Lemon Velvet Cake Made With Splenda

Once in a while, we still have to have a rich, tasty, dessert
even when we're diabetic or dieting. This one has about 1/3 less carbs than a regular lemon velvet cake. It's still a little high if you're watching your carbs so mind your serving sizes. It's NOT low carb but it is significantly lower than regular. -- posted by Realtor by day, Chef by night

Garth Brook's German Chocolate Cake With Coconut Frosting

Trisha Yearwood says every February, when it's Garth Brooks birthday, she makes this beautiful and delicious cake for him. She says last fall, Garth made a sad statement like only three more months until you make me that awesome German chocolate cake again! She made the cake the next day. She doubles the frosting recipe to frost the entire cake, because Garth likes extra frosting, but one recipe will frost the tops of the layers and do the trick just fine- unless you are Garth! If you have some frosting left over, it's good spread on graham cracker or on brownies. Okay, it's also good right off the spoon! Enjoy! -- posted by Sharon123

Simple Flourless Chocolate and Chestnut Truffle Cake With Fresh

This is absolutely DIVINE! The texture is smooth and somewhere between a chocolate cake a chocolate truffle. If you love chocolate, you'll love this as its just out of this world. A good substitute for those who don't like Christmas pudding, though I bet everyone will go off Christmas pudding once they taste this! Double or Triple the quantities for a larger party, a small slice is usually enough as its very rich. The brandy is optional and comes through more as a subtle flavour than anything else but feel free to add more to the cream if you prefer a stronger flavour (I do). If I make this during the summer I would leave out the brandy. Also this cake needs to be made at least a day in advance and it freezes well too. -- posted by robd16

Chocolate Chocolate Chip Cake

My nana used to make this cake and now it's a favorite of my family and friends. What makes this cake unique is it starts with a box of yellow cake mix. It's got just the right amount of chocolate so it's not overly sweet. Additional chocolate chips can be added for serious chocolate lovers. It's great served warm as the chocolate is gooey but I think it gets even better the next day. Super easy recipe that starts with a mix but with a few additions it tastes like it was made from scratch. -- posted by Twinsmommy in WA

From Manifest Vegan.

This is a great recipe to play around with. I’ll just give you the gist and let you decide the details. This cake works great with regular sugar or brown sugar, margarine, oil, or shortening, raisins or other dried fruit, nuts or no nuts, whatever spices you choose…terrifically endless options. Even the pan size shouldn’t matter too much- just adjust your cooking time accordingly. -- posted by annh53182

Connie”s Apple Cake Recipe

My mom used to make this during the holidays. A very long time family tradition, been around for many generations. This is a very sweet, rich dessert, moist and a bit crumbly because of the chunks of apples and pecans. Not the 'normal' birthday cake-like texture. Great with a big glass of milk or hot cup of coffee. The mix ends up being very thick and a little stiff to mix, but don't worry... it is totally worth it. Warning: This apple cake is addictive! Thanks Mom :) -- posted by Chef #549456

Spice Cake With Bourbon-Pecan Frosting

Moist cake with sweet and buttery frosting...

Tweak the ingredients to your liking. Try it with variations in the spices, extracts, and liquor: such as cayenne, ginger, almond extract, spiced dark rum, cointreau, irish cream...

Also try glazing the pecans with carmelization, candying, or even a nice orange spice. For an easier variation, add some cayenne and brown sugar or some of the other spices mentioned earlier before toasting the pecans. Then sprinkle them atop after icing, to keep the flavors more independent of each other. -- posted by GoldsmithLissa

From my grandma....my grandpa's favorite, which is easy to believe because it's delicious! Apricot pie filling spread on the bottom, followed by white cake, and a coconut pecan topping.
*Note: Make sure the cake mix you use is for 8x8 or 9x9 inch baking dish. If you try to make this with a 9x13 inch pan, there will not be enough pie filling to cover the bottom. -- posted by The Wallaces
