant (Aubergine) Caviar

An old favorite in Russia, this dish calls for large purple-globe eggplants. Instead of cooking them over an open flame as described below, you can use the oven: Place the eggplants in shallow baking pan, and place under the broiler. Broil, turning every 5 minutes, until skin is blackened all over and the flesh is falling-apart tender, twenty to thirty minutes. Found this on Martha Stewart's website. -- posted by Manami

Sauerkraut Salad Provencal (Kvashennaya Kapusta Provansal)

The sophistication and finesse of the western salad preparations have not yet penetrated into the Russian home, and the salads remain simple and down to earth. Because of the enormous premium placed on fresh vegetables, many people prefer to eat them without any dressing at all, or just lightly sprinkled with oil and vinegar. Or lemon juice.
This salad is made with olive oil, which used to be called “oil of Provence”, thus named Provencal. -- posted by Witch Doctor

A La Rousse Salad (Romanian)

Another Romanian recipe from my Romanian friend Carmen. I love the tangy flavor of this Romanian potato salad. The pickled red bell pepper can be difficult to find. If you can't find it, Carmen suggests to just double amount of pickles as a replacement so it keeps the good sour taste. She did this when she made it for a cooking demonstration and it tasted great! The vegetarian sausages are optional, but I personally think they are a must as they give the salad great flavor. -- posted by Enjolinfam

Polish Cucumber and Sour Cream Salad

This is a traditional polish side salad. Its usually served with chicken or pork escalopes but its delicious served with gulash or any other meat dish. Also it makes a cooling and refreshing end to any spicy dish.
For a low fat version replace the sour cream with fat free greek yoghurt and you will get an equally delicious salad. -- posted by Natalia #3

Salata De Vinete

Salata De Vinete, or Eggplant Salad, is a common salad in many parts of Romania. Similar salads exist throughout Eastern and Southern Europe. Often, the salad is eaten with bread at breakfast or with bread as an appetizer/part of other meals. This version is without mayo or another creamy agent--making it ideal for summer picnics. -- posted by jo_mama

North Croatian Simple Beans Salad

It is very simple recipe. You may keep the salad up to 3 days in hermetically closed pot in refrigerator (The second day is the best). You can use almost all kinds of beans, even Italian brown lentils. I did not include soaking time in this recipe. We use pumpkin oil for this recipe, but since it has strong and peculiar taste it may be strange for non-Croatians. You may use normal oil, but not olive oil. -- posted by nitko

Mama's Crab and Pineapple Salad (Krabyuie Salat)

This humble and interesting dish graced every festive family meal, created by my host-mom in Voronezh, Russia. We've shared it back home with friends here in the states, and they get hooked! It seems like the flavors wont mix, but they do perfectly. The dish is so versatile, it can be served cold with crackers or baguette slices, between slices of bread for a sandwich, or pop it in the oven for a gooey cheesy dip. If you can afford it, try fresh crab. But honestly, the imitation crab does just fine. Try it, you'll like it! :) -- posted by JackandDawn

This recipe is adapted from one published in the Los Angeles Times about 20 years ago; they were featuring Polish food in that issue. This salad is perfect with cold Polish sausage or ham and some East European type bread. It makes a good lunch or a light supper.
Authentic Polish Cucumber Salad (Mizeria)

Don't let the name deceive you - This is very easy, no misery involved!
I love Polish food but it is usually high in salt or fat, so I don't make it very often (unfortunately!). This is a very refreshing side dish, especially during the hot summer months. * You can substitute lemon juice for the vinegar and dried dill for the fresh, if you need to. -- posted by BIG_CHIEF

Croatian Simple French Beans Salad

This is very simple salad where you use cooked French beans. You can use flat or round bean or green or yellow one, the procedure is the same. I do not use olive oil and only vinegar (not acceto balsamico). I also use honey vinegar (I have a friend who is in bee-honey business and he produces that honey vinegar.
Standard Croatian Mixed Salad

Russian Potato Salad

This salad was first served in Moscow in the 1860s, by Chef Lucien Olivier, and the recipe was a closely guarded secret. It is also called "Salade Olivier", "Russian Salad" or "Sour Russian Potato Salad". This classic dish has many variations. Here's mine. I use the pickles found in recipe #408712, but dill pickles will do. The garnish includes the tomatoes found in the same recipe, but fresh will do just as well. -- posted by Ice Cool Kitty
