Another hot & spicy recipe from my husband Mondo. After much experimenting he came up with this magic mixture. This recipe gets rave reviews. If you love this recipe make sure you try the hot & spicy pickles too in my cookbook! -- posted by Monica in PA

Dry Cure Southwest Beef Jerky

This was my first experiment with dry cure jerky. It's a peppery jerky with the flavors of chili. The beef sold as "fajita meat" works perfectly for jerky; it's lean and in good-sized slices. Prep time includes seasoning the beef overnight. Serving size is approximate - how much can you eat at one time? -- posted by EdsGirlAngie

If you love to camp and enjoy the great outdoors as much as my family, here is a take along snack that is sure to please.
Spicy Apple Chips

This recipe was born out my frugal urge to redeem a big basket of very wrinkly, aging Gala Apples. I've listed the seasonings I used to add flair to this age-old method of preservation, but by all means, tells me what combos you enjoyed! The Hot Pepper Sauce (I used Tabasco) certainly added a 'kick' much appreciated in our home, but you may prefer the classical sugar-spice-and-all-things-nice variety without a touch of added heat. While this recipe was executed with a borrowed dehydrator, I would love to know people's success with the oven -- apples spread in a single layer onto a lined baking sheet and place in preheated, 300 degree F oven for 25-30 min. or at 200 degrees F for 1 to 1-1/2 hours (cooling on a wire rack as you go).... -- posted by DoubletheGarlic

Passion Strawberry Fruit Leather - Dehydrator Roll-Ups

Once you know how to plug your dehydrator in, you're limited only by your imagination regarding how many different "recipes" you can come up with for fruit leather. These simple snacks are healthy and often more convenient to eat than fresh fruit. I ziplock a batch and take it with me. Either pureed apples or applesauce makes a great inexpensive texturizer with a rather mild flavor, so I often flesh out whatever the main fruit flavor is with it. This time it's strawberries! (My friend Freya arrived on my doorstep last weekend with a HUUUUGE box of the most beautiful berries I've ever seen, so rather than to lose the last of them to age, I've gone the dehydrating route.) -- posted by Sandi (From CA)

Thai Style Red Curry Beef Jerky

Idea I had of using a Thai style red curry to make a jerky. I'm not confident on long-term storage of this recipe so would recommend keeping refrigerated and using in a week or so. Preparation time does not include the marinating time. Leaving the seeds in the chili makes it quite hot, unless you really like a fair bit of heat you should probably remove the seeds so it's more like a commercial jerky spiciness. Otherwise make sure you have a nice cold beer or two on hand ;-). -- posted by Peter J

Igor's Crackers (Raw Foods)

From Victoria Boutenko's 12 Steps to Raw Foods. I haven't tried it yet and I have to give the library book back. I read in their newsletter that they tossed some crumbs from these crackers outside for the birds and in the spring flax started growing on the spot. Now that's *live* food! -- posted by mliss29

Desert Paradise Fruit Leather

I bought a bag of raw crackers at my local health food store and thought, "I can make these" so I gave them a try and I think the finished product was pretty good. At least my DH thought they were. -- posted by Chef Joey Z.

Dried Blood Plums

Blood plums are delicious Japanese plums with bright red flesh. I usually can them, but I decided to try drying them, even though I couldn't find any instructions for doing so. Here is what I did, which was simple and produced dried plums with incredible flavor. I have included a photo sequence of the process. -- posted by ranch-girl

Igniter Jerky

The texture of jerky made from ground meat is different jerky made from a roast, but both ways are good, and I think this is a bit easier. This is a great beginner recipe if you have access to all the equipment and ingredients. -- posted by littleturtle

Almost Dad's Tofu Jerky

I adapted this recipe from one I found at tofujerky.org. One of the few cheats I would do as a veggie was eat my dad's venison jerky. With his passing, we lost the family recipe. I recreated it to the best of my memory using tofu. The marinade also makes great baked tofu. Adjust the pepper to your taste. I usually double this recipe because we love it so much. -- posted by PDX CakeGirl
