Spaghetti With Spicy Tomato, Bacon and Mushroom Sauce

This version of the classic Italian recipe, spaghetti Amatriciana is a perfect example of fast food as it should be - whilst the pasta cooks the sauce is prepared all ready to eat in less than 30 mins! What's more any leftovers could be served cold the next day as a pasta salad in a packed lunch box. -- posted by English_Rose

Spaghetti Alla Caruso ( Tenor Spaghetti )

This recipe is named after the famed Italian tenor, Enrico Caruso, who was known to enjoy cooking, loved to eat, and especially liked chicken livers. This dish is found on the menus of many Italian restaurants throughout the country. So, put on some Italian music, pour yourself a glass of Chianti and enjoy this different and very rich dish. -- posted by Alan in SW Florida

Spaghetti With Tahini Sauce

A twist on a classic, this vegan recipe uses tahini to increase the protein and add a nice mellowing nutty flavor to spaghetti sauce. It's really easy to make and very yummy. I like to make a batch for the week and take it for lunch; keeps well for several days in the fridge. I also use whatever pasta I have, and try to keep the whole-grain or sprouted varieties to increase the nutritional value even more. The ingredients reported here are direct from the book; I use 3 TBSP Tahnini and 6 oz Tomato paste, to make it slightly less nutty and more tomato-y. I got this recipe from the book "Vegan Cooking for Everyone" by Leah Leneman. -- posted by Chef #239578

Hearty Backyard Spaghetti Sauce for 50!

Easy Spaghetti Bake

A co-worker gave me the basic recipe and I made a few changes to make it super easy. It has been a pot luck favorite. I prefer Angel Hair pasta but regular spaghetti noodles can be used.
Ww 4 Pt. Spaghetti With Fresh Basil and Tomatoes

Nothing says Italy like fresh-picked tomatoes and basil still warm from the sun. This sauce is not cooked; the heat from the pasta draws out the natural flavours of the vegetables, so use really good quality, vine-ripened tomatoes.
Veggie " Everything but the Kitchen Sink" Pasta Sauce

I love chunky garden vegetable pasta sauce, and after trying a few on Zaar I modified my favorite spaghetti sauce recipe recipe #22782, to have fresh tomatoes instead of canned, lots of fresh vegetables, and less fat from the meat. Easily hearty enough with vegetables to omit the sausage for vegetarians.

I find it easiest to prepare the ingredients first. Slice, dice, puree, open cans etc. For stronger garlic flavor, "crack" the garlic open about ten minutes before mincing to give the oils air exposure. Use whichever ingredients you love most. The more juicy your vegetables the less water you need as the sauce will thin as the vegetables cook. It's easier to start with thick sauce and thin in out than to try to thicken the sauce later.

My instructions may seem a little elementary for some more advanced cooks, but as I learned how to do many of these techniques while developing this sauce, I wanted to include them for more novice cooks. If you have any suggestions or corrections please let me know. -- posted by @ home in SF Bay

Crock-Pot Marinara Sauce: a Flavorful Bowlful of Naples

Bring your slow-cooker up to speed with this chunky, intensely flavored tomato sauce that is a fabulous whiff of Southern Italy. It's a little salty (from the kalamata olives), spicy (from the hot red peppers and cayenne pepper), quite fragrant (with large amounts of fresh garlic and ripe tomatoes), and surprisingly different (with the addition of shrimp). The slow-simmer cooking process allows each ingredient's flavor to burst through. This is a marinara sauce to choose when you want to bring the traditional flavor of Italy to your dining table.

Homemade Angel Hair Pasta

this is my recipe for home pasta. it is the only way to enjoy pasta.

You will also need a hand-rolling pasta maker. I bought a cheap one from bed bath & beyond and it broke after 3 uses. I have included a link to a good one below.

Learn from my mistakes - buy a decent one and never clean the machine with water. It will break like mine did, in the middle of making pasta for my team at work during our Christmas party. I also think a hand rolling one is better than electric, because it is a great workout.

Spaghetti With Fresh Tomato Sauce

This very basic recipe is popular throughout Italy. Although any purchased spaghetti will do, this dish becomes special enough for company if you use artisanal pasta, preferably imported from Italy. This makes a wonderful first course. (In every Italian household, there is always a pasta course!) Note: To peel tomatoes, core and cut a small X through the skin on the bottom of tomatoes with a sharp knife. Place them in boiling water for about 30 seconds or just until skins begin to peel back. Quickly remove tomatoes from pan, and plunge them into ice water. Drain and remove skins. -- posted by JackieOhNo!

Spaghetti With Broccoli Rabe, Toasted Garlic & Breadcrumbs

This is a quick and easy dish where just a few ingredients come together in a delicious and impressive dish. Another great recipe from Mark Bittman, printed in the New York Times (April 2009).
Bittman recommends making homemade breadcrumbs by tearing up stale bread, then pulsing the pieces in a food processor to make coarse crumbs (nothing approaching a powder).

You can use the same pot for cooking the broccoli and the pasta; and the same skillet for toasting the bread crumbs and finishing the dish. -- posted by blucoat

Spaghetti and Meat Sauce - Alton Brown

Taken from Brown's _Good Eats_ episode "American Classics: Spaghetti with Meat Sauce." He insists on freshly ground meat from whole cuts, so you know exactly what you're getting; he has the butcher grind it for him, but you can do it yourself if you have the equipment. Be sure to use a WHITE wine for the sweetness and bright acidity; a red will tend to get astringent with this kind of cooking. -- posted by DrGaellon

Tagliolini With Pecorino Romano and Black Pepper

Don't let the number of ingredients fool you, this dish offers a lot of flavor despite it's simplicity. Be sure to get high quality ingredients; it makes a big difference in a recipe with so few ingredients and it's still ridiculously cheap to make. Even the pepper is important, don't use the powdery stuff that's been sitting around for a year, splurge on some high quality peppercorns; you won't regret it.

The lack of oil is one of the most notable things about this recipe. While some add oil or butter to this dish, you'll find it really isn't necessary. Instead you use the starchy pasta water to create an emulsion sauce with your cheese which will stick to the pasta beautifully. As for the pasta itself, taglioni is a particular cut, but this recipe would work just as well with something thicker like tagliatelle or fettucine.

Although it's an old Roman favorite, I got this recipe from a recipe blog called "Rachel Eats" which I highly recommended. I wanted to post it on here to give it a wider audience. -- posted by OwlMonkey

Summer Shrimp Scampi With Linguini

I adapted this dish from a Tyler Florence recipe one evening while trying to come up with a way to use an abundance of fresh basil and tomatoes from my garden. I had made a batch of fresh pesto with toasted pine nuts the day before. You can make your own or use ready made from the grocers. AND I used large frozen shrimp (lets face it, most grocers more than 25 minutes from the ocean only sell frozen anyway!). The combination of shrimp and tomatoes with a little garlic and basil seemed like a natural for a summer evening dinner. Add a little toasted sour dough garlic bread. My family polished off the whole platter. -- posted by Pegasus from SF

Southern Italian Soup of Dried Favas, Potatoes, Cauliflower, And

****OH DEAR !! Zaar will not allow me to delete this recipe, but unless you crave BLAND and TASTELESS -- do NOT prepare it ! SO disappointing ! I added a garnish of real bacon, a handful of grated Parmesan, LOTS of S&P, and it STILL had no flavor ! SO sorry ! That's what I get for posting something I had not prepared ! I think no native Italian would serve this either . Need to find more recipes with dried Fava beans !

This from "Best of the Best Michigan Cookbook" sent to me by QueenBee for the August, '09 cookbook swap. "Served in Puglia, in south of Italy --outstanding example of impact of fine olive oil. Garnished w/additional olive oil which adds flavor, and fried pasta which adds texture."
NOTE" Be sure to have SPLIT dried favas, not whole, or you will be cooking them for hours -- posted by NurseJaney

Lighter Carbonara

Lemon Pine Nut Pasta

This recipe was handed down to me by a friend I met years ago. She was born and lived 20 years in Italy before moving to the states and this was Mom's favorite recipe. Apparently, this pasta dish was a very common side dish to many Italian dishes. It is extremely light but so full of flavor, and definitely not very much too it. Serve with some grilled seafood or chicken and it is a great quick side. It is literally made in minutes. -- posted by SarasotaCook

Basic Garlic and Oil Sauce for Perfect Pasta (Rachael Ray)

If you like pasta, you're going to LOVE this recipe from Everyday With Rachael Ray's magazine (Oct '09). She has a "secret ingredient" that adds an unexpected zest to the ordinary ingredients: anchovies. She notes in her recipe that " even if you think you don't like anchovies, you should try this recipe--it'll change your mind." Further, she points out that "once you heat anchovies, they stop tasting like fish and start tasting more like salted nuts." So: try it, you'll like it! If you must, don't say anything to the diners--and ask them if they like it, before you reveal the "secret ingredient." -- posted by Debber

Pasta With Tuna, Spinach, and Red Pepper Flakes

The original recipe came from the San Francisco Chronicle. The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach. If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use. However, I have used tuna in water when it was all I had in the pantry. Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version. Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!! I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it. This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). I look forward to reading your comments with your add ins :) -- posted by CharlieGal

This is out of the 2002 edition of KCTS Chefs cookbook. It was sent in by Executive Chef Chris Tess from Mama Stortini's Ristorante Restaurant. I decided to make this a 2 serving dish instead of 1 based on the calorie and fat count along with the huge restaurant amounts that are normally served.
This is a replica of my grandma's recipe only tweaked a little since she didn't leave us an actual recipe. It's sorta a pudding/custard type dessert. Not too sweet and very creamy. It took me a few times to perfect it, but I am sure you will enjoy this Italian homemade specialty. Serve warm or cold. -- posted by Chef #1522934

Lynda's Spaghetti Sauce

My husband married me on the condition that I never buy a jar of spaghetti sauce and that I ALWAYS use his mother's recipe. No complaints here!
(I pretty much never let it simmer a full hour, so I can't tell you if it actually needs to simmer that long, but I think 20 minutes cooking time is plenty.) -- posted by April Wholikesitez

Spicy Sauteed Calamari over Pasta

I found this recipe on eastvillagekitchen.com and made it with my wife. It came out so good I had to add to my cookbook. If you like Fra Diavolo you'll love this! The version we just made was a little too spicy - I might try cutting down on the red pepper next time - but it was still really delicious. Great over pasta, or on its own as an appetizer (double the serving count for appetizer). -- posted by Chef Remy #186273
