Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg. Delicious whether served warm or cold with a sprinkle of cinnamon on top. Also, if prepared ahead, rice pudding makes a quick breakfast in case you're too much in a hurry to make oatmeal. -- posted by Rachael Potter

Grandma Phyllis' Holiday Cranberry Salad

My grandma made this cranberry dish for every holiday dinner and it's one of my fondest memories. It has just enough sweet to balance out the tartness of the cranberries. It's a great dish if you're looking for a new way to include cranberries in your Thanksgiving meal. (She sometimes put in walnuts or pecans for a little extra crunch.)
Crunchy Crust Peach Cobbler

I was looking for peach cobbler recipe that was a bit different and found this one at TOH. Dh ended up making this so that speaks to the ease of the recipe.
Fru... Fru... Fruit Salad!

As a child, I remember my grandmother making this salad for me. I do not 100% know the whole recipe but this is all I could remember. I love this salad because i never liked eating fruits when I was little. This is a salad that even a fruit hater like me would learn to love fruits. ENJOY! (:

[ BASICALLY... This recipe you could use any fruits but the ingredients I put down is what i usually put in my salad. Sometimes my grandmother would put some cooked shrimp inside and it turns out amazing! ] -- posted by BOOMBAMBONBON!

Apple Butter

Apple butter may be the highest use of the apple, especially some kinds of apples! This recipe works well with mealy, not-too-sweet "cooking apples," such as White Winter Pearmain, which we used. You may want to back off on the sugar, especially if boiling in apple juice. My mom and I started with a standard recipe and adjusted to taste. Note: Requires a food mill and a blender. Terrific on vanilla ice cream. -- posted by California Canner

I used peach Jell-O and diced up canned peaches. The kids loved it.

Creamy Coconut and Rum Baked Pineapple

I came up with this as a solution to leftover coconut milk and a fresh pineapple. And even on Weight Watchers, it was worth saving points for this dessert. The whole recipe has a total of 8 points. The rum for this dessert should be golden- a light rum will not produce the same depth of flavour. Number of servings will depend on the size of pineapple used- increase the sauce if using a large pineapple. -- posted by Shuzbud

You will love these for Christmas. My dad taught me this recipe, if I can do it (I have lousy hands...lol), you can do it. How did I get the sprinkles and dragées to stick? I used a thin coating of brown rice syrup that I painted on with a small brush (brown rice syrup is a liquid sweetener made from brown rice, that is just about half as sweet as sugar). Serving size really depends on how big or small you make them, I put 20 as an estimate.
Cantaloupe and Blueberries With Fresh Strawberry Sauce

Source: Anne Lindsay's New Light Cooking
This dessert is best made when fresh local berries are available.
It looks especially pretty if you garnish each serving with a strawberry fan.
To make the fans simply slice strawberry from tip almost but not completely through, then fan out slices. -- posted by Dreamer in Ontario

A Trifle Decadent

This delightful, low-cal trifle comes from Canadian Homemakers Magazine /2004. Thickened yogurt and angel food cake replace whipped cream and pound cake to make a luscious light trifle. Berries can be frozen or fresh. Garnish with fresh berries and some mint leaf for a pretty presentation.
The custard part can be made ahead of time and yogurt must be drained of it's liquid ahead of time -- posted by Inverchef
