Low Carb Peanut Butter Cup Squares

These taste similar to a reeses peanut butter cup, but not quite the same. I wouldn't reccomend using "natural" peanut butter because it changes the taste. I use creamy peanut butter such as jif or peter pan, which has some sugar in it, but not much. The almond meal/flour is just ground up almonds, i make it myself and keep it in the freezer, it can go rancid if not refrigerated. -- posted by 89240

Low Carb Chocolate Truffles

Karen's Gourmet Low-Carb Recipes By Karen Barnaby
"Because chocolate is a treat, I like to use high-quality unsweetened chocolate and cocoa. The better quality chocolate has a smoother texture than the more commonly available Baker’s chocolate due to its high cocoa butter content. Callebaut, Valrhona and Scharffen Berger are all good choices."

Low Carb Chocolate Ganache (For Truffles or Sauce)

From Laura Dolson, Your Guide to Low Carb Diets.
Traditionally, ganache is made with half chocolate and half cream. However, the consistency depends a lot upon the chocolate and the sweetener, especially when using unsweetened chocolate. This sugar free low carb chocolate ganache can be used to make truffles or a chocolate sauce, depending upon how much cream is in them. You can easily alter the amount. -- posted by Nana Lee

Lower Calorie Lower Sugar Human Puppy Chow

I get cravings for this sometimes or for something sweet and chocolately like this, but I wanted to try something slightly better for me. You could try cutting out the oil/margarine altogether and maybe even the peanut butter. And you could experiment with other low-calorie cereals. I would guess plain puffed rice might be nice. This is basically the same as the regular recipe, but with slightly less chocolate, oil/margarine, and a powdered sugar alternative. -- posted by Chef #964225

The Perfect Low-Sugar Kool-Aid Salt Water Taffy

I've worked at it and worked at it and 5 batches later, I think I've got it. It's the perfect salt water taffy flavored with kool-aid. It takes alot of work to get it to the right consistency so don't give up! And if it seems to hard when it cools down, as long as it's still pliable, it will work. If it cracks into pieces, you cooked it too long. Even 5 degrees can ruin the batch so keep an eye on it. Try again, or tell people you were going for painted glass candy all along.
Also, most taffy recipes will tell you that you don't need to keep stirring after the mixture starts boiling. I ruined 3 batches before I found out it's safer just to keep stirring. Even a little bit of burnt taffy in the mix ruins the batch, and if you don't stir, it will burn to the bottom of the pan.
**SIDE NOTE**
I sited strawberry kool-aid in my recipe, but you can use any kind as long as it's unsweetened. -- posted by InBlackAndLace

No Sugar Peanut Brittle

This brittle is fantastic. You can't even tell it's not made with sugar. I substitute nuts, cashews, pecans and peanuts. Very simple to make best with a candy themo. -- posted by The Real Cake Baker
