Creamy Strawberry Stuff

A few years ago I made a cold peach soup recipe. It was okay as soup, but was amazing as a topping for angel food cake. Since my husband isn't crazy about peaches, I thought I'd try other fruits. Here's what I came up with. With the strawberries, it tastes great on chocolate angel food cake with a dollop of whipped cream. -- posted by Katie's Mom

Apple and Cinnamon Sponge Pudding

From a mag I took a copy but forgot to note which mag. Times are in accordance with recipe directions. They recommend to use 1 x 800 grams of can pie apples (in place of granny smiths) and microwave on high for 2 minutes, then top with sponge mixture (fruit must be hot when topping with sponge, or sponge will not rise during cooking. Would also add cinnamon to canned apple if not already done so by the manufacturer. Serve with custard or ice-cream. IMPORTANT NOTE - prepare sponge mix while apple is cooking (apple mix needs to be hot). -- posted by I'mPat

Coffee Granita

Very refreshing light summer dessert! Original recipe comes from Alton Brown, however I found it a bit too sweet so adjusted the sugar down a tad. Suggest tasting the coffee before freezing and adjust the sweetness to fit your own personal taste. Also note that the scraping with a fork may scar your pan, so don't use your favorite cake pan. -- posted by Galley Wench

Wartime Lemon Pie

I found this recipe on an "Old Time" recipe site. It had zillions of old recipes, some as old as the 1800's. This sounded good and I made it. Very simple (it only has 5 ingredients) and still has the great taste of lemon ppie that everybody loves. I hate to see these old time recipes disappear!!! Cooking time does not reflect time for baking pie shell ahead of time. -- posted by OceanLuvinGranny

Sour Cream Peach Pie

This recipe is from Farm Journal's Complete Pie Cookbook. I purchased the book in 1970 when I moved into my first apartment after college. In 1972 I made this for my husband and it quickly became his birthday dessert. I just made this pie for friends that came to visit from the State of Washington and they loved it too. Can be made with canned peaches BUT I only use fresh! I make the pie crust the day before and have it chilling in the refrigerator ready to be rolled out. -- posted by Kathy in Dearborn

This recipe is from The Culinary Institute of America's Cooking at Home with The Culinary Institute of America, Here's what they say," Also known as granité, this frozen dessert is based on a few simple ingredients and a minimal amount of equipment. Its distinctively flaky and granular texture is achieved through a unique, yet simple, freezing technique made easily at home. Often served to cleanse the palate, granitas also supply a subtle ending to a decadent meal." -- posted by Sharon123

Sheila's Apple Pie

I could make this pie in my sleep, I have done it so many times! It started out when my son was small and we used to go apple picking. I had to use up all those apples, so I made pies and gave them away. Suddenly, everyone else decided to go apple picking, too, and would bring me their apples to turn into pies! It's just a basic, traditional recipe but it is delicious and homey. Note: I will tell you that my preference is for Cortland apples, and it ends up being about 2-1/2 lbs. usually. -- posted by JackieOhNo!

Peaches in Muscat from Nigella

One of the most simple summer desserts, peaches macerated in the sweet wine muscat and served in a glass if you like or a bowl. 2 ingredients with a 3rd optional, nigella lawson does it again. I suggest checking out the picture at http://www.cookstr.com/recipes/peaches-in-muscat for a serving suggestion. time does not include refridgeration time but it can be 1 - 6 hours if you wish to get your dessert out of the way early. Otherwise you can, as nigella suggests also put a plate of ripe peaches and bottle of muscat on the table -- posted by MarraMamba

Silly Easy Chocolate Creme De Menthe Pudding

I was making up a box of sugar free pudding and spotted the bottle of creme de menthe on the shelf.
Orange Granita in Orange Cups

One time when my son and I were shopping at Costco, we saw these sorbets served in citrus and coconut cups. My son and I decided to try this with some granita we had made the previous weekend.

This recipe is so much fun! It is simple, healthy, light, and most importantly...a blast for the kids.
Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Ny Times Carrot Cookies With Orange Icing

This recipe is from The New York Times Jewish Cookbook. When my family asked what was baking, their reaction to the idea of carrot cookies was decidedly unenthusiastic. However, after tasting the cookies, their opinion greatly improved and the cookies quickly disappeared! I veganized the recipe by omitting the egg and using Ener-G egg replacer, and no one guessed they were vegan. They are a cakey cookie with bits of carrot throughout, quite colorful and tasty. -- posted by mangomom

Berry Yoghurt Smoothie

I got this recipe from Sarah Owen's book "The Top 100 juices", published by Lifetime Distributers, Castle Hill, Australia.
Sarah Owen says "The super-nutrient vitamin C is needed for more than 300 diferent processes in the body, but it is easily wiped out by smoking, pollution and stress. Found in abundance in berries, vitamin C and other antioxidants help to quash the damaging free radicals that are associated with many illnesses."
The original recipe calls for natural bio yoghurt to be used, but any yoghurt will do.
This makes a large amount of smoothie, and if you're making it just for yourself, I'ld recommend halving it.
I hope you enjoy this healthy - but still tasty - smoothie :) -- posted by TALIA #3

Nickey’s Strawberry-Applesauce Jell-O Ring

This is my favorite way to make jell-o for office parties and when entertaining. Because you have to wait between layers for the jell-o to set, I usually start it a day or two before I need it ... I do one layer before going to bed (or before leaving for work) then the second layer when I get up or whenever I have time like after work the next day.

I usually have a little extra mix left over from layer two. I just put it in a small container and enjoy it for a snack.

You will need a jell-o ring mold to make this as written but you can use anything you want to like little custard cups, etc.

Water comes to a very fast boil so it takes almost no time at all except for the refrigeration time. The time posted does not include refrigeration time. Your number of servings will depend on how big you cut your slices. -- posted by marisk

I whipped this recipe together the other day when I finally got tired of buying ready-made tapioca pudding! Kolobok (kuh-luh-bOck) is a dough ball from a Russian fairy tale. These fried gems are fun for kids, tasty calcium for adults. To be clear, I wouldn't feed this to my toddler because of the fried aspect, but I loved them when I was little! -- posted by Lighty

It's apple time again! I always love to make applesauce at this time of the year and I like to experiment different ways of making it. This year, I wanted to bake it. I usually strictly use only apples, but I've had the bottom of a blueberry honey jar lying in my pantry forever and the honey's now all crystallized.
Sensational Rice Custard Pudding

This is a very old recipe that was my husband's grandmother's own creation. She was well known for her cooking and baking. I have been making this for over 40 years and always get raving reviews. Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings! For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice. Never use instant rice.

You may wish to use less sugar as this is a very sweet custard pudding, due to the condensed milk. I hope this becomes a favorite of your family too! -- posted by Debaylady

Caramel Apple Pie Filling (Oamc)

This is a recipe that my husband came up with when we had a lot of apples after apple picking several years ago. It has become a family favorite and one that we look forward to making after what has become a fun annual family outing at a beautiful orchard. We like using a combination of at least two or three varieties of apples for flavor and texture. Our favorite combination is Macintosh, Jonagold, and Granny Smith. I double or triple this recipe to can or freeze to use later in pies, over ice cream, on my oatmeal, or straight up, but it is so good it doesn't last long. -- posted by UrbanDesiMommy
