The best gouda cheese to use is Parrano.  It is an Italian-type gouda that is a little firmer in texture.  You can now find it at most grocery stores and Whole Foods. She would make this up and transfer it to a CrockPot to keep warm, as it was always best served hot.  She would cube 2 loaves of Sourdough French Bread to accompany this for the dipping.  Although this recipe calls for Velvetta cheese, Mom has a note that states you can use any other High Quality American Processed Cheese for extra zip.  We have also found that instead of one only can of Ortega Diced Green Chili's some of us use two cans. 			<description>My dad started this recipe in our family. I grew up making it with my dad and after his death I have continued to make it. I have tweaked it to suit my family. Great to make for the Superbowl or a casual get together. All the spices are to taste. The measurements below are estimates, I rarely measure. Feel free to cut back on the Jalepeno if you don't like your food spicy. Also, instead of just plain ground beef, I have made it using left-over chili, just cut back on the spices then.Use more or less Milk to make cheese as thin/thick as you like, keep in mind the salsa will thin it out. You can use Pepper jack Velveeta if you cannot find the Mexican style. Also, leftover chili or 1/2 lb ground beef and 1/2 lb Chorizo instead of ground beef has had awesome results in my household, just cut back on seasonings. I can remember my father asking the waiter for the recipe for their cheese dip, which was served along with &amp;quot;hot dip&amp;quot; (salsa) and tortillia chips.  Over the years he adapted the recipe, which he always had on hand for a late afternoon snack.  Dad served it cold from the fridge.  My son prefers it warm.
