			<description>My uncle was a torturer of young children. He was in high school when my brothers and cousins and I were in grammar school. He would tell us that tapioca pudding was made from frog's eyes and none of us would eat it so he ate the entire bowl himself.  He also told us that Jell-o was made from pony bones to scare us from eating it. She notes that anise or fennel can be used in place of the cinnamon, but recommends using only a single pure flavor note, as that's the way her nonna would have liked it. It's described as low in fat, sugar and fuss, doesn't get any easier than that and would be a good desert for my Mom who is a diabetic.  Diabetic exchanges reported as 1 starch, 1 fruit and 1 fat.  Finally got around to making this and for a light version it's very good, fluffy and tart and pretty simple.  A nice treat for those warm summer evenings. You can find it in the natural section most likely and it works like cornstarch as a thickener but healthier for you than cornstarch. I am going to try making a pie with this mixture and give it a pecan pie shell with crushed pecans that have been browned in butter and cinnamon. I like to let it chill for a couple of hours or even better over night. Depends on how much of a hurry you are to eat it :) Remember this is a simple way to make a dessert from berries. Just drizzle or coat berries and serve. Delicious!!! And very good for you too. The coconut is anti-microbial, antifungal...etc.. 			<description>My late dad was a fabulous cook.  My mouth waters when I think about his concoctions.  He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl.  Fortunately it is dairy free so it works well for my dairy allergic son.  My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking.  The batter can last in the fridge for up to 24 hours. This is best served the day or day after it's made as it dries out relatively quickly. Left overs may be dried completely and crumbled to be used in place of graham cracker crumbs or slices left whole to be used to make chocolate french toast trifle or tiramisu. So, to my great pleasure, there is no willpower needed here! I am very proud of how it came out. It is very moist and the buckwheat gives it a nice flavour. I've been low-sugar/sugar-free for several months now and really wanted this cake, so I reduced the oil, substituted Splenda for sugar, and used whole wheat flour. The icing option is high-fat but really tastes great, even with Splenda in it (and I haaate Splenda's aftertaste!).  I don't recommend making substitutions for this recipe, as the nuts and pineapple are crucial for the flavor and texture of this cake. The only change from the listed ingredients and what I used was they had Sugar Free Lemon Yogurt listed and I couldn't find that anywhere, but I did find Dannon Light and Fit Carb and Sugar Control Vanilla Cream Yogurt. I used that it may have made them even better!! Also you can substitute Splenda for the Sugar. I tried to write the recipe that way, but it wouldn't let me.

Especially if it's one of those where the meal is light but hors d'oeuvres are heavy. And can you believe this awesome treat is healthy and vegan? I couldn't! For some ideas, try a mix of Chinese red dates (I used 100%) with traditional dates. Put in a dash of ground pistachio and/or cardamom, how about a teensy bit of honey? There's a lot more I plan on doing with that huge thing of almonds I bought at BJ's.

			<description>Completely sugar free dessert!  I've been experimenting with a sweetener called &amp;quot;Xylitol&amp;quot; that I buy online and will gradually post recipes with my successful results.  

I promise never to post a recipe that hasn't passed the &amp;quot;Kid Test&amp;quot;.  I have four kids who are very, very finicky eaters.  My kids CAN tell that these aren't made from real sugar - mostly because I don't have real sugar in my house anymore.  But they still love these.  I have also served these to friends without anyone knowing they weren't &amp;quot;normal&amp;quot; pumpkin bars.

I started looking for a sugar substitute when a dear friend had surgery and became completely intolerant to any processed sugar.  Splenda doesn't agree with me and I always prefer 'natural' options when possible.  Xylitol IS more expensive than sugar, so experimentation is frustrating sometimes.  I hope you will enjoy my successes without having to endure the waste I've had.  It has 40% less calories than sugar, 75% less carbs, and has a glycemic index of 7 (compared to sugar at 68 and corn syrup at 100) and my friend can enjoy sweets once again!

The key to using this in place of sugar is to MELT the xylitol before adding it to the recipes.  I just melt mine in my pyrex measuring bowl in the microwave.  I have found it's very important to MELT the Xylitol but not BOIL or otherwise over-heat it, because it does alter it's consistency like sugar.  If you heat it too long, when it cools, it becomes rock hard.  (I'm still figuring out how to use this to my advantage in fudge and caramels - I'll post when I get a successful outcome.)

This pumpkin bar recipe is an adaptation of one I have in an old Better Homes and Gardens cookbook.  I also use only whole-wheat flour and try to skim some of the fat (though not all, in order to keep a nice degree of moistness).

I buy my Xylitol online.  Some bigger cities might have natural/health food stores that sell it in the store, but nothing near me.  I pay about $25 per 5 pound bag, so shop around.
