			<description>This wonderful cake recipe is an adapted one from the Magnolia Bakery Cookbook. The penuche fudge frosting is an old Southern recipe. Makes a very attractive presentation, especially when the cake plate is adorned with beautiful autumn leaves. This cake freezes beautifully, just allow the cake to defrost completely before filling and frosting the layers. 			<description>This is a copycat recipe from another one I saw on here-- but not a duplicate, because this is intended to be made for frosting than for bonbons (though it certainly could be used that way.) By &amp;quot;extract&amp;quot;, vanilla extract is the most commonly used one for traditional buttercream flavor. But this is a versatile recipe: you want almond-y buttercream? Use almond extract. Fruity buttercream? Try orange, strawberry, or pineapple extract. Why not chocolate extract or peppermint extract! Chocolate and vanilla extracts together taste great too. 			<description>I got this from my Grandma who got it from my Aunt Phyllis. It is incredibly easy but does pretty much require a stand mixer or a person with stamina. It is a very light whipped satin icing (not very sweet) and we love it best on chocolate cake but it frosts anything well. Be patient and whip it for the full 20 minutes or it will not set. To make this a chocolate whipped icing use unsweetened cocoa powder. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Try some fun variations: add chocolate chips, mini-marshmallows and/or graham cracker crumbs into batter.  Mix all ingredients and stuff center with chocolate pudding.  

For a lovely presentation:  (I usually choose several and mix it up with each batch for a fun variety)
- top with chocolate chips, mini marshmallows and/or a single graham cracker chunk
- one large marshmallow, slide a single graham cracker chunk angled from the side and put a chocolate chip on the opposite.
- one hershey kiss, graham cracker chunk
- one hershey kiss or large marshmallow, sprinkle with graham cracker crumbs

Using cake flour is a must.  See Lennie's recipe #87689.  Be sure to properly measure your flour by lightly spooning into a measure cup until overflowing then using the backside of a knife to level off.  Too little flour will produce a callapsed cake and too much will have wet spots with dense layers.  Cake layers freezeable.

			<description>No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy!
