Corn on the Cobcake

My kids favorite dessert for summertime cookouts. It's a winner with family and friends alike. I got the recipe from Family Fun magazine and we had a blast putting this sweet treat together for a neighborhood cookout. Aside from the ingredients you should present the cupcakes using corn holders and corn plates to add that special touch. -- posted by Mommy to 4 kids

Low-Cal Banana Muffins / Cupcakes

Is it a muffin or a cupcake? Depends on which way you go: to frost, or not to frost? I opted for no frosting, and instead added a touch of decadence in the form of semi-sweet chocolate chips. A good sweet treat for the morning. I based this on a recipe from Penzeys Spices. -- posted by Chef #745305

Diet Soda Cake or Cupcakes With Frosting

The popular Diet Soda Cake! I invented a frosting for this cake that is light and creamy and really great. You can make a frosting for it if you'd like, but you really do not need it. YOU MUST STORE THIS CAKE IN THE FRIDGE ESPECIALLY IF YOU USE THE FROSTING! This cake, including the icing, freezes wonderfully! A 2"x2" piece is 2 points (approx. 100 cals and a scant 1/2g fat). The frosting is free for one serving, but is 1/2 point for 2 servings. -- posted by Humble Bee

Confetti Treats

These are SO delicious!! Kids like them because they are colorful and have M&M candies! You can make these without nuts - but if you're not allergic - try them with nuts first... the salt with the sweet is amazing! This recipe is for individual cakes using a muffin pan, but you can also make these as bars in a 9x13 pan - just cook a little longer (about 18 minutes). Enjoy! -- posted by Jennibear

I mixed a few ideas to makhttp://www.recipezaar.com/members/subm/editr2.php?sid=4664933e these cupcakes, and they went down a storm at the Findon Sheep fair in Sussex, UK. You could use what ever chocolate you can find for the head, ears and legs. I thought that they looked pretty cute with just the eyes, but you could add a red icing smile or tongue, and nostrils. You can also use a little tubes of writing icing for the white and black of the eyes. -- posted by froglet

Sprite Zero Cupcakes

I had heard about this cake from Terry and she went on and on about how easy and how good it was. She said just sprite zero and a cake mix made a great cake. I googled sprite zero cake and found a website for these cupcakes with only 2 egg whites added. I bought a white cake mix and the sprite zero and the cupcakes were wonderful. They were good without icing, but my family likes icing so I bought a can of icing and when I figured out how much went on each cupcake the cupcake was only about 170 calories. The reviewers on this recipe also recommend cherry coke zero and chocolate cake and other variations. A real treat with no oil or egg yolks. -- posted by Chef likestocook

Twit Twooo, Hooting Halloween Owls - Halloween Cupcakes/Muffins

These are GREAT fun! Bake some chocolate fairy cakes, muffins or cupcakes, decorate them and then turn them into Hooting Halloween Owls! I made these last year for a children's Halloween party, and they all loved them. The recipe is based on our British fairy cake or angel cake recipe, where the top of the baked cake or muffin is cut off to create the "wings". I have stated some sweets (candy) that are British - please use your own local sweets to decorate the owls. This is a wonderful recipe idea that I have changed and adapted from Tana Ramsay, the wife of the famous Gordon Ramsay.....she has some great family recipes, of which this is one. (Preparation time includes the time to decorate and ice them after they have been baked.) My Recipe #328085 would also be great Halloween companions for these hooting owls! -- posted by French Tart

Spooky Spider Cupcakes/Muffins for a Howling Halloween!

I JUST love these little spider cakes, when I make them, their faces make me laugh - well, I am easily pleased! Furthermore, they are VERY tasty - they have a much better flavour than NORMAL spiders I find, their legs are a little too chewy! The cake mixture is a double chocolate cake mixture - with cocoa and chocolate pieces, topped off with a chocolate butter cream. The decorations are made using Liquorice Allsorts and liquorice strings/laces or Catherine wheels as we call them in Great Britain. They are easy to make and can be frozen before you decorate them. I made these for TOTM Cooking School September 2008 - I hope you find the step-by-step photos handy when you come to bake and decorate them. An idea we had for an adult Halloween party - turn the spiders upside down so they have their legs in the air, and scatter wine corks amongst them on a plate........only joking! :-) If you fancy some wise companions for these spooky spiders, try these: Recipe #326716. -- posted by French Tart

Autumn Spice Cupcakes With Pumpkin-Spice Frosting

This is an easy, festive recipe for autumn. I made this recipe with our nursing home residents in celebration of our October birthdays. They really enjoyed the aroma of the baking cupcakes and frosting them. We inserted pretzel sticks into the center of each orange-colored frosted cupcake to make them look like little pumpkins. What fun we had! This would also be a fun children's project. Enjoy!

My sister and I used to make these when we were kids. I rediscovered the recipe a few months ago in the bottom of a drawer at my mom's and made them for my husband, who now asks for them regularly to have with his tea in the evening or his coffee in the morning. They are a cross between muffins and sugar donuts. Now I have to double this recipe every time I make them because they disappear so fast! -- posted by Annala

Pink Lemonade Cupcakes

These cupcakes are absolutely darling. I found the recipe in a cupcake cookbook a couple of years ago. They are perfect for little girl birthday parties (and even older girl birthday parties as my adult friends also love them!). They are tangy and sweet and not too dense. I often make bite-size ones in my mini cupcake pan. Reduce the baking time if making minis or they will dry out. -- posted by soursugar

My daughter's reception(age 5) classes are named after these insects, so when they had a bake sale for charity, I made these(with her help) and they went down a storm!
Magical Christmas Fairy Cakes - Christmas Fairy Cupcakes

Some recipe classics never go out of fashion and fairy cakes top the list
They are the stuff of childhood memories: just one nibble can transport you back in time and even today, no self-respecting children's birthday party would be without them. That said, why should the kids have all the fun? With just a little tweaking, fairy cakes can be turned into grown-up fare as well, perfect for a mid-morning coffee break, tea in the afternoon, packed lunch treats, OR for the Christmas tea table. The basic recipe is oh-so-simple so you can keep it plain or indulge yourself with extravagant toppings; for Christmas, I have used fondant icing snowflakes and edible sparkles/cake glitter. Some die-hard purists may omit the vanilla extract but I think fairy cakes are better with it added. Prep time includes the time it takes to decorate the fairy cakes. The edible cake sparkles and glitter is available from most good cake decorating or sugar craft shops. -- posted by French Tart

This is an adaptation of my MIL's recipe for Ho Ho Cupcakes. It is mostly from scratch, but can be simplified by substituting a can of your favorite prepared frosting for the tops of the cupcakes. But don't be late as they are usually gone soon. Your kids will love these!
Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe.

This is a moist and delicious carrot cake recipe from "Good Housekeeping". It produces a fluffy (rather than dense) cake and also makes great cupcakes (about 24). If you wanted frosted cupcakes, cut down the sugar in the cake recipe by 1/4 cup. For Cream Cheese Icing: In bowl, stir 2 oz. reduced-fat cream cheese and 1/4 c. sugar until smooth. Add 1/2 tsp milk, 1/4 tsp vanilla, and 1/2 c. more sugar; stir to a drizzling consistency. -- posted by blucoat

Glazed Lemon Cakes

This is a recipe from Everyday Food with a few tips from making them several times. The original recipe yielded 6 jumbo sized cupcakes but I've always made a dozen standard size cupcakes. They get rave reviews and are perfect for baby showers and other parties. I have made the cakes ahead of time, frozen them, thawed them out the night before the party and then glazed them the day of so the glaze stays nice. I think they taste best with Meyer lemons, but they are great with any type of lemon really. I have always used the yogurt becuase I usually have it on hand and not buttermilk. I bet it would be just as yummy with the buttermilk. -- posted by Chef #850505

Top it with whipped cream and drizzle with chocolate... yum. I have done a bunch of diferent things with this perfect little cake. It has a wonderful texture and melts in your mouth. You can easily double this but don't double the baking soda, just leave it at 1/8 teaspoon. -- posted by Realtor by day, Chef by night

Entered for safe-keeping for ZWT. From Marie Claire. This is the most popular Australian snack, a sure winner at a bake sale. And is it easy! The more traditional Lamingtons have cocoa, but dare to be different. If using cornmeal, pulverize it in a food processor to get a fine flour texture.
My friend and I thought we made this recipe up when we were trying to think of ideas for the cupcake shop we were opening, but when I googled it, I found it's been done. But here is the version we've been working on. You can use any kind of cupcake and frosting combo, but this one is a chocolate cupcake with a chocolate ganache frosting.
Spaghetti and Meatballs (Cupcakes)

More of a how-to than an actual recipe as this begins with 10 of your favorite white cupcakes, either from a box or homemade. Fun to make, fun to serve, and no fancy equipment needed either. I used a #7 tip to pipe on the spaghetti but you can use a Ziploc and snip off a corner if the other isn't available. Zaar editor would not recognize the 11 hazelnut chocolates (Ferrero Rocher) needed for an all-important part of the presentation...the meatballs!
Feathery Fudge Cupcakes

These feathery, moist, fudgey cupcakes are the all time chocolate lovers favorite. Relatively easy to make, healthy, and satisfying, these cupcakes are sure to be a hit with kids, at a party, or just to satisfy your own chocolate craving.

(Recipe was originally a cake recipe. To make as a cake bake for 30-35 minutes in two 9x 1.5- inch round greased baking pans.)

Note: These cupcakes are light and fluffy so piping frosting on them instead of spreading generally works easier with less possibility of crumbling.

This recipe comes from Better Homes and Gardens CHOCOLATE cookbook. It has been a family favorite for birthday cakes for years! -- posted by Jessa M

Salad Dressing Cupcakes

This is a recipe from allrecipes.com. These are pretty dense and not as cakey as the name implies but still really good! Also the recipe calls for cocoa powder but it is optional. I don't use it just because I prefer vanilla to chocolate cupcakes but it is entirely your preference! Also...I am not a frosting person (I always use to scrape it off as a kid...haha) so I don't frost mine but definitely you can! Enjoy!

Blueberry-Bran and Dark Chocolate Muffins

Healthy and delicious muffins for everyone (mini or otherwise). I usually make giant size ones, but mini-muffins work just as well for kids' lunchboxes or as a bite-size treat (they are quite rich if you put a lot of chocolate in them, but depends on your preference). This is my favorite muffin recipe because it yields juicy and sweet muffins which are hit with everyone. After experimenting with muffin making I decided these were the best quantities and steps! My tip is to use very dark chocolate, I tend to not go lower than 70/80% cocoa mass. -- posted by Orava

Pink Brownies Lite & Fluffy

Adapted from Recipe #179934. I'm sure this would do great if you doubled it to make cupcakes! Great kid-pleaser. Originally called for a whole stick of butter but I halved the butter and subbed the other half with applesauce. Kept the moisture and flavor, but not the calories! :) And if you want to make these into "real" brownies? Use chocolate Nesquik powder and beat in some chocolate chips towards the end. Or...vanilla Nesquik to make blondies! These are VERY soft and cake-like-- would make an awesome cake/cupcakes. -- posted by the80srule

Any Flavor Microwave Cake in a Mug

This is our Christmas present choice. We are making little baskets for all of our family and friends. We are all about convenience and ease of recipe, so it uses box cake mix to make recipes easily reproduceable for the recipients. Enjoy and share with your college bound students, teachers, but maybe not the dentist. -- posted by RejRocks

Amazingly Easy & Delicious Buttery Frosting!

I found the basis for this frosting through another members post. (Recipe #41923) I tweaked it to make it what I wanted that day, but it is so easily changed to make the smoothest, creamiest, buttery frosting I have ever had! And its EASY!!!! The first time I made it I added a tsp of coconut extract and after it was all mixed up I folded in a 1/2 cup of flaked coconut. It was a HIT!!! You won't regret trying this recipe! -- posted by ShayLyne81

Sponge Kisses

Over Christmas all the cooks in my family started writing down recipes. This was one of my childhood favourites. Be sure to fill the cakes at least 2 hours before serving so they are nice and soft. You can make them more grownup by omitting the vanilla and jam and mix 1/2 cup of raspberries and 2 tsp liqueur into the cream -- posted by Coasty

Colourful Cupcakes

These are fun to make and they taste good too! I like using plain white cupcake liners so you can see the colours through them. The end result looks complicated but it is really quite easy and quick. -- posted by Food.Is.Good

Lily Vanilli's Honey, Lavender & Almond Cupcakes

The aromatic sharpness of lavender combined with soft honey flavours and toasted almonds give these cupcakes an intensity of flavour that is luxuriously decadent and festive. -- posted by Taste & Smile

Rachel's Vanilla Cupcakes

For posterity. Open to some flavor variations and fun with food dye, so I included some tips from other recipes and my own experiments. I based the cake part off both a Food Network recipe plus one of my cake recipes. Yields 24 cupcakes, two 9" layer cakes, or one 13 x 9 cake. -- posted by the80srule
