World's Best Spinach Dip

This is my mother's recipe. I have no idea where she got it from, but everyone always raves about it and begs for the recipe. You can use vegetables, tortilla chips, or crackers to dip. I love this recipe because all the ingredients are fresh, not frozen. I hope you love it! -- posted by ncsouthernbelle

Sherry's Outstandingly Fresh Guacamole

I whipped this up yesterday with fresh corn and tomatoes from my daddy's garden. I needed a dip for a church function and got so many requests for the recipe, I decided it was easier to post it here than process 50 copies of it.
The fresh tomatoes and corn REALLY made a huge difference in the flavors, so use fresh if possible. -- posted by Sherrybeth

We had this at Amalia & Jorge's housewarming and she wanted to make something special for me and of course the other guests - but she made this all by heself - mind you she is just learning English and cooking terminology!
Healthier (Yes Its True!!!), Best Ever, Layered Nacho Dip

Beans, cheese, guacamole, salsa... how could this recipe possibly be GOOD for someone? It is though and it is absolutely delicious. Full of vibrant colours and flavours, this is sure to be a hit at any get together. No one will be able to tell it is lower in fat than your standard layered nacho dips and before you know it, they dish will be empty and they'll be begging for more! Do yourself a favour and make a big batch. :)

White Bean, Rosemary and Sun-Dried Tomato Spread

My rendition of a Weight Watchers classic. This is yummy and you can happily serve this with vegetables and pita chips to family and guests who will never know it is both Core and points friendly. If your sun-dried tomatoes are very dry, soak them in boiling water for 5 minutes before chopping. A word of caution: this recipe does not do well over time as after two or three days the lemon becomes too pronounced and spoils the balance of flavors. My suggestion if you want to enjoy this over many days is to reduce the amount of juice and zest by half. -- posted by justcallmetoni

Thanksgiving 2008 is around the corner for our Thanksgiving Dinner for about 350 people, give or take a few. Canned chipotles in adobo sauce give this clever, creamy dip an enticing heat and smokiness. The spiced pepitas scattered over the dip are addictive and great as a snack on their own. With Halloween around the corner - we can have pepitas, pepitas, and more pepitas!! This is fast/can be made-ahead/it is a staff favorite/& vegetarian. Cooling time is 1 hour. Recipe by Rachel Soszynski, from: Ultimate Thanksgiving Planner: Time Saving Tips - Food & Wine Magazine, November 2008 edition.
Spicy and Smoky Guacamole

We are still receiving bushel baskets with avocados! A 'family member' keeps on bringing them in! Every female at this 'home' has the shiniest hair possible! We made this guacamole for a change of pace - it is spicy and I gave it away to the staff; keeping some for myself. Unlike other 'Latin Americans" the Cubans don't like their food spicy so we had enough to go around and around. "A pickled jalapeno makes this guacamole tangy", to say the least!!!
Pure Tzatziki Sauce of the Gods

I guess it has been almost 20 years since I worked at Zorba's restaurant in Fort Worth. Zorba's had the BEST gyros I have ever had. Zorba's in the North Hills Mall is gone now. The North Hills Mall is even gone now. But I think I have a little treasure from the past that you are going to love.

Gyros that you get at a stand or restaurant usually have the same basic ingredients. Pita bread, gyro meat (probably a cone from Kronos), onions, and tomatoes. This is all turned into an unbelievable delicacy with a strange condiment called "tzatziki sauce."

There are lots of tzatziki sauce recipes on the Internet. But they don't quite match the creaminess of the tzatziki from Zorba's. I also see tzatziki sauce recipes with dill, mint, lemon juice, and other strange things in them. None of that was in Zorba's tzatziki.

Now, I have to admit that they never showed me how to make the tzatziki. That was all done by Tula in the back kitchen. Tzatziki was a complete mystery to me the whole time I worked there. But I did happen to see the two things that made their tzatziki so special.

I remembered that one of the ingredients was sour cream. Another one of the ingredients was something that sounded similar to sour cream, but it was different. It was something I had never heard of before. Years later, I kept thinking "what was that other ingredient? Sour...something?"

Now that we have the Internet, I am able to put together the last piece of the puzzle. It was not "sour...something." It was "something...cream." It was, in fact, yogurt cream.

Now I can give you the basic ingredients so that you can make this simple and extraordinary tzatziki sauce. -- posted by earthpet

Smoked Salmon Dip

My DH came up with this recipe after much trial and error. This is always a HUGE hit with family and friends. He cooks fresh salmon on the smoker, which makes all the difference in the world. You could also use canned salmon, but I doubt it would be as good. This is a toss as you go recipe, so the measurements aren't exact. We serve it with plain saltine crackers and a slice of canned jalapeno pepper on top. Prep time does not include time to cook the salmon. Cooking time includes chilling time. Yummy! -- posted by FCR Gal

Eggplant (Or Aubergine) Dip

NOT your classic baba ghanoosh but nonetheless a very tasty eggplant dip which I've adapted from a recipe in 'The Australian Women's Weekly's TAPAS antipasto mezze'. This dip tastes best if refrigerated overnight. The overnight refrigeration time has not been included in the cooking or preparation times. Because vegetable sizes will inevitably be variable, add the olive oil sparingly until you can see how much you need to achieve the right consistency. -- posted by bluemoon downunder

Tapenade

A recipe for Provence's famous olive pate - perfect for serving with crudites or as a relish for grilled fish. Use either green or black olives, but whatever you do, don't use pre-pitted olives. Get good quality olives and pit them yourself. You need about 8oz pitted weight. Serve the pate on crisp toasts, grilled potatoes, as a dip with young vegetables or on fish fillets or grilled meat. It keeps for ages in the fridge. -- posted by English_Rose

One of my husbands co-workers made this for us one time. We loved it so much we got the recipe from her. It is a little time consuming but well worth the work. Using a Vidalia Chop Wizard cuts down a lot on prep time.
Mediterranean Dip

This is a Trader Joe recipe. It is such a delicious dip! I took it to a party and everyone wanted a copy of the recipe. The recipe suggests layering the ingredients into a pie plate or something sized similar. I made the mistake of thinking that was too big for the dip and used a smaller serving dish. By the time I was finished layering the ingredients, it was too full! I served this dip with pita crackers from Trader Joes, but you could use your own favorite dippers. This recipe looks unusual but it is knock out. -- posted by LifeIsGood

Auld Alliance: Potted French Blue Cheese and Scotch Whisky Pate

The Auld Alliance is the historic friendship between Scotland and France, as well as a traditional cheese and whisky recipe. Here is a modern version of my Scottish grandmother's recipe for Auld Alliance. I have used Scotch whisky and a lighter French blue cheese, Fourme d'Ambert, instead of the usual Roquefort, which I find very salty. This makes a fabulous appetiser or an alternative cheese course. Choose a blue cheese and Scotch whisky of your choice; blends are better than malts in this recipe. A Potted History! Scotland’s most famous connection with Europe was the Auld Alliance with France. First agreed in 1295/6 the Auld Alliance was built on Scotland and France’s shared need to curtail English expansion. Primarily it was a military and diplomatic alliance but for most of the population, it brought tangible benefits through pay as mercenaries in France’s armies and the pick of finest French wines! The preparation time includes the chilling time. -- posted by French Tart

Eggplant Onion Dip

Adapted from a recipe in Jean Paré's 'Company's Coming: dip, dunk & dab, party dips and spreads'. This recipe has been descibed as "an update of baba ghanouj... sweetened with caramelised onions (and served) with pita bread chips or vegetables". I learnt also from this book that 'baba ghanouj' means 'indulged father' in Arabic! Rather patriarchal for 2009! Perhaps that's why Jean Paré has re-named this 'eggplant onion dip' - bland and politically correct! I decided to stay with this name but if anyone knows the Arabic for 'eggplant onion dip', I'll happily rename it. The cooking time includes one hour chilling time. -- posted by bluemoon downunder

Green Chili Guacamole

My standby guac recipe has bacon in it and I needed to whip something up for a BBQ that was hosted by a vegetarian. Not wanting to run to the store I raided the pantry and decided 'what the hey', I'll see what I can come up with. I couldn't have been happier with the result. Even a guy at the cookout that was from Mexico said it was better than his grandmothers. Now that's a compliment. I do recommend leaving it in the fridge overnight for best results.
Peach and Cucumber Salsa

Low calorie, fat free vegan recipe from Whole Foods; it is highly rated on their website. They suggest serving it atop grilled fish but I think it would also be great with chicken or pork tenderloin. You can make it up to 4 hours ahead of serving, just keep it in the refrigerator. I think mango and a splash of OJ would be a great addition to this recipe as well! NOTE: I just made this recipe and I added the OJ for a touch of sweetness and added a couple drops of jalapeno sauce for more kick. I also didn't care for the mint, so I changed that to optional. . .the basil was nice I thought. -- posted by JanuaryBride

Shellie's Chunky Homemade Guacamole

This is a recipe for guacamole that I created after discovering that I actually like guacamole after 42 years! Since then, I have been making it at least once a week without fail. I am addicted! I love my recipe because I like my guacamole with some texture, spicy, and with some cilantro and lime flavors. It doesn't take long at all and I don't measure out my ingredients, so you will just have to make yours to suit your own taste. The number of avacadoes is tricky...the sizes of them vary greatly and it also depends on how much you want to make. You can add more jalapeno to make it spicier, or leave some out to make it milder. Enjoy! -- posted by Chef #1307787

I'm not sure exactly what the origin is or why it's called "Babysitter Dip" -- all I know is that it's super easy and super good! -- posted by amylou2

Mike's Salsa

A positively delightful salsa recipe for any occasion. Do not allow the idea of using habanero peppers to scare you off! They really blend well and will not make the dish as spicy as you may think with the seeds and veins removed. If you are brave (or crazy?) like me, leave them in on one or two of the peppers and enjoy the added heat. -- posted by MrTink
