			<description>I can't take any credit for this, and I'm sure this recipe has been made over and over, but, I always like to pass it on. At work, I used to take batches in every Christmas, and I was surprised to see how many people had never tried this simple recipe. For those who know me on Zaar, they know I DON'T like to bake and don't unless I have to. I'll bake cookies or a pie at Christmas, and I do bake these &amp;quot;TWO&amp;quot; cakes; rum and eggnog, and beer bread, but that is about the extent of it. Don't get me wrong, I can when I have to ... I just would rather cook. So I have been making this fudge for some 25 years. A simple mix of Eagle Brand Sweetened Condensed Milk and Morsels (any flavor). So, below is the basic recipe and some of my favorites. The best part is ... have fun with flavorings and added ingredients (extracts or liquors and dried fruits, nuts, coconut, etc). A quick 3 minutes in the microwave and then poured in a square 8x8 pan lined with foil or parchment and let cool. I used a thin coating of brown rice syrup that I painted on with a small brush (brown rice syrup is a liquid sweetener made from brown rice, that is just about half as sweet as sugar). Serving size really depends on how big or small you make them, I put 20 as an estimate. If you don't like coffee and want a sweet dessert kids will LOVE, use sweetened condensed milk to pour over the cake (about 2/3 of the can) and refrigerate until completely cool. If you want a party dessert adults will love, use Kaluha, about 1/2 cup. Cool whip makes a great sub for whipped cream (might even be better!) but I am trying to use less &amp;quot;fake&amp;quot; foods so I choose to do real. the cool whip holds up better if this will be around for days though! With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

			<description>No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy! That good to make me want to remember it. And we didn't keep Bisquick in my house so it was an especially great delight for me. Makes about 16-24 cookies depending on how big you make them. They may not taste as fine as pure from scratch cookies, but they still taste good and are a time-tested kid pleaser. Can sub vegetable oil or shortening for the butter but the butter tastes better.
