Lemony Rice Pudding

This nice twist on the usual rice pudding comes from the 2001 cookbook, Luscious Lemon Desserts.
Rhubarb Crumble

I planted five rhubarb plants in the garden in 2003. Then, I found this recipe comes from "Supercook's supersavers cookbook" (1980). The favour of the dessert is nice. However, we only have it as a treat a couple of time per year as my husband needs to lose weight. I normally use half apple, half rhubarb as I found the original recipe a bit too sharp for me. We also pre-heat the rhubarb mixture before spoon it into the pie dish. -- posted by Sharis2006

South African Style Lemon Meringue Pie

My own variation on the very popular South African style of Lemon Meringue Pie. Has a biscuit base, delicious tart lemon filling and fluffy meringue. I worked out the recipe based on others I'd found and trying to approximate the pie I remembered from my childhood!

Can be made either as two big pies (shallow 20cm, or in theory one deep pie with lots of meringue!) or a series of smaller ones in muffin or cupcake cases. -- posted by Meri Williams

From Mustards Grill in Napa. As far as timing goes, you need to prepare pie crust dough, roll it out, line the pan, and freeze it ahead of time. Then figure on 50 minutes to prebake the crust. The filling will go directly into the prebaked crust and bake for another 35 to 40 minutes. -- posted by Brookelynne26

Magnolia Bakery's Lemon Curd Filling

This is a very tart, lemony and sweet curd. The directions given in the Magnolia Bakery Cookbook which I recently bought, gives very shallow directions with just enough information to make the recipe. It was my first time making custard/curd and it was surprisingly good. I hope you like it. Note: it is called a filling because it can be used as a cake filling but it is also wonderful on toast or scones for a sweet breakfast or teatime treat.
This recipe yields 3 1/2 cups or enough filling for 1 two or three layer 9-inch cake. -- posted by Baking Latina Girl

Lemon-Blueberry Cheesecake Parfaits

Pastry Chef Maggie Leung's reimagined cheesecake is super-versatile: It's three components-the creamy, tangy cheesecake custard, the crunchy cornmeal shortbread and the fresh blueberry compote - are all fantastic together, but each can be used in a lots of other ways. My best-friend Judy decided she wanted to entertain outside this summer and she gave me the tedious (NOT!!) task of looking for a WOW dessert but understated and we both agree that this is the one. This is not the only dessert she is serving so we want to choose with much thought to her other desserts, as well. Food&Wine Magazine, August 2009 edition.Just between chilling and cooling time it takes about 6 hrs, that is if it is all done in one day - the shortbread can be made up to two days ahead of time & the assembled parfaits can be refrigerated for up to 1 day. ;) -- posted by Manami

Italian Granita Lemon Ice Cream

Many people think that Lemon Granita is similar to a Lemon sorbet.
There is a main difference which is the fact that Lemon Granita has no eggs, no milk and no cream in it. Just lemon juice, lemon zest, water and sugar!
In Southern Italy we have a granita for breakfast, aperitif, lunch and as an after siesta drink.
The best lemon Granita is made with little sugar and a grated lemon zest in it!
For breakfast we would have a Coffee Granita with a croissant (the Sicilian way); for aperitif the Lemon Granita; after the siesta the almond granita.
There are many flavors you can choose: lemon, mint, coffee, strawberry, almond, kiwi, mandarin, prickly pears. -- posted by stile mediterraneo

Lemon Mousse Squares (Diabetic)

I found this in a Diabetic cookbook and were so good! They were like a light cheesecake, but even better!! The only change from the listed ingredients and what I used was they had Sugar Free Lemon Yogurt listed and I couldn't find that anywhere, but I did find Dannon Light and Fit Carb and Sugar Control Vanilla Cream Yogurt. I used that it may have made them even better!! Also you can substitute Splenda for the Sugar. I tried to write the recipe that way, but it wouldn't let me.
I'm not going to include the chilling times, just the time it takes for you to actually be doing something! -- posted by LDSMom128

Lemon Fudge

A lovely sweet & tart recipe for lemon fudge I found online, posted by Elizabeth LaBau. For me, boiling the sugar & milk mixture for 6 minutes did not result in as firm a fudge as I'd like, but still, it was great, delicious fudge that also had the perfect consistency - as long as I kept it in the fridge. ;-) I'll try a candy thermometer the next time to see if boiling the mixture to soft ball stage doesn't do the trick. -- posted by stormylee

Easy Lemon Self Saucing Pudding

Been looking for the lemon delicious recipe I cooked many years ago but somewhere along lost the clipping (before ZAAR time) and this seems to come close to it though called a pudding (maybe searching in the wrong area) but it was good though sweeter than I remember (would need to work on the sugar content), certainly don't remember having the sprinkle sugar on top as per this recipe but I believe that what gives it its crispy top in this recipe. Serving suggestion was 4 but I think could be easily stretched to 6 served with cream and or icecream. i found that 1 lemon gave me the rind and juiced that but needed to juice a second lemon to get the full 1/2 cup (got a little more than that and added the lot). -- posted by I'mPat

Rab Torte (Rapska Torta)

It is believed that Rab Torte was served for the first time in 1177. when Pope Alexander III, escorted by his ten galleys, was overtaken by a storm as he was crossing the Adriatic, and took cover under the cliffs and in the harbors of Croatian island Rab (and town), and thus by a quirk of fate arrived in Rab just after the renovation of the Cathedral of the Assumption, which he consecrated on the occasion. In order to enhance this unexpected ceremony and to express their respect, nuns of the Benedict order served him cake on the host – Rab cake. The original recipe for the first Rab cake is kept in the archives of the Benedictine abbey of St. Andrew on the southern coast of island Rab. I am posting the recipe of madam Dunja from “Vilma Patisserie” from town Rab. -- posted by nitko

Lemoniest Lemon Squares

These are the best lemon bars I've ever tried. They have a fabulously buttery crust, a not too sweet or too tart curd-like lemony filling, and a thin chewy top. The recipe is from San Francisco pastry chef Emily Luchetti's cookbook, "Classic Stars Desserts". With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

NOTE: The squares can be made a day in advance, covered and refrigerated. Bring to room temperature before serving. Dust with confectioner's sugar before serving. -- posted by blucoat
