			<title>Sour Cream and Onion Dip (From Scratch!)</title>

			<description>I got this recipe from my husband's Aunt Dee. It's simply labeled as &amp;quot;Rye Boat Dip&amp;quot;, but judging from the ingredients, I'd say this is sour cream and onion dip! I had a hard time finding other recipes to back up my guess, so I thought I'd post this as an example.
If you're unfamiliar with dried beef, it'll be in the same section as Spam and other canned meats. The stuff I use comes in a glass jar. It's a little pricey in some stores-I've used only one jar and it's been delicious.

			<description>I had some already prepared pesto sauce from a mix and wanted to make something with garbanzo beans.  Who knew Bush Beans had a recipe that combined the two?  You can use this as an appetizer or as a sandwich spread.  I added a little basil because I didn't have basil pesto sauce, but there are recipes on zaar for the exact thing if you want to make your own.  This is an excellent dip that took me by surprise.  Surprise your guests too and see if they can guess the ingredients. 			<description>The recipe got rave reviews the first time I made it...once they tasted it!  This dip was not very appealing to the eyes but boy was it good!  I made some changes that I think will make a person want to taste it without being talked into it.  I decided to reserve some of the shredded cheese and chopped chicken to sprinkle on top of the dip after baking along with some chopped tomatoes, green onions or jalapenos.  Much prettier and even tastier! Yum!
You could probably make this in a crockpot, too.

The authors of the site suggest brushing it on pork loin or salmon before baking, using it as a dipping sauce for dumplings, or trying it as a salad dressing. I bet it would be great in other things, too. Temperature:
Mayonnaise is easiest to make when all ingredients are at normal room temperature. Warm the mixing bowl in hot water to take the chill off the egg yolks. Heat the oil to tepid if it is cold.

Egg Yolks:
Always beat the egg yolks for a minute or two before adding anything to them. As soon as they are thick and sticky, they are ready to absorb the oil.

Adding the Oil:
The oil must be added very slowly at first, in droplets, until the emulsion process begins and the sauce thickens into a heavy cream. After this, the oil may be incorporated more rapidly.

Proportions:
The maximum amount of oil one U.S. Large egg yolk will absorb is 6 ounces or 3/4 cup. When this maximum is exceeded, the binding properties of the egg yolks break down, and the sauce thins out or curdles. If you have never made made mayonnaise before, it is safest not to exceed 1/2 cup of oil per egg yolk.

REMEDY FOR TURNED MAYONNAISE:
You will never have trouble with freshly made mayonnaise if you have beaten the egg yolks thoroughly in a warmed bowl before adding the oil, if the oil has been added in droplets until the sauce has commenced to thicken, and if you have not exceeded the maximum proportions of 3/4 cup of oil per egg yolk. A mayonnaise has turned when it refuses to thicken, or, in a finished mayonnaise, when the oil releases itself from suspension and the sauce curdles. In either case, the remedy is simple.

Warm a mixing bowl in hot water. Dry it. Add 1 teaspoon of prepared mustard and 1 teaspoon of sauce. Beat with a wire whip for several seconds unil they cream and thicken together. Beat in the rest of the sauce by teaspoons, thickening each addition before adding the next. This always works. Just be sure you add the turned sauce a little bit at a time, particularly at first.

REFRIGERATION:
After several days under refrigeration, mayonnaise has a tendency to thin out, especially if it is stirred before it comes to room temperature. 			<description>This is a Midwestern classic apparently-- a school chum from Iowa told me about this recipe that's popular around fall and early winter, from having leftover cans of pumpkin from stocking up on sale but not wanting to make any more pumpkin pies-- they're popular for high teas, luncheon spreads, Superbowl parties, Thanksgiving and Christmas, or sitting on your can watching The Golden Girls. :D Since I didn't want to use actual marshmallow Fluff...this is my fluffy adaptation of this recipe that came out HEAVENLY. I could eat a drum of this stuff and not get bored of it! One 15 or 16 oz can of pumpkin works, or you can measure out 2 cups from a 28-oz can.
