			<description>Chef Douglas Rodriguez of DeLaCosta restaurant in Chicago was born in America, but this recipe is inspired by his mother's black bean soup, which offered robust flavor for people who didn't have money to spend on meat for stock. Here we use both fresh and dried oregano because each imparts a different flavor to the final dish. The ham is listed in the ingredients but since I have always made my black bean without &amp;quot;meat&amp;quot; I made it that way again. This was in Cooking Light, 01/01/2008! Just another take on black beans that I think are great!!  Cuban cooking reflects the influence of Spain and Africa as well as other Caribbean countries. 			<description>This recipe is the bread recipe used by my college roommate when making the Sandwich Cubano Recipe #286122. A traditional loaf of Cuban bread is approximately three feet long and somewhat rectangular as compared to the rounder shape of Italian or French bread loaves.  In the early days, the dough was stretched thin to make it last, creating the bread's distinctive air pockets and long shape. I am adding it to 'zaar because there have to uses for sourdough starter besides traditional sourdough and Amish Friendship Bread. I doubt that I will ever use the lard, which is recommended for authentic flavor. My bread machine makes sourdough starter, so I am hoping to play with this recipe on the bread machine. If I can figure out a bread machine version, then I'll add that, too. Note: Preparation time does not include the development time to make the starter, which is at least 24 hours. Also, if you've never made starter, I recommend you research a little bit. 			<description>We've all heard of the health benefits of green tea these day, haven't we? Yes we have...thus I will dare to rationalize my little cocktail as being healthy in my mind! LOL. The flavor of the green tea is apt to get lost with the strong flavors of the rum and lime so resist the urge to add more of these ingredients. I recommend Tazo Zen Green tea blend as I think it has enough umph to stand on its own here. Original idea came from the Mellow Monk. 			<description>Mojo is a traditional Cuban marinade made with sour oranges, spices, and garlic.  Sour oranges are used in many Hispanic dishes and can be found in ethnic grocery stores.  Mojo is used as a marinade for pork, chicken, and seafood before cooking.  It acts to tenderize any cut of meat and can be used as a ceviche as well.  This is a family recipe made with black coffee, which is traditionally used in Cuban family recipes to marinate fresh hams and large cuts of meat.  Serve with Recipe #373864 as dressing at the end.  Other ways to serve Cubano-style pork loin, is to slice and serve with a fresh fruit salad or serve in soft tacos or sandwiches. Note: I have made this about 4 times and I have only used the shoulder once and it was amazing! I have never eaten cracklin before but it was so good on this. The other times I made it with pork loin and I learned to halve the recipe due to them being half the weight. IT was pretty intense at full strength esp. with the brine.
