			<description>Found on CBC's website. Looks delicious, I can't wait to try it! 

This is simply a spectacular cake - moist and light with spiced pumpkin flavour and sweet bites of coconut and pineapple.

In addition, it is a snap to make. It requires two nine-inch cake pans to make the layers, but the cake itself can be mixed together with a rubber spatula and bowl. If all the cake ingredients are pre-measured and the cake pans prepared, this can be a fun kitchen project to do with children, especially since it can be made ahead and frozen.

			<description>The recipe is from Nestle (I'm not taking credit for it) and it was sooo good that I had to post it here for safe-keeping. It originally called for vegetable oil which I subbed with applesauce as I do with all my baked goods to cut calories and I tweaked a few other things. This is perfect to make when you have only a little bit of pumpkin left! A little goes a long way for this recipe. NOTE: I just modified this recipe because I made it again, and used 1 oz Baker's bittersweet choclate instead of cocoa powder. Came out so much better! Sweeter and creamier. There are few foods in the world more closely associated with holiday celebrations than pumpkin pie. During the winter you can find them in every grocery store and supermarket, but if youre having people over, wouldnt you prefer to have your house smelling heavenly? And if youre going somewhere, wouldnt you rather bring a pie you baked yourself? Luckily, pumpkin pie is one of the fastest and easiest kinds to make from scratch. 

So If youre really ambitious, you could cut your trimmed scraps of pastry into tiny leaves, with veins made gently with the tip of a sharp knife, bake them separately on a cookie sheet and then lay them on top of the baked pie.

Some people are under the misconception that fresh pumpkin is better than canned for making pie  it isnt. Using canned pumpkin pur&amp;eacute;e is infinitely easier, and it contains 20 times the beta carotene of fresh pumpkin!

This cake freezes beautifully, just allow the cake to defrost completely before filling and frosting the layers. Not really a blondie by my standards, but it passes off as an interesting bar-type dessert. PLEASE NOTE: Because most people are not really used to tasting molasses, it may take a few bites to fall in love with this recipe. I did not like it at all when I first tried it. But, after giving it a second bite, I found I can't get enough of it. This seemed to happen with EVERYONE who tried it. So, please, before giving an unhappy review, try it again. If you find that the molasses is just too much to handle, try cutting the topping ingredients in half. It really does make a lot of topping as it is. Found the original in The Washington Post who attributed the Ghirardelli Chocolate Cookbook. In homage, consider using Ghirardelli chocolate for this recipe. Whatever chocolate you use, use block chocolate, not morsels. ****dough needs 30 to 60 minute minimum chill in the fridge (good for making the day before)**** These turned out to be the star on the Christmas platters.  Several folks would not believe these were not purchased! They are that good with bittersweet chocolate &amp;amp; about 3+ teaspoons orange zest. I am imagining this dipped in bittersweet chocolate (toes curling in anticipation LOL!)... Found this gem in The Washington Post who adapted it from a Jayne Sutton recipe in &amp;quot;Cookies Unlimited,&amp;quot; by Nick Malgieri. Make room on the platters, these little babies are coming on board! Pssst!  Super easy to make too!  based on the review I made some chnges when I got to this recipe today. They turned out fluffy &amp;amp; chewy (&amp;amp; ORANGE!). I put my changes in parentheses so the original recipe is still here too. I suspect letting the mix sit for an hour would help if using 2 eggs. BTW - I recommend NEVER buying the Hiram Walker's Pumpkin Spice Brandy - undrinkable in anything but oddly enough worked well here. Go figure. 			<description>This recipe makes two (2) pie crusts, and freezes VERY well.  This recipe can be made by hand, or using a food processor.  (I make mine by hand since I do not own one).  Please make sure not to overprocess the ingredients, as this will result in a very tough crust, not tender and flaky as it should be!  The key to a flaky crust is to have all the ingredients COLD when you start.  I like to put everything (flour and all) in the freezer for up to 30 minutes before I start. You may also use 1 cup of vegetable shortning, or 1 cup of non-dairy butter, instead of 1/2 cup of each. 			<description>I included them on my Christmas cookie platters this year, and everyone made a point of telling me how good they were.  I found the recipe on the web.  The raisins were my idea.  Dried cranberries would be as good, if not much, much better.  Or leave them out completely.  Both light and dark brown sugar work beautifully, although I think I like the dark brown sugar version just a tiny tad more. I used good-quality white chocolate chips mixed with about 1/2 teaspoon of shortening for the drizzle.  And if you can, use freshly ground nutmeg.  Also, you can use up to 3/4 cup raisins or dried cranberries.  Any way you try it, I think you'll love them. 			<description>This is my great-grandmother's apple pie recipe. It has a delicious crumble topping and just enough spice. The pie is better (obviously) with a home-made bottom crust. It's really not that hard and you can make it a week ahead of time and roll it out when you need it.
