			<title>Tuna and Egg Salad Divine</title>

			<description>DH asks me to make this once a week and I don't oblige because it's a great lunch or snack for him when I'm not home or don't feel like cooking.  I'll either serve it cold to him on fresh wheat bread, or if I have time I will use Sourdough bread, add a slice of cheese, and make him a tuna melt. 			<description>Ok - this is one of those recipes that sounds questionable &amp;amp; becomes more appealing when the budget closes in. We used to make this a hundred years ago when we were in college on tight budgets... Time passed, the recipe was lost &amp;amp; today it showed up in an email from The Witchita Eagle!
It's cheap, not entirely bad for you with the fresh vegies (&amp;amp; nuts) &amp;amp; tastes unbelievably good! LOL - am adding cabbage to the shopping list because mine in the garden are just too small!

			<description>This is such a nice refreshing main dish salad for a warm spring or summer evening.  It's different than the usual ways we serve scallops and that's what I like about it.  You need to boil the potatoes and cool them completely so do this earlier in the day.  I make the vinaigrette then, too so the flavors have time to blend.  The chilling time is not included in the prep time so be sure to remember this. An awesome salad that is the perfect introduction to those not acquainted with the glories of raw beets. This recipe is from the New Orleans Vegetarian Society - published in The Times-Picayune. Oh &amp;amp; did I mention the dressing becomes magenta? BTW - this salad is really, really good for you - reduce the dressing if the calories from the coconut milk worry you - save half for the next salad.

			<description>Marcelle Bienvenu, contributing write for The Times-Picayune, included this exquisite summer pasta salad in her article giving the &amp;quot;heads up&amp;quot; that the famous &amp;amp; beloved Creole tomatoes are just about ready to start coming to market. The Creole tomato is a fabulous tomato, a phenomenal workhorse in hot &amp;amp; humid conditions that kill off other tomato plants. In LA it is also imbued with a special rapacious taste that I am praying mine develop in my coastal mater patch.
Fennel bulb - crisp &amp;amp; refreshing like celery but with that bright but gentle licorice-like essence is a wonderful foil for robust tomatoes to accent their sugars. This pasta salad appeals to me because it seem lighter, hence more refreshing, than others loaded down with mayonnaise or store bought &amp;quot;Italian&amp;quot; bottled/prepared dressings. Perfect with a pile of chilled shrimp steamed in Old Bay just after being netted. Iced Tea with sprigs of mint or an ice-cold Rolling Rock ( 7 ounce bottles on ice - Pleeeze LOL!) &amp;amp; supper is on the table for deck dining at its best!

Unlike traditional couscous, pearl couscous which takes its name from its pearl-like shape and size is often described as a toasted pasta specialty. Like regular pasta, it is made from hard (durum) wheat and water. But instead of being dried, it is toasted in an open flame oven. It has a rich, nutty flavour and a chewy texture, with a smooth, almost buttery mouth feel. It makes a perfect side dish to meat, poultry, or fish instead of potatoes, rice, or traditional pastas or couscous. It cooks in around 10 minutes by the absorption method  just like rice  and you can also use it in a variety of dishes  just like rice and other pastas.  Product ambassador, chef Gabriel Gate, has developed a number of recipes using pearl couscous. I am extremely fond of cold-smoked salmon. We also love green asparagus. Put them together, add a few extra taste notes, and you have a nice salad.
