Danish Dumplings

This is my family's favorite soup dumpling. The nutmeg makes it so great. It came with my grandmother's side of the family from Denmark. She made them whenever we had chicken soup and we fought for them. -- posted by Narshmellow

Andersen's Split Pea Soup (Crock Pot Version) Copycat

This came from the Los Angeles Times via Liz at Recipegoldmine.com. It was a stove top soup, but the closest I've yet found to Anderson's which is a tradition in California. I modified it just a bit for the crock pot and made it a hair thicker to suit our tastes. You can also add bacon, ham, or ham hocks to enhance the flavor a bit. -- posted by OhMyStars!

Green Kale Soup (Grønkaalssuppe)

From Aebleskiver and More - A Sampling of Danish Recipes by Lisa Steen Riggs. Number of servings is a guestimate. Also, the recipe does not indicate what to do with the meat once you have removed it from the kettle and strained the broth. Should you add it back in? I would, but I like meaty soup. I guess it's up to you. -- posted by AB_Fan

Cold Cucumber Soup

This is a typical Swedish or Danish recipe, with the finishing touches provided by Ken Hanson from Scandia in Los Angeles. Great for the hot weather we are having right now. Chill the individual soup cups before serving! These are appetizer or 1st course sized servings. Cooking time includes cooking and chilling time. -- posted by breezermom
