			<description>This is my favorite little vanilla pound cake.  It's perfect for 2 people.  It makes a great base for strawberry shortcakes!  Top it with whipped cream and drizzle with chocolate... yum.  I have done a bunch of diferent things with this perfect little cake. It has a wonderful texture and melts in your mouth. 			<description>I'm not a chocolate fan (atleast not the kind made in the U.S.), but I LOVE peanut butter and chocolate and this hit the spot.  I found the recipe in 2007 Taste of Home Annual Recipes, and I followed as listed except I didn't have unsweetened chocolate.  Joy of Cooking said to use 3 tablespoons of unsweetened cocoa plus an additional tablespoon of butter per ounce as a substitute.  So I used 9 tablespoons of unsweetened cocoa and 3 additional tablespoons of butter which worked like a charm. 			<description>There was an o.k. recipe here on Zaar that I have worked on and changed to make these truly amazingly rich and chocolatey cupcakes. Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful. The combo of flour and cocoa may seem odd, but I like a more pronounced cocoa flavor plus I love the tender even result of cake flour, and the healthful and tender result of WWPF. I tried this recipe yesterday and it came out so moist, tender, and scrumpious.  It is not traditional but I am a southern girl at heart, so I do love my Red Velvet. I hope you enjoy!

(Recipe was originally a cake recipe.  To make as a cake bake for 30-35 minutes in two 9x 1.5- inch round greased baking pans.)

Note:  These cupcakes are light and fluffy so piping frosting on them instead of spreading generally works easier with less possibility of crumbling.

			<description>This is a gluten and dairy free version of my family's 'Jiffy tea cake' which is one of those basic cakes you can add almost anything to! It makes a smallish cake, so I usually double the mixture if making a whole cake, or just use the quantities below to make about 6 muffins.

I've given the quantities in 'cups' and by that I actually mean a tea cup that I've been using as my cooking measuring cup for the last 30 years! It doesn't really matter whether you use a metric or imperial cup as long as you use the same cup - though if you only have small eggs, I would perhaps use two. 			<description>This recipe is adopted from a recipe for Flag Cake by the Barefoot Contessa.  I made it for 4th of July 2009 and it was probably the best cake I've ever made.  I don't usually like cream cheese frosting, but this one is divine, especially with the fresh berries on top.

A few months later I found cupcakes topped with raspberries and blueberries at Star Provisions' bakery in Atlanta, and I could swear they used this same recipe, though Annie Quatrano might beg to differ.  That's what gave me the idea to make cupcakes with the Flag Cake recipe.  The cake batter includes sour cream, which makes the cake SO moist and delicious.  I've tried substituting 1/2 cup of Splenda for half a cup of the sugar in the batter and they came our great, so you could experiment with substituting Splenda for even more of the sugar.
