Goat Cheese--Edamame Dip With Spiced Pepitas

Thanksgiving 2008 is around the corner for our Thanksgiving Dinner for about 350 people, give or take a few. Canned chipotles in adobo sauce give this clever, creamy dip an enticing heat and smokiness. The spiced pepitas scattered over the dip are addictive and great as a snack on their own. With Halloween around the corner - we can have pepitas, pepitas, and more pepitas!! This is fast/can be made-ahead/it is a staff favorite/& vegetarian. Cooling time is 1 hour. Recipe by Rachel Soszynski, from: Ultimate Thanksgiving Planner: Time Saving Tips - Food & Wine Magazine, November 2008 edition. Serve with any of my recipe #146950, or recipe #190801, or recipe #174467 - just a slight hint!! -- posted by Manami

Salsa of Win

This is seriously the best salsa ever. It is especially excellent with grilled chicken marinated with lime/apple juice. But really, it's great with anything. We also dipped apple slices in it, and it's good with tortilla chips too. One of the best cullinary experiments I've ever randomly come up with.

It has a complex sweet-hot-tangy flavour that will absolutely rock your world. It did mine. -- posted by Kaj V.

Szechuan Peanut Sauce * Exported from Mastercook *

After many years of searching for and trying many, many other recipes, this remains my favorite spicy peanut sauce. My favorite way to serve it is as a dipping sauce for long, fresh green beans, an idea I picked up from a caterer in Gainesville, FL (if I could remember her name, I'd give her credit).

Many years ago, I had an edition of MasterCook recipe management software. As technology changed, my software became out-of-date and unusable, but I didn't replace it because I saw the benefit of web-based software such as RecipeZaar (why try to manage recipes all by yourself when you can be part of a community and do it together). After years without this recipe (I never could find where I wrote it down or printed it), I tracked it down in Google. I've added it to RecipeZaar to keep for myself and share with others.

The recipe is exactly how I found it, including the name, ingredients, directions, and the notes (see below). The only additional notes I would suggest are: add the chili oil one teaspoon at a time, tasting in between, until you reach your desired level of spiciness; and keep the sauce thoroughly chilled or heated, it will separate at room temperature.

Enjoy!

ORIGINAL NOTES

Recipe By: Jo Anne Merrill

Use about 1 tablespoon of sauce per serving of chicken or fish.

*Cilantro is usually sold in small bunches. You will need only about 1/3 of an average bunch or 2-3 of the stems with leaves attached. It may also be sold as coriander or Chinese parsley. -- posted by lchelini

Beetroot Dip / Beet Dip

This was given to me by an Egyptian friend who said it's a family recipe. I like the fact it's doesn't contain dairy and nuts so it was perfect for Menu #24612 because we had a few guest who are lactose intolerant and have an allergic to nuts. You can chill the dip until it's needed. It will keep for two days in the refrigerator but the flavour will enhance -- posted by Chef floWer

Eggplant Onion Dip

Adapted from a recipe in Jean Paré's 'Company's Coming: dip, dunk & dab, party dips and spreads'. This recipe has been descibed as "an update of baba ghanouj... sweetened with caramelised onions (and served) with pita bread chips or vegetables". I learnt also from this book that 'baba ghanouj' means 'indulged father' in Arabic! Rather patriarchal for 2009! Perhaps that's why Jean Paré has re-named this 'eggplant onion dip' - bland and politically correct! I decided to stay with this name but if anyone knows the Arabic for 'eggplant onion dip', I'll happily rename it. The cooking time includes one hour chilling time. -- posted by bluemoon downunder

Apple Chile Salsa

It's a good idea to use crispy apples (such as Crispin, Braeburn, Gala, or other sweet-tart firm apples) for salsa, since they are available year round. The red bell pepper gives this salsa visual pizzazz, while the citron tea adds citrusy notes. Citron tea is a marmaladelike product made from citron, a citrus fruit native to China. It can be found in Asian markets and is most often used to flavor hot water as a tea. If you can't find citron tea, just use orange marmalade, though it might make your salsa a bit on the sweet side. You can counter the sweetness by adding another teaspoon or so of lemon juice. Cook time is sitting time.

Salsa to Dare the Devil.

We dare you to try our deliciously different salsa. Through the first weeks of the tour, the Dining Daredevils have discovered how much we have in common in the kitchen. There are no picky eaters on this team, so this daringly delightful salsa is perfect for us. Hot chiles give plenty of heat, but cherries and orange provide some sweet. Cocoa powder adds an extra twist of adventurous flavor to a salsa that sums up our "try anything" attitudes. Posted for ZWT 5 Salsa Challenge. (Ingredient credits: tomatillos; yours truly, chiles; MarylandJim, garlic; DreamGoddess, black beans; tomsawyer, onions; SueVM, Bell Peppers; Studentchef, orange juice; MamiJanine, dried cherries; MichelleBerteig, cilantro; Hollygolightly.) -- posted by EmmyDuckie

Tropical Treasure Mango Salsa by Ali Baba's Babes

Excerpt from Ali Baba & the Forty Thieves:

"Then Ali Baba climbed down and went to the door concealed among the bushes, and said, "Open, Sesame!" and it flew open.
Ali Baba, who expected a dull, dismal place, was greatly surprised to find it large and well lighted, hollowed by the hand of man in the form of a vault, which received the light from an opening in the ceiling. He saw rich bales of merchandise -- silk, stuff-brocades, all piled together, and gold and silver in heaps, and money in leather purses. He went in and the door shut behind him. He did not look at the silver, but brought out as many bags of gold as he thought he could carry." :)

Now you too can enjoy a wealth of treasures in this refreshing salsa created by the ZWT-5 Team Ali Baba's Babes. :)
diner524 - Lime (Peridot, associated with the sun, bestowing dignity on it's wearer and worn proudly as beads or bracelets for protection.
Charmie777 - Orange bell pepper (Sapphire, found in every color except red - then it's a ruby, protects against poverty, can make a stupid man wise & an irritable man good-tempered),
jkoch960 - Red bell pepper (Ruby, said to store vast quantities of heat that can be felt in short bursts; attracts prosperity)
acerast - Jicama (Diamond, valued for strength but is still a universal gemstone of love and compliments any other stone it's paired with),
Shari2 - Red Onion (Amethyst, the purple variety of quartz inspires creativity, courage & valor),
**Tinkerbell** - Jalapeno pepper (Tourmaline, the stone of the Muses, inspiring creative processes),
bmcnichol - Cinnamon & Sugar (Smokey Quartz, credited for being able to do everything from visualizing the future to curing disease),
K9 Owned - Peach (Spinel, sometimes mistaken for other gemstones, very versatile, sharing properties of the ruby & the sapphire like abundance and good humor),
cookin_nurse - mango (Precious Topaz, strengthens the mind, prevents mental illness, a cooling gem with the ability to cool flaring tempers),
bluemoon downunder - Cilantro (Emerald, the stone of the heart has adorned many famous royal rings or crowns & has been cherished since man first discovered them) :) -- posted by **Tinkerbell**

Green Chili Guacamole

My standby guac recipe has bacon in it and I needed to whip something up for a BBQ that was hosted by a vegetarian. Not wanting to run to the store I raided the pantry and decided 'what the hey', I'll see what I can come up with. I couldn't have been happier with the result. Even a guy at the cookout that was from Mexico said it was better than his grandmothers. Now that's a compliment. I do recommend leaving it in the fridge overnight for best results. Enjoy!!! -- posted by Bekah49036

Cashew Herb Spread

This is an original recipe for a versatile spread that is great on sandwiches or smeared on a lettuce leaf for a quick veg wrap; equally easy to use as a dip for crackers and veg or thin down a bit and use as a "cream" accompaniment for baked tofu, fish, etc. Toss with pasta or rice for a fresh, protein rich, dairy free cream sauce. Would also be nice to dress potatoes for a potato salad... hmmm... the possibilities are endless!
My version comes out light green and looks a lot like guacamole, tastes fresh and herby and has a creamy mouth feel. The miso and nutritional yeast add a nutty/cheesy depth that you notice but can't quite put your finger on... and the garlic adds a raw zip that is really nice if you like that kind of thing! I love, love, love that this is something I can make that has no added fats or oils. Hope you love it too!

Peach and Cucumber Salsa

Low calorie, fat free vegan recipe from Whole Foods; it is highly rated on their website. They suggest serving it atop grilled fish but I think it would also be great with chicken or pork tenderloin. You can make it up to 4 hours ahead of serving, just keep it in the refrigerator. I think mango and a splash of OJ would be a great addition to this recipe as well! NOTE: I just made this recipe and I added the OJ for a touch of sweetness and added a couple drops of jalapeno sauce for more kick. I also didn't care for the mint, so I changed that to optional. . .the basil was nice I thought. -- posted by JanuaryBride

Tangy Guacamole

A refreshing lemon/limey guacamole recipe that is neither too spicy nor too tangy. Great for someone who cannot handle too much spice or heat. The lemon/lime mixture will keep the avocado from browning and give it a refreshing tart/tangy taste. This is a slight variation from a recipe a Texan friend shared with me. Great with tortilla chips. Enjoy! -- posted by Chef DNA1611

Roast Eggplant With Walnuts

This wonderful appetizer, when served with warm pita, marinated strips of red pepper & tasty olives, can be a meal unto itself... or tucked into a pita with the aforementioned for lunch, a very nice lunch. Per the Times: "This Turkish recipe is from Paula Wolfert's upcoming book, "The Slow Mediterranean Kitchen," which will be published in October by Wiley. Wolfert notes that the slower the grilling, the smokier the flavor of the eggplant. She thanks Dr. Ayse Baysal for sharing the recipe."
Note: When large eggplants are roasted whole, you may notice black juices seeping out of the skin. If this happens, immediately slit the eggplant on one side and drain on a slanted board in the sink. -- posted by Buster's friend

Thick and Creamy Fresh Fruit Dip

This is great for using as a dip for fresh fruit, as well as a spread for quick breads. If you prefer a thinner dip, add a little of the juice from the crushed pineapple. Note: preparation time does not include chilling time. -- posted by Bayhill

Harissa-Spiked Houmous

This recipe is delicous -- for a nosh, cocktail party or just an evening snack! I love these kinds of appetizers because they don't take much time, this one is vegan -- so almost anyone can eat it. I like to serve them with Pita Crisps: preheat oven to 375ºF. Split 6 pitas hrizontally into circles, then cut each circle into 6 triangles. Lay them in a single layer, rough side up, on 2 or 3 baking sheets. Use a pastry brush to brush triangles with olive oil, then sprinkle with fennel seeds and a pinch of sea salt or instead of fennel and sea salt use Mrs Dash salt free seasonings. For example: Table Blend, Original or Garlic & Herb, these have a flavor all their own -- try it you might like it. These can be made about a week ahead, just store in airtight container. -- posted by Manami

Stilton Date Dip

From a newsletter I get regularly from grandparents.com, this recipe was described as "A little bite of cheese, a little bite of sweetness, a little bite of crispy & a whole lot of delicious". Just when you think dips have about used up all their originality, along comes a recipe like this to convince you otherwise. (Time includes 5 min to crisp the bacon while you prepare the dates) *Enjoy* ! -- posted by twissis

A great dip for an appetizer, dessert, side, or snack. Very easy too!
It also goes great with graham or Ritz crackers -- posted by jai_lea_13
