Mike's Salsa

A positively delightful salsa recipe for any occasion. Do not allow the idea of using habanero peppers to scare you off! They really blend well and will not make the dish as spicy as you may think with the seeds and veins removed. If you are brave (or crazy?) like me, leave them in on one or two of the peppers and enjoy the added heat. -- posted by MrTink

Green Goddess Spinach Dip

Are you all as devastated as ME about the death of *Gourmet* magazine? I could weep. Luckily, I have a near-complete collection of issues going back to 'way before I was born, so I can live on those the rest of my life!

This recipe (of course I've fiddled a little with it) was on the last page of the last issue, and even my husband, not usually a big fan of creamy dips, keeps getting it out of the fridge and eating it cold with pita crisps.
Restaurant Salsa

Bring the mexican restaurant to your home with this easy to make salsa. You'll never buy store bought again. You can add more jalapenos(or a habenaro) to make it hotter. I know everybody has their preferences when it comes to salsa, so tweek the recipe as much as you want(fresh garlic, red onion, franks red hot, etc). I would however stick with the recipe first. Taste it after it sits in the fridge for at least 2 hrs for best results. -- posted by bigbrew

Pesto Cream Cheese Dip (To Cure Beaver Street Brewery Cravings)

I went to college at NAU in Flagstaff, Arizona. I no longer live in Flag, but often crave the Pesto Cream Cheese Dip from Beaver Street Brewery. This recipe is slightly different, but it might be even better! (Beaver Street doesn't stir pesto into their cream cheese mixture...they just put it on top.) I served it to a group of old college friends, and they loved it as well! In fact, everyone crowded around the bowl, stuffing their faces until it was gone! LOL Quick and easy, but oh so impressive -- even for those who aren't familiar with Beaver Street. I use all reduced-fat ingredients. I only toast half of the bread slices and leave the other half un-toasted, which is what they do at Beaver Street -- this provides a variety of dipping textures with little-to-no effort. :-) -- posted by Robyn's Cookin'

Homemade Onion Chip Dip

Sometimes I just get so hungry for the chip dip we had when I was little with sour cream and a packet of French Onion Soup Mix. I won't buy those any more as they contain partially hydrogenated oil and sometimes MSG so I made up my own dip that comes pretty close. We use organic sour cream. Easy to double. -- posted by MNAnn

Hummus - Silky Smooth, from Scratch!

This recipe was published in the food section of my city paper from a local Lebanese restaurant. Amazingly smooth and creamy.

"Baking soda is the secret to silky smooth hummus; it softens the beans so they cook quickly and break down easily when blended. The hummus can be prepared up to two days ahead and stored in an airtight container in the refrigerator until ready to use." -- posted by biznana
