			<description>I adapted this recipe from a vegan one that had been a favorite of mine, but never went over too well with my family because the consistency of the cupcakes was heavier like a muffin's. The addition of butter makes these moist cupcakes lighter, but they can be re-veganized by using oil instead, and by using soy milk instead of skim milk. Also I don't have the recommended baking temperature so I just used 350 F. 			<description>This is a recipe from allrecipes.com. These are pretty dense and not as cakey as the name implies but still really good! Also the recipe calls for cocoa powder but it is optional. I don't use it just because I prefer vanilla to chocolate cupcakes but it is entirely your preference! Also...I am not a frosting person (I always use to scrape it off as a kid...haha) so I don't frost mine but definitely you can! Enjoy!

			<description>This recipe is adopted from a recipe for Flag Cake by the Barefoot Contessa.  I made it for 4th of July 2009 and it was probably the best cake I've ever made.  I don't usually like cream cheese frosting, but this one is divine, especially with the fresh berries on top.

A few months later I found cupcakes topped with raspberries and blueberries at Star Provisions' bakery in Atlanta, and I could swear they used this same recipe, though Annie Quatrano might beg to differ.  That's what gave me the idea to make cupcakes with the Flag Cake recipe.  The cake batter includes sour cream, which makes the cake SO moist and delicious.  I've tried substituting 1/2 cup of Splenda for half a cup of the sugar in the batter and they came our great, so you could experiment with substituting Splenda for even more of the sugar.

			<description>Healthy and delicious muffins for everyone (mini or otherwise).  I usually make giant size ones, but mini-muffins work just as well for kids' lunchboxes or as a bite-size treat (they are quite rich if you put a lot of chocolate in them, but depends on your preference).  This is my favorite muffin recipe because it yields juicy and sweet muffins which are hit with everyone.  After experimenting with muffin making I decided these were the best quantities and steps! I changed the recipe as i could not be bothered to whip the egg whites and care for the batter to cool down in order to add the yolks. So i went for a little four instead and gave it a try. What a treat! I love it! It is just too easy to be good :-)
