Tempura Cheesecake

A deep fried cheesecake. Crunchy on the outside and melted sweetness inside. The key to this recipe is getting the tempura to be crispy enough. I have tried many times to get my tempura as crispy as the Japanese restaurants, and trust me, the egg/flour/water recipe does not work. So I have listed several suggestions below to help you achieve maximum crispiness. If you are unable to obtain wheat flour or rice flour, you can substitute those portions with regular flour, however some of the crispiness may be compromised. The soda water can also be substituted with ice water. Another option you have is to use a frying premix. However, some of those mixes are not good. I have tried the Hime Tempura Batter Mix that comes in a yellow carton box and it didn't do well. The ones I do recommend are CJ's Frying Mix, which is a Korean brand that comes in a plastic sealed bag, McCormick Tempura Seafood Batter Mix and McCormick Golden Dipt Tempura Batter Mix. These contain wheat and rice flour which are key ingredients. -- posted by Romi

Three Cities of Spain Cheesecake With Alternate Topping

A creamy style cheesecake, originally from Santa Fe's Three Cities of Spain coffee house. Everything about that recipe is the same, except for the topping which I altered. Also, my baking instructions are slightly different as well. I made this for my brother's birthday this year and it was devoured. Very light, yet decadent. -- posted by Chef Acosta

Frozen Chocolate Cheesecake

This was one of my mom's recipes. I believe she originally got it from a Buffalo, NY radio station. She wrote "really smooth texture" in the margin of the page. I am thinking she enjoyed it. The original recipe calls for a graham or cookie crumb crust baked in a 9" springform pan, but I am sure you can use a pre-made deep dish graham crust. NOTE: Cooking time does not include time to make the graham crust (if you decide to do so) OR freezing time. -- posted by Sweet PQ?

Should Be Sinful New York Cheesecake

... or as my husband likes to call it Thin City Cheesecake. This is so good that everyone who has tried it has asked for the recipe. I have made this as fat free as possible because you still need a little goodness for it to be cheesecake and worth it. This recipe includes gotta have cheesecake tips, if you know how to follow directions, you can't fail, the extra time left in the oven after baking is a must.
Raspberry Cheesecake Ice Cream (For Electrice Ice Cream Maker)

I combined two different recipes, adjusting as needed, to create this recipe. It is the perfect sweetness and creaminess, in my opinion. Not overly cheesy, you can add more cream cheese if you like a cheesier flavor. Received rave reviews from all who tried it, and it was really easy to make! No raw eggs needed.

Greensboro Sour Cream Cheesecake

I learned this recipe in Greensboro NC, hence the name. I've been told it's popular in Texas too. It's a birthday favorite at our house.
It's what cheesecake cupcakes recipe # 169510 is based on.
You can substitute low-fat cream cheese and sour cream and the taste & texture are still good.
Delicious with fresh peach slices under the berrry glaze.
Cooking & prep time do not include cooling overnight. -- posted by sofie #2

Fried Cheesecake Bites (Aka the Ultimate Comfort Food)

A crispy but tender outside with a slightly warm and gooey citrus cheesecake filling. I serve these with blueberry syrup on the side for dipping. I created this recipe for a dinner party I was having and wanted a unique dessert. These are crowd friendly and totally comfort food! I would encourage you to even make your own cheesecake with my flavorings and then use that as your cheesecake base. I'm a food purist and would have loved to do that, but time was not on my side so I had to settle for a ready made cheesecake filling (which I made flavor enhancements to), and this is that recipe. Either way, you are sure to enjoy these amazing little balls of deliciousness! -- posted by Dans La Lune

Crustless "lite" Traditional Cheesecake

Cheesecake open to variations, I lightened it up a bit. It's lighter and fluffier than traditional cheesecake, and you don't have to feel as guilty indulging. :D I like to add 1/2 tsp vanilla for traditional flavor or 3/4 tsp of a different extract to give it another flavor, like pineapple or peppermint. NOTE: Prep time does not include cooling times. -- posted by the80srule

Vegan Spiced Pumpkin Cheesecake

The best vegan adaptation of a cheesecake I've had. I avoid any vegan cheesecakes that call for tofu because the texture turns out funky, and tastes, well, not like cheesecake should taste like. This variation is great for the holiday season! You can make your own crust or find a separate recipe for a cheesecake crust, but I wanted to save time so I just used the pre-made crusts. I would recommend the bigger "extra serving" pie crust because this yields quite a bit of filling. -- posted by J.J.
