Big Cookies

Another favorite from "Towns, Trails and Special Times.....The Marlboro Country Cookbook". These are not your everyday cookies.....peanut butter, oatmeal, chocolate, dates, nuts..........they are more like an incredibly delicious energy bar! A lot goes in to them, but they are worth the effort. Great to carry on a hiking trip or camping. Very hearty and yummy! -- posted by FolkDiva

This was the featured recipe in an email from KAF this morning. The pictures are entirely too cute on the website www.kingarthurflour.com - you have to check them out! "These happy pumpkin cookies are the perfect Halloween Treat! Pumpkin and chocolate chips make a great pair for Halloween. Add some strategically placed chips when the cookies come out of the oven for eyes, then drizzle the glaze for stripes, and you have the perfect party snack without a lot of fuss. For more grownup tastes, add the optional orange zest.
Cranberry Chocolate Chunk Oatmeal Drops

This was a featured recipe today from the www.kingarthurflour.com website. It says these are also called Kids' Choice Chip & Fruit Oatmeal Cookies. "Kids and cookies go together like - well, like kids and just about anything sweet. Given kids' affinity for sugar, you might as well temper it with some of the "good stuff" - in this case, oats with their soluble fiber, and whole wheat flour, with its extra vitamins, minerals, and bran. Trust us: the kids won't know they're getting anything "healthy" in their favorite cookie!"

Tips from our bakers: If you bake the cookies for 12 minutes; they'll be crunchy around the edges, with a slight bend at the center. If you bake for the full 14 minutes, till they're almost a light mahogany color, they'll be crisp/crunchy all the way through.
For smaller cookies (great for smaller kids!), drop the dough by teaspoonfuls onto the prepared cookie sheets, and bake for just slightly less time: 30 seconds to 1 minute less than the larger cookies. Yield: about 7 dozen 2" cookies.
What's vinegar doing in a chocolate chip cookie recipe? Ah-HA! Vinegar is our secret weapon. It tempers cookies' sweetness just a tad, and reacts with the leavener to give them a bit more rise, making them lightly crunchy/chewy rather than hard.
Want to make the dough now, freeze, and bake later? Scoop the dough in tablespoonfuls onto the baking sheet; place them close together to save space. Cover the sheet with plastic wrap, and place in the freezer for about 2 hours, till the dough balls are frozen. put the dough balls in a plastic freezer bag, removing the air as best you can. A drinking straw, inserted into the almost-closed bag, can be used to suck out air and effectively shrink-wrap the cookies. Keep frozen for up to a month before baking. When you're ready to bake, place as many dough balls as you like on a prepared baking sheet, and let them sit at room temperature while you preheat your oven to 350°F, for about 15 minutes. Bake partially thawed cookies for 15 to 17 minutes, till as brown as you like. -- posted by senseicheryl

Fudge Drops

This recipe was featured in an email this morning from the www.kingarthurflour.com website. The ingredients listed are different from the other ones posted on Zaar. "These cookies develop an attractive shiny, cracked top surface as they bake. Be sure to allow them to cool before moving them off the baking sheet, as they're very delicate while hot." NOTE: *You may use regular chocolate chips (1 1/3 cups = 8 ounces), but we prefer the flavor of bittersweet chips, or any of our bittersweet chocolates. If you're using bar chocolate (as opposed to chips), chop it into irregular 1/2 to 3/4-inch chunks. -- posted by senseicheryl

Whole Wheat, Honey Sweetened Oatmeal Chocolate Chip Cookies

I found the recipe for these babies on a food blog I frequent. The poster mentioned that it had been particularly cold out and these cookies served a purpose in making her feel cozy by first baking them, then eating them. Works for me!

I bake these on a Silpat cookie sheet. I can't emphasize enough how wonderful these things are, the cookies just come right off, no sticking. If you don't have a Silpat, you can use parchment paper with almost the same results. I like to use the Silpat because the whole carbon footprint issue. Parchment paper may be recyclable, but Silpat is forever (unless your daughter steals it from you, which happened to me). -- posted by Mirj

Extra Rich Chocolate Peanut Butter Oatmeal No Bake Cookies

With all the variations on RecipeZaar I was surprised when I didn't find this one that a friend gave me a few years ago. Its got more peanut butter and more cocoa powder than most other variations so its extra rich in taste. I have used either old-fashioned or quick oatmeal successfully. "Cooking" time is the time required for the cookies to set completely. -- posted by 3KillerBs

Passover Almond Thumbprint Cookies

These delicate little almond cookies, from "Gourmet" (April 2006), are really delicious. They don't taste like Passover cookies and are good enough to eat year-round. The contrast between the crisp cookie and gooey-sweet jam is pretty addictive; you may want to double the recipe. You can substitute a whole almond for the jam, if you prefer. If you like marzipan, you'll love these! And they are quick to whip up. Dough requires 1/2 hour to chill. -- posted by blucoat

Ruth's Peanut Butter Cookies

This is my mom's recipe that she has been using since she was first married 60 years ago. I have searched thru all of the popular recipes here and this one is just a bit different.....most use only brown sugar or have both sugars but then don't use both baking powder and baking soda. I've never had these cookies turn out wrong and they freeze so well. Whether they get reviewed or not, I know I'll be making them for years to come and now I know they are safe here. -- posted by HokiesLady

Black Forest Chocolate Chip & Cherry Cookies

An excellent cookie for chocolate and cherry lovers alike. As you may know, the appellation 'Black Forest' does in fact refer to a forest of that name found in Germany, where the Black Forest Gateau was believed to have originated. Since then chefs have used their imagination to apply the combination of chocolate and tart cherries, customarily soaked in Kirschwasser (also credited to that region, where tart morello cherries grow) to a number of different desserts and delicacies. That being said, this delicious cookie is very adaptable to suit different tastes. It can be made without the chocolate (just add an extra 1/2 cup or so of cherries), extra chocolatey (add 2/3 cup unsw cocoa powder to the batter with the flour), kid friendly (soak the cherries in juice or a simply syrup), or easily halved. These cookies are very moist and chewy, which I love, but if you prefer crunchier cookies you may want to use a different batter base. This recipe is adapted from Dede Wilson's "Chocolate Chip Cookies". Cook time includes chill time. Cheers! -- posted by Oenophilly

Greeny's Chewy Chocolate Chip Cookies

I will admit, this is similar to both the Hershey's and the Ghirardelli cookie recipes - the back of the chip bags are my best sources of inspiration. :) However, I live at high altitude, so I have changed it up a bit for that and for my family/our friends' tastes. I find that they never flatten (once out of the oven) and they stay chewy for several days. They also freeze well. My store-bought chocolate chip cookie-loving nephew even asked if I could make more of these once they had all been eaten. That was awesome. I have substituted Splenda for half of the granulated sugar portion, and it works well, but I think any more than that would compromise the texture too much. -- posted by Greeny4444

I found this recipe in a magazine i got in a pharmacy in Örebro, Sweden called "Apoteket". I reminds me of our great holiday me and DH had in summer 2009.
Note: You can use 1 cup chopped walnuts only or use a mixture of other nuts and/or seeds. I also like pumpkin seeds or sunflourseeds or a combination.
Note#2: You can substitute butter and eggs by 1 cup of whey and a dash of milk for a super healthy but though delightful version. -- posted by Iceland

New York Times Chocolate Chip Cookies

This is my favorite chocolate chip cookie recipe. The New York Times did a big article on the perfect chocolate chip cookie, interviewing and sampling several famous chocolate chip cookies at various bakeries. Several tests were done; larger cookies (such as six-inch affairs) scored better, as did letting the dough age for 24 or even 36 hours (up to 72 hours). A small sprinkle of sea salt was also recommended. I usually make 3 huge cookies and divide the rest of the dough in half, wrapping it in saran wrap. Also, I've cheated a bit at this recipe and used plain flour instead of the two types of flour, as well as neglected sifting the flour. I don't have a paddle attachment on my mixer. I also usually use chocolate chips. You still achieve the very special taste, but the presentation is nicer when you follow the recipe exactly. I like to make the dough & refrigerate - then scoop what I want & re-fridge the rest for fresh cookies another time. Hope these will work that way - bet they will.
Whole Wheat Applesauce Cookies

My favorite cookie recipe! These are moist, chewy and delicious. Because most of the sweetness and the moisture comes from the applesauce rather than fat or sugar, not to mention the whole-wheat flour, I don't feel guilty about sneaking one or two of these for breakfast! -- posted by CorianneW

Coconut, Cranberry, White Chocolate Oatmeal Cookies

I saw someone else with somewhat of a similar recipe and I tweaked everything. It's much healthier than the recipe I looked at originally. Make sure to take out the cookies immediately when they are ready. If they stay in the oven, they will quickly become too hard. -- posted by Linh #2

Bisquick Chocolate Chip Cookies- Just 6 Ingredients!

Classic comfort food. I remember making these in home ec back in the day. God I hated junior high and would never want to relive that torture: but those cookies were good! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better. And to make these a tad fancier, I suggest using 1/2 tsp vanilla and 1/2 tsp almond extract. -- posted by the80srule
