Autumn Spice Cake With Sticky Coconut-Pecan Icing

Got this out of Cuisine at Home magazine. When I saw the picture in the magazine I almost licked the page. So I made this for my husbands birthday. I doubled the recipe and made one 2-layered cake and 24 cupcakes so he could take some to work. For the cupcakes I cut the tops off and put some frosting in the center and then on top. So it was kinda like a layered cupcake. I also used my food processor to mix everything. Makes it very quick. Another hint from the book is to use an electric knife to cut the cake. Since the frosting is very sticky. We did that and it worked very good. Looked beautiful. Also came with a recipe for a Sweetened Sour Cream to serve along side this. The cake definately doesn't need it but it tastes really good so why not? My husband said it tastes like spice cake and a pecan pie mixed together. -- posted by JAG0913

My Mom used to make this for me when I was a child, as it was my favorite cake. As I grew and became more kitchen savvy, she taught me how to make this cake.
Strawberries and Cream Cupcakes

this is another recipe i created on a whim. i was making plain cupcakes and looked in my cupboard and i noticed a full bottle of strawberry essence from my chocolate making experiments at easter. i love the topping for this. white chocolate ganache is divine with these cupcakes. but don't add too much cream. it might look too little but the recipe is correct.
if you want you can add a fresh strawberry on top. -- posted by Chef #814393

Bobby Flay Throwdown Red Velvet Cupcakes and Cream Cheese Icing

I saw this recipe on the Food Network show Bobby Flay Throwdown. He challenged a lady who has a cupcake store. This is the recipe she uses and says she sells the most of. You want to make these huge. She makes them to feed 2 people. Opening them up and cutting them in half like a regular cake. The icing recipe makes alot,,,but plan to use a heaping scoop on top of the cupcake. Since you cut it in half and eat it with a fork every forkful can dip into the icing. I double the cocoa amount for more flavor. Also,,it calls for 2 tbs of red food coloring, it does make it very red,,but even 1 tbs will make it red enough. -- posted by Domesticgirly

Vegan Elvis Cupcakes

This recipe came from Vegan Cupcakes Take Over The World, but I made a small modification with the frosting (using much less, trust me, it doesn't need much). No one will believe you when you tell them they're vegan. The cupcakes taste like moist banana bread. Double frosting recipe to create cupcakes like the ones in the photo. My favorite vegan margarines to use for baking include Smart Balance Light and Nucoa (both in a tub). -- posted by danakscully64

Cappuccino Fudge Cupcakes

This recipe came from the KitchenAid Great Baking and More cook book, my sister in law gave it to at Christmas, thanks Shannon for this recipe. These cupcakes were easy to make and I love the cappuccino flavor both in the cake and in the coffee cream, with a hint of cinnamon in the fudge sauce these are sure to make someones day, they did mine. I baked mine at 350 F for about 14-15 min. in regular cupcake tins not custard cups like the recipe calls for, and I got about 18 cupcakes. -- posted by Mrs. Cookie

Vegan Chocolate Cupcakes With Chocolate Mousse Topping

These are sooooo good! No exaggeration. The topping is light and fluffy and not overly sweet, and you would never know that the cupcakes were vegan. The recipe come from Vegan Cupcakes Take Over the World. Once you taste these cupcakes, there will be no doubt that these can take over the world! The mousse topping makes enough for probably 2 dozen cupcakes, so go ahead and double the cupcake recipe...they are sure to disappear in no time.
Easy Strawberry and Cream Cupcakes

I found this in my Betty Crocker cookbook... I haven't tried it yet, but it looks great for a little girls birthday party! If strawberry soda pop is hard to find, I'm pretty sure you could substitute the pop for carbonated water and strawberry flavoring... Not sure though! Oh- no matter what the box says... Don't use water in this recipe... you sub soda pop for the water, and that's what makes it special! -- posted by Baby Bam

Diet Soda Cake or Cupcakes With Frosting

The popular Diet Soda Cake! I invented a frosting for this cake that is light and creamy and really great. You can make a frosting for it if you'd like, but you really do not need it. YOU MUST STORE THIS CAKE IN THE FRIDGE ESPECIALLY IF YOU USE THE FROSTING! This cake, including the icing, freezes wonderfully! A 2"x2" piece is 2 points (approx. 100 cals and a scant 1/2g fat). The frosting is free for one serving, but is 1/2 point for 2 servings. -- posted by Humble Bee

You could use what ever chocolate you can find for the head, ears and legs. I thought that they looked pretty cute with just the eyes, but you could add a red icing smile or tongue, and nostrils. You can also use a little tubes of writing icing for the white and black of the eyes. -- posted by froglet

Twit Twooo, Hooting Halloween Owls - Halloween Cupcakes/Muffins

These are GREAT fun! Bake some chocolate fairy cakes, muffins or cupcakes, decorate them and then turn them into Hooting Halloween Owls! I made these last year for a children's Halloween party, and they all loved them. The recipe is based on our British fairy cake or angel cake recipe, where the top of the baked cake or muffin is cut off to create the "wings". I have stated some sweets (candy) that are British - please use your own local sweets to decorate the owls. This is a wonderful recipe idea that I have changed and adapted from Tana Ramsay, the wife of the famous Gordon Ramsay.....she has some great family recipes, of which this is one. (Preparation time includes the time to decorate and ice them after they have been baked.) My Recipe #328085 would also be great Halloween companions for these hooting owls! -- posted by French Tart

Spooky Spider Cupcakes/Muffins for a Howling Halloween!

I JUST love these little spider cakes, when I make them, their faces make me laugh - well, I am easily pleased! Furthermore, they are VERY tasty - they have a much better flavour than NORMAL spiders I find, their legs are a little too chewy! The cake mixture is a double chocolate cake mixture - with cocoa and chocolate pieces, topped off with a chocolate butter cream. The decorations are made using Liquorice Allsorts and liquorice strings/laces or Catherine wheels as we call them in Great Britain. They are easy to make and can be frozen before you decorate them. I made these for TOTM Cooking School September 2008 - I hope you find the step-by-step photos handy when you come to bake and decorate them. An idea we had for an adult Halloween party - turn the spiders upside down so they have their legs in the air, and scatter wine corks amongst them on a plate........only joking! :-) If you fancy some wise companions for these spooky spiders, try these: Recipe #326716. -- posted by French Tart

This recipe makes a beautiful cake and is surprisingly easy. It's from Bon Appétit Magazine (Nov. 2008). These make great cupcakes too!
Pink Lemonade Cupcakes

These cupcakes are absolutely darling. I found the recipe in a cupcake cookbook a couple of years ago. They are perfect for little girl birthday parties (and even older girl birthday parties as my adult friends also love them!). They are tangy and sweet and not too dense. I often make bite-size ones in my mini cupcake pan. Reduce the baking time if making minis or they will dry out. -- posted by soursugar

Spiced Pumpkin Cupcakes

This is my version of a recipe I found a couple of years ago. It is light and fluffy with rich, sweet and spicy flavour. I highly recommend using:
Recipe #217417
for the Pumpkin Pie Spice but whatever recipe or store bought version you like will do. It is really important for the frosting that the cream cheese and butter be at room temperature. I recommend leaving them out over night or for at least 6 hours before making the frosting. This recipe also makes great mini-cupcakes. Just make sure to reduce the baking time slightly. -- posted by soursugar

Whipped Coconut Cream

This is the perfect topper for waffles, soy ice cream sundaes, cupcakes, desserts, or pretty well anything else that calls for a little something extra! It uses agave nectar or Maple syrup instead of sugar, making it a little less of a sugar shock for some diabetic fols. This is a Vegan whipped cream so good, it will even please the non-vegans at the table.

For this recipe, you will need to create a cold version of a double boiler. Fill a small pot about half way with cold water and ice cubes, and place a bowl on top of the pot ( you may want to do some measuring first, because you do not want the bowl to fall into the pot). This is a great way to make sure the whipped cream stays chilled while you give it a good whip!

Feel free to play with it, add some spices or flavors to it to enhance the flavour of your dish. -- posted by Big Fat Vegan

Baby Shower Cupcakes (Vegan Friendly)

I made these cupcakes for my sister-in-law's Baby Shower. She wasn't finding out what the sex of her baby was until the birth so I used that for the frosting idea (see the picture). I am a strict vegetarian who rarely gets to enjoy special occassion treats so these are vegan so I get to join in the fun :) -- posted by KristinV

Entered for safe-keeping for ZWT. From Marie Claire. This is the most popular Australian snack, a sure winner at a bake sale. And is it easy! The more traditional Lamingtons have cocoa, but dare to be different. If using cornmeal, pulverize it in a food processor to get a fine flour texture.
Birthday Cupcakes (Clean Eating)

From Tosca Reno's book the Eat Clean Diet for family and kids. For frosting: start with 1/2 c of confectioners sugar but you may need to add more - this will depend on how much water has drained from your yogurt and how stiff it is. You can adjust accordingly. This will not be the sickeningly sweet frosting you normally expect from a conventional birthday cake or cupcake. -- posted by Chef #545970

For a lovely presentation: (I usually choose several and mix it up with each batch for a fun variety)
- top with chocolate chips, mini marshmallows and/or a single graham cracker chunk
- one large marshmallow, slide a single graham cracker chunk angled from the side and put a chocolate chip on the opposite.
- one hershey kiss, graham cracker chunk
- one hershey kiss or large marshmallow, sprinkle with graham cracker crumbs
- scatter all over with mini-mallows, chips, and crumbs -- posted by GoldsmithLissa

These cupcakes are absolutely delicious and complete with a raw cookie dough surprise on the inside! Topped with some cookie dough icing and this makes for a fantastic treat for any occasion! (This recipe looks overwhelming, I admit, but it's pretty easy and well worth the effort!)

NOTE: If you use any flour other than self-rising cake flour as the recipe calls for, it will cut the number of cupcakes in half!!) -- posted by pott3r

Amazingly Easy & Delicious Buttery Frosting!

I found the basis for this frosting through another members post. (Recipe #41923) I tweaked it to make it what I wanted that day, but it is so easily changed to make the smoothest, creamiest, buttery frosting I have ever had! And its EASY!!!! The first time I made it I added a tsp of coconut extract and after it was all mixed up I folded in a 1/2 cup of flaked coconut. It was a HIT!!! You won't regret trying this recipe! -- posted by ShayLyne81

Chococonut Pandan Chiffon Cake

This is the easiest pandan cake I've ever made, and best tasting too! I made my husband rank his favourite cakes that I've ever made and I've never been able to outdo the Choco Banana cake until this one!.We're both watching our weight, so I've reduced alot of sugar in the recipe, so it's not too sweet at all. Enjoy! -- posted by Clabibi

Cream Filling for Cupcakes

This is my favourite cream filling to use in chocolate cupcakes. Just fill in a pastry bag and pipe it into the cupcakes from the top, when they are cooled. Frost cupcakes as usual or just dig in! -- posted by Roxanne J.R.

A dense chocolate cake is layered with cream cheese frosting. What could be better? Do not let the the layers intimidate you; this is a wonderful cake and it shouldn’t be missed.
Outrageous-Boston-Cream-Pie Cupcakes!

Sometimes when a craving hits, you don't have time to make the full blown version of an outrageous Boston-Cream-Pie ... so this is the next best thing! My son recently craving my Boston Cream Cake settled for this a less time consuming version. Although you start with a cake mix for the cupcakes, the pastry cream and ganache make these little baby's a perfect individual dessert to serve! Family Favorite ;) -- posted by Vseward (Chef~V)
