For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's.

			<title>Sugar Free Pumpkin Bars With Cream Cheese Frosting</title>

			<description>Completely sugar free dessert!  I've been experimenting with a sweetener called &amp;quot;Xylitol&amp;quot; that I buy online and will gradually post recipes with my successful results.  

I promise never to post a recipe that hasn't passed the &amp;quot;Kid Test&amp;quot;.  I have four kids who are very, very finicky eaters.  My kids CAN tell that these aren't made from real sugar - mostly because I don't have real sugar in my house anymore.  But they still love these.  I have also served these to friends without anyone knowing they weren't &amp;quot;normal&amp;quot; pumpkin bars.

I started looking for a sugar substitute when a dear friend had surgery and became completely intolerant to any processed sugar.  Splenda doesn't agree with me and I always prefer 'natural' options when possible.  Xylitol IS more expensive than sugar, so experimentation is frustrating sometimes.  I hope you will enjoy my successes without having to endure the waste I've had.  It has 40% less calories than sugar, 75% less carbs, and has a glycemic index of 7 (compared to sugar at 68 and corn syrup at 100) and my friend can enjoy sweets once again!

The key to using this in place of sugar is to MELT the xylitol before adding it to the recipes.  I just melt mine in my pyrex measuring bowl in the microwave.  I have found it's very important to MELT the Xylitol but not BOIL or otherwise over-heat it, because it does alter it's consistency like sugar.  If you heat it too long, when it cools, it becomes rock hard.  (I'm still figuring out how to use this to my advantage in fudge and caramels - I'll post when I get a successful outcome.)

This pumpkin bar recipe is an adaptation of one I have in an old Better Homes and Gardens cookbook.  I also use only whole-wheat flour and try to skim some of the fat (though not all, in order to keep a nice degree of moistness).

I buy my Xylitol online.  Some bigger cities might have natural/health food stores that sell it in the store, but nothing near me.  I pay about $25 per 5 pound bag, so shop around. And don't let the dried beans throw you - put them on the stove first, bring to a boil, let sit, and assemble the other ingredients while they stand. The pre-cooking and draining removes the volatile sugars that cause gas. 			<description>I tasted these first at a Saturday Farmers' Market at Stellenbosch (near Cape Town). The lady who sold them had several types of mushrooms on her skewers and grilled them over coals -- so use as many types of mushrooms as you can get -- or one type only, they'll still be good! Having enjoyed them once again at the Market, I imitated them, but I think my marinade is better than hers!! Quick and easy, and grill along with the meat. On hot coals or charcoal this takes only a few minutes -- do not try and get them to be soft, as they'll break up. Put them on with the meat, and turn them gently with tongs, as they shrink and can slide off the skewers easily. If they catch here and there, no matter. It was the first use of our version of Sherry Peppers (habaneros, cinnamon sticks, allspice berries, black peppercorns in dry sherry) - turned out mighty well. I subbed hot pepper  &amp;amp; dry sherry into this recipe as Bermuda Sherry Pepper is hard to come by. The squash cooked down to a beautiful thick orange base that did not need pureeing - the carrot bits were soft too but added a bit of texture which was appealing. Keeps well for reheating in microwave  without separating too. Posting at request of DN who wants the recipe after tasting. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. I've also used vanilla yogurt and it adds a soft variation more for a dessert type muffin.

Also try topping with cream cheese icing (check my recipe I posted!).  Sometimes I even add a little cinnamon, ginger, etc or a mix of holiday spices to the icing.
