			<title>Victorian Spring Posy Cake for Easter or Mother's Day</title>

			<description>One of my recent cake inventions - a standard Victoria Sandwich Sponge with a few delicious additions! Fresh oranges and lemons, lemon curd, crystallised violets and mascarpone cheese make this basic sponge cake moist and special enough for the Easter Sunday tea-time table, or for Mum on Mother's Day! I used lemon curd for the icing, but orange curd would also work if you wanted a mellow flavour. I have a recipe for crystallised violets on Zaar, Recipe #216296, and if you don't have any fresh violets, use any sugar paste flowers or cake decorations that work for you - the object is to make a Posy of flowers! This makes a big cake with one layer, you can cut the cakes again and make a three layer gateau if you wish. This cake disappeared quite quickly, but if you have any left, it keeps EXTREMELY well in a tin for up to one week. 			<description>These are my favorite cookies that I have loved since I was a child!  I can remember snitching these cookies off the Christmas trays before any others!  This recipe was passed down to me from my great aunts who were mennonite.  I make them with different colored frosting for every holiday.  They aren't super sweet, whick balances out the sweetness of the homemade icing.  They are soft and even better the next day after the icing sinks in a little bit.  Depending on how much frosting you like, you may wish to make 1 1/2 times the original icing recipe to adequately frost the whole batch of cookies. Pizza chena is a Neapolitan dialect term meaning &amp;quot;full pie,&amp;quot;  a massive, two-crusted savory pie filled with Italian meats, cheeses and eggs.Though traditionally associated with Easter, pizza chena can be enjoyed any time of the year. Given its versatility of ingredients and large size, it makes a great party dish that can be made ahead of time then served at room temperature. This recipe requires beginning at least a few hours in advance.

			<description>We're in love with Tom Douglas' Coconut Cream Pie from Dahlia Bakery here in Seattle, but at $35 a pie plus a $5 deposit for the plate--I knew I had to come up with my own.  I watched a demo of his on the local public television website, but still felt I needed to add my own touch.  I'm proud to say it's a winner!  Take that, Mr. Douglas. . . . 

One note:  I would highly recommend you follow the instructions for a great pie crust below, for optimal crispiness and flavor.  Otherwise, you can roll out a store-bought dough, and just before rolling it out, sprinkle the coconut on top and roll it in.  Will be more susceptible to burning, but should be okay if you watch it close.  I always make a big batch of my All Butter Pie Pastry, recipe #239831, and keep it in the freezer for easy prep. 			<description>Soooo good!  I found this in a Sargento Cheese Ad sometime in 1996.    It tastes like veggie lasagna, could be a vegetarian main dish or a side for dinner.  Or a Lenten specialty.  I did have to thin the cream sauce out before I baked it because the dish thickens up quite a lot in the oven.  You can use penne or other pasta but the bowties are really pretty.
