			<description>Don't you just hate it when you come across a great cookie recipe and the instructions are lacking?  I sure do.  This recipe was one of those.  Not to be discouraged,  I made these and now can impart what I learned.  These cookies are very chewy. Make sure you flatten them to about 1/4&amp;quot; as they don't really spread, but they do rise.  Their flavor is very mild even with the chips, nuts and seed additions. The batter is very stiff.  I have a little tablespoon measure made by chip clip that has a rubber bottom so I can pop the batter out without it sticking. 			<description>I wanted to make some basic chocolate chip cookies for my kids (vegan &amp;amp; spelt) and found this recipe on http://www.vegfamily.com/vegan-recipes/desserts/spelt-carob-cookies.htm.  It goes together really quickly and easily and only has 8 ingredients.  I used a light spelt flour, which I think is most suitable for this recipe.  They're a little cake-like, as with most vegan cookies...I prefer them this way.  Note that the recipe only makes 12 cookies - you could make 24 small ones, but I like the larger size.  Use carob or vegan chocolate chips, and I'm sure you could add some nuts and seeds if you choose. 			<description>These relatively healthy absolutely delicious chocolate chip cookies are a gluten-free adaptation of my favorite chocolate chip cookie. The raisins keep the cookies moist but they are hardly noticeable. It is easiest if you use a pre-made brown rice flour mix (Food Philosopher&amp;reg;) but here is the breakdown of those ingredients*:
1 1/2 cups brown rice flour
1/3 cup potato starch
8 teaspoons tapioca flour
1/2 teaspoon tapioca flour.

How to soften butter.

Cut the stick (or sticks) or butter lengthwise into halves. This will help the butter to soften quicker and evenly. Wait approximately 10 minutes (depending upon how hot your kitchen is). Then, with a finger, press gently on the butter. If it leaves an indent in the butter, the butter is soft enough to start whipping &amp;quot;creaming&amp;quot; it.

How to brown butter
  
Start melting butter over medium heat. Use a pan with a light-colored bottom so you can keep track of the color. Swirl the pan occasionally to be sure the butter is cooking evenly. 
As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.
