Lemon-Cream Cheese Cupcakes

These have a light lemon flavor. This really makes a lot of frosting so you may want to cut the frosting recipe in half. On the other hand, the frosting is so good, you might want to use the extra frosting as a dip for fruit.
Bobby Flay Throwdown Red Velvet Cupcakes and Cream Cheese Icing

I saw this recipe on the Food Network show Bobby Flay Throwdown. He challenged a lady who has a cupcake store. This is the recipe she uses and says she sells the most of. You want to make these huge. She makes them to feed 2 people. Opening them up and cutting them in half like a regular cake. The icing recipe makes alot,,,but plan to use a heaping scoop on top of the cupcake. Since you cut it in half and eat it with a fork every forkful can dip into the icing. I double the cocoa amount for more flavor. Also,,it calls for 2 tbs of red food coloring, it does make it very red,,but even 1 tbs will make it red enough. -- posted by Domesticgirly

Tiramisu Cupcakes (Uses Cake Mix)

These are delicious tiramisu cupcakes. They are relatively easy to make as they use a boxed cake mix. Read recipe in entirety first - it sounds more complex then it actually is. You can decorate these to be quite elegant & fancy in presentation for Brunches, Bridal showers, or whatever suits your needs. These sell at gourmet bakeries, coffee shops & cafe's for a pretty penny. Note: I do use mascarpone to make these as that is more traditional, but you could substitute with plain cream cheese if needed.
Also, I do use cupcake liners because I think they present better.
Lastly, it's best to prepare mascarpone filling & chill about 4-6 hours in advance or night before.
FYI: You can fill the cupcakes by using a icing decorating (piping) bag filled with the mascarpone filling or use an old fashioned ketchup or mustard plastic bottle with nozzle point tip << yes, those ugly yellow & red things :-)
*** Update: some of you contacted me about skipping the pastry bag step, that's completely fine, what you need to do is leave room when filling cupcake wrappers by not filling all the way, after cupcakes are baked, you poke the holes & do the liquid coffee over top of poked cakes, then just top with the mascarpone layer (make sure it's chilled well as it thickens) then just use the cream cheese frosting on top of that & top with chocolate shavings. -- posted by BlondieItaliana

Graduation Cap Cupcakes

Inspired by Recipe #169141 ... Thanks looneytunesfan! I used Duncan Hines classic yellow cake mix and added three tablespoons of cocoa powder, because I wanted the cupcakes to be closer in color to the graham crackers than a fudge cake mix would have been. The cooking time includes cooling time. There will be some licorice strings left over after you finish making the "tassels." -- posted by brokenburner

Peach Blossoms

these are very moist and munchy, and I have to thank my friend Tina for this recipe. She told me the "secrets" about making good Peach blossoms. Bit strange, not a peach in site :)
These will last for days in the fridge, without going gooey or hard. Dont put the cream in until you are ready to serve.
Mock cream is the better choice if you have to travel.
I make my cupcakes with cheap yellow cake mix, but you can use any recipe you like for them. (Zaar wouldn't let me say that in the ingredients) -- posted by mummamills

Spider Muffins

From my files: "These muffins have a decadent chocolate flavor and dark color that is perfect for Halloween. The white spiderweb decorations are easy to make with melted white chocolate. For non-Halloween occasions, just drizzle the white chocolate frosting over the tops of the muffins, or omit it entirely. Use the highest quality chocolate you can get for superb tasting muffins, but if this is just for little ones who don't really care, feel free to use any brand chocolate. The muffin will still be dense and chocolatey. " -- posted by Chef MB

You could use what ever chocolate you can find for the head, ears and legs. I thought that they looked pretty cute with just the eyes, but you could add a red icing smile or tongue, and nostrils. You can also use a little tubes of writing icing for the white and black of the eyes. -- posted by froglet

Fairy Cakes (So Simple)

My grandmother and I always used to make these together when i was younger. So simple, yet so yummy! They're great for parties (especially children's) and you can decorate them however you like, which provides ALOT of fun! I usually just ice mine with plain icing, but they're delicious with coffee or chocolate icing too. They never last very long in my household! Enjoy. =] -- posted by 961626

Twit Twooo, Hooting Halloween Owls - Halloween Cupcakes/Muffins

These are GREAT fun! Bake some chocolate fairy cakes, muffins or cupcakes, decorate them and then turn them into Hooting Halloween Owls! I made these last year for a children's Halloween party, and they all loved them. The recipe is based on our British fairy cake or angel cake recipe, where the top of the baked cake or muffin is cut off to create the "wings". I have stated some sweets (candy) that are British - please use your own local sweets to decorate the owls. This is a wonderful recipe idea that I have changed and adapted from Tana Ramsay, the wife of the famous Gordon Ramsay.....she has some great family recipes, of which this is one. (Preparation time includes the time to decorate and ice them after they have been baked.) My Recipe #328085 would also be great Halloween companions for these hooting owls! -- posted by French Tart

Spooky Spider Cupcakes/Muffins for a Howling Halloween!

I JUST love these little spider cakes, when I make them, their faces make me laugh - well, I am easily pleased! Furthermore, they are VERY tasty - they have a much better flavour than NORMAL spiders I find, their legs are a little too chewy! The cake mixture is a double chocolate cake mixture - with cocoa and chocolate pieces, topped off with a chocolate butter cream. The decorations are made using Liquorice Allsorts and liquorice strings/laces or Catherine wheels as we call them in Great Britain. They are easy to make and can be frozen before you decorate them. I made these for TOTM Cooking School September 2008 - I hope you find the step-by-step photos handy when you come to bake and decorate them. An idea we had for an adult Halloween party - turn the spiders upside down so they have their legs in the air, and scatter wine corks amongst them on a plate........only joking! :-) If you fancy some wise companions for these spooky spiders, try these: Recipe #326716. -- posted by French Tart

Magical Christmas Fairy Cakes - Christmas Fairy Cupcakes

Some recipe classics never go out of fashion and fairy cakes top the list
They are the stuff of childhood memories: just one nibble can transport you back in time and even today, no self-respecting children's birthday party would be without them. That said, why should the kids have all the fun? With just a little tweaking, fairy cakes can be turned into grown-up fare as well, perfect for a mid-morning coffee break, tea in the afternoon, packed lunch treats, OR for the Christmas tea table. The basic recipe is oh-so-simple so you can keep it plain or indulge yourself with extravagant toppings; for Christmas, I have used fondant icing snowflakes and edible sparkles/cake glitter. Some die-hard purists may omit the vanilla extract but I think fairy cakes are better with it added. Prep time includes the time it takes to decorate the fairy cakes. The edible cake sparkles and glitter is available from most good cake decorating or sugar craft shops. -- posted by French Tart

Rice Krispies Muffins

This is so easy to make and yet delicious. Even tough I do not like rice crispies at all I enjoy these muffins. I was acctually looking for a recipe like this here but could not find it so i posted my recipe here. In Iceland you will hardly find a potluck where these are not one of the treats. But don't be late as they are usually gone soon. Your kids will love these!
Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe.

Red Velvet Cupcakes With Cream Cheese Frosting

This recipe was adapted from "What Hawaii Likes to Eat" and the frosting is adapted from a recipe by Teri Wahl. My family used to own a bakery, and these were the cupcakes we sold. There will be A LOT of frosting. Some may want to halve the recipe. We actually used a whole ice-cream scoop of frosting on top of the cupcake.

This is the actual recipe for the bakery, so it makes 48 cupcakes.... it's easy to scale down to 12 but kinda hard just to do 6. -- posted by HawaiiChef79

Vanilla Bean Cupcakes

Credited to Sarah Howard- printed on May 12 edition of Creative Loafing. This cake calls for whole eggs along with an equal ratio of egg whites to keep it light and fluffy, and maintain the pure color. The use of the vanilla bean makes a big difference in the fragrance and overall taste of the cake as well, so go ahead and splurge in the spice aisle. After you're done scraping out the tiny seeds, throw the pod into a mason jar with baker's sugar, keep it in the cupboard and use the vanilla-infused sweetness to add an extra dimnsion to your recipes. -- posted by Sparkmonkey

Fudgy Chocolate Cupcakes (Or Cake)

There was an o.k. recipe here on Zaar that I have worked on and changed to make these truly amazingly rich and chocolatey cupcakes. Don't be scared of the tiny bit of coffee it only deepens the flavor of the chocolate. These don't require any frosting but the kids love it with frosting and some colored sprinkles so that's what I typically do. I like to use my lazy version of Recipe #19353 (a little bit of this, a little bit of that) and they always look and taste wonderful. As an added bonus this has no shortening, butter, or margarine (all those bad trans-fats) but amazingly enough they still taste fattening. -- posted by scancan

Best Cupcakes Ever

This recipe is adopted from a recipe for Flag Cake by the Barefoot Contessa. I made it for 4th of July 2009 and it was probably the best cake I've ever made. I don't usually like cream cheese frosting, but this one is divine, especially with the fresh berries on top.

A few months later I found cupcakes topped with raspberries and blueberries at Star Provisions' bakery in Atlanta, and I could swear they used this same recipe, though Annie Quatrano might beg to differ. That's what gave me the idea to make cupcakes with the Flag Cake recipe. The cake batter includes sour cream, which makes the cake SO moist and delicious. I've tried substituting 1/2 cup of Splenda for half a cup of the sugar in the batter and they came our great, so you could experiment with substituting Splenda for even more of the sugar.

Enjoy! -- posted by Cook-a-holic

It was really easy; the hardest part was picking the orange and black M&M's out of the M&M's GHOUL'S Milk Chocolate Mix. If you live in a bigger city or can order online, you can probably order just orange and black ones to make this easier yet! -- posted by DeniseBC

Colorado Mel's Glazed-Chocolate-Cheesecake-Cupcakes

These are my favorite cupcakes from when I was young! They're so delicious, they're easy to make, and everyone always wants the recipe. :) My mom used to spread the extra glaze between graham crackers and we would eat them after they hardened. Those were so good that sometimes we would just make the glaze recipe minus the cupcakes! -- posted by Colorado Mel

Pumpkin Cupcakes With Cream Cheese Frosting (Cake Mix Recipe)

This uses a box cake mix for the base of this recipe. Since box cake mixes require different things, the ingredient list here does not include whatever ingredients that the cake mix itself might call for (i.e. eggs, etc.). Time listed does not include cooling time. -- posted by iewe

Pumpkin Cheesecake Cupcakes

Delightful personal cheesecakes! My daughter requested these from a Rachel Ray magazine for her girl scout troup on her birthday, BIG hit! Fairly easy to make, but everyone will marvel at your amazing baking talents... only you will know how simple they really were :) -- posted by spreadnjoy

Guinness Cupcakes

Nigella Lawson's Guinness Cake is much talked about. This is a downsized version of my adaptions to her recipe, perfect for making 12 delicious cupcakes that look like miniature pints of Guinness. It's a bit of a grown up delicacy, the flavours might be a little rich for young kids, but chocoaholics and Guinness lovers will be delighted. -- posted by Jillsybean
