The Queen of Hearts - Valentine's Jam Tarts

Jam tarts are a quintessential British teatime treat - little crispy short crust pastry rounds filled with assorted fruit jams, such as strawberry, raspberry, apricot, blackcurrant and lemon curd. They were the first things my mum taught me to bake when I was little, and in turn, I taught my daughter how to make them when she was very small. Here I have suggested that as a Valentine's Day treat, you top the jam tarts with a little pastry heart........after all, the way to a loved one's heart is through their stomach! Jam Tarts normally do NOT have any pastry topping however, so for the rest of the year, just make them as posted with no pastry lid, or use other suitable shapes appropriate for a special event. I have posted homemade short crust pastry, it is so easy to make and is far superior to ready-made, although I DO use ready-made when I am short of time! Try to use good quality or homemade jams and jellies, the higher the fruit content, the less the jam or jelly will bubble out of the pastry case. These are essential for any English Tea Party, especially if Alice in Wonderland has been invited............along with the white rabbit! Have fun! -- posted by French Tart

Apple Cranberry Pie With Pie Crust

Tired of traditional apple pie and want to mix it up a bit? This apple and cranberry combination hits the spot. You can also use dried tart cherries. If you put ice cubes in a cup of water you'll have the flakiest pie crust. If you use butter instead of shortening, make sure it's chilled. YUM! -- posted by AmyZoe

Mom's Pat-A-Pie Pie Crust

When recipe calls for salad oil, I took this to mean anything you'd use on a salad and put in half canola half organic olive oil. -- posted by Food Snob in Israel

Krafne (Croatian Doughnuts)

This is traditional carnival pastry in Croatia. The origin is of course Austrian. The name “krafne” comes from Mrs. Cecilia Krapf a.k.a. Cilly who worked for Emperor in his Court as pastry cook. The story is that she uncovered the recipe to the street pastry makers so the cake spread all over the Empire (and that is how we get it). The best “krafne” to buy in Croatia is in town Samobor in the vicinity of Zagreb. The ladies who work there have a secret recipe and I must admit the “krafne” there are really the best I have ever tasted. -- posted by nitko

Texas Lime Pie

I needed to use up some fresh limes, and I wanted to make a pie. This is the perfect balance between sweet and tangy. You could probably get away with lime juice from your fridge too. I cheated and used a Marie Callender's pre-made crust to cut down on time, but I do think the graham cracker crust would be even better. Super simple, and you feel like you got a 2-for-1 deal because it makes 2 pies. I found this recipe in America's Best Church Supper Recipes/Taste of Home from Diane Bell of Manvel, Texas. Next time you have a potluck, make 2 pies and keep 1 at home to enjoy. Loved this with fresh whipped cream...MMMM. Waiting for the pie to chill is the hardest part of making this pie. Cook time excludes chilling time. -- posted by AmyZoe

Summer Memories: Jumbleberry Crumble With Shortbread Topping

This was a quick throw it together Sunday Lunch pudding idea - raid the freezer for all the nearly used bags of frozen summer fruits, such as cherries, raspberries, blackcurrants, redcurrants, bilberries (blueberries), blackberries and strawberries. Fling them all into an ovenproof gratin dish; whizz up a shortbread crumble topping - and Bob's your uncle and Fanny's your aunt, as we say down our way!!!! We loved it, the combination of fruits was wonderful - and it is a great idea for using up whatever fruits you have lurking in your freezer. I am sure that fresh fruit would also be suitable. We like our fruits to be on the tart side - so pleased add sugar to taste! Serve the crumble with hot custard, cold custard, cream, ice cream, crème fraiche or whatever you fancy! -- posted by French Tart

Mary's Old Virginny Pie Pastry

From the March 1981 edition of Bon Appetit. Makes an incredibly rich and short pastry due to the high ratio of shortening to flour. 1/4 to 1/3 of this makes the crust for Apple Pan Dowdy that I will post later. I didn't include baking times or instructions because that will depend on the recipe you use this pastry for. And I do know how unhealthy this pastry is. It has equal amounts of flour and fat. It is not good for you. If you are looking for a healthy pastry (is there such a thing?), keep going, do not stop here. But in small quantities, this is delightful pastry. -- posted by Marysdottir

Short Paest (Pie Crust)

Most of the pie crust recipes from 15th century are tacked on to the end of the recipe for some kind of pie filling.
They're usually very simple mixtures of flour and water, and often don't call for any fat. This 16th century recipe
is one of the earliest that is strictly for making short crust pastry. The addition of eggs and saffron give it a wonderful flavor. -- posted by Wylder

Mom's Oil Crust

My Mom made this growing up with both sweet and savory pies. I still make this crust today because I don't have to roll anything out or try to make the butter pea-sized. She uses whole-wheat flour or sometimes half white and half wheat while I generally will use whole-wheat flour when making crust for pot pie and white flour when making pie crust. I have tried doubling this recipe when making a 2-crust pie, but I find it works better to make the first crust right in the pie plate and the second pie crust in a bowl. The second pie crust does get rolled out, but this dough is not as picky as crusts made with butter or shortening. Try it when you're in a pinch for a pie crust. You'll be surprised with the ease and simplicity of the recipe. Serving size is approximate. -- posted by AmyZoe

Perfect Pie Crust

This recipe is from Ladies Home Journal, September 2008. Although the magazine instructions use a food processor, I did it by hand just as easily and have included my directions as well as the original instructions. It is the best pie crust I have tried. It has worked for me everytime and has become by staple pie crust. No more frozen or store bought pie crust for me. Although the recipe calls for butter, I have made it with margarine with the same success. -- posted by Chef #326866

Boiling Water Pie Dough-Very Easy!!

This is a pie crust recipe that my mom always used and its quite old. Its a very liberating way to make pie crust especially for those of us who get the "willies" when we think about trying to make homemade pie crust.
I know everywhere that a pie crust recipe is posted states it needs ice water to make it flaky. Not true...this way makes a crisp, flaky and tender pie crust. See for yourself..its only 4 ingredients...;)

Strawberry-Rhubarb Deep-Dish Pie

Yaay! It's strawberry season right now here in California, time to make my favorite pie. Want to post this for safekeeping here as I just had a scare and couldn't find my cookbook - this is not a recipe I want to lose! Got it from Good Housekeeping Book of Desserts, which is one of the best cookbooks on sweets that I have ever found! I have been making this pie for years now, and it's one of the few things that my incredibly over-picky kids will eat. Does take a bit of time and effort, between making the crust and sweetening/juicing up the berries, then baking and letting it cool for a bit. You can vary the top crust, I like the "criss-cross" lattice look for this one with the juicy red berries oozing on top. GREAT tasting on its own, but, if you add fresh whip cream and/or ice cream on top when it's still just a little warm, it is fantastic! -- posted by SpchTeachCooks

Please Try My Sweet Potato Pie

Calling all pie lovers and seasoned bakers. I would love your opinions on this sweet potato pie recipe. It was my first attempt and I thought it came out really good, but I would greatly appreciate objective and honest comments and reviews. The "Basic Flaky Pie Crust" recipe came from another website and I didn't change a thing (in my opinion, the crust was perfect!) For the filling, I read several recipes, tweaked them each a tad and settled on a combination that I thought might work. So, please try my sweet potato pie....and let me know what you think. I value your opinions. -- posted by CookETC

Spiced Pecan Pie Crust

From the Cuisinart website. It sounds like it would be amazing for a cheesecake crust or a pumpkin pie! The original recipes says you need a spice grinder to grind one whole cinnamon stick and one whole nutmeg with the pecans. I am altering it and substituting 1 tsp of cinnamon and 1/2 tsp of nutmeg. So you may want to base it a little on taste. Chop the pecans in a mini-food chopper if you have one! -- posted by SarahBeth131

Found this recipe in a Kraft's What's Cooking Magazine that comes to my mail box four times a year. Haven't had much luck with pastry and thought maybe, just maybe, this might be as easy as it claims to be. And the result was it is! Also able to substitute the cream cheese with a flavoured one if making a savory tart. ie. Herb and Garlic, Light Sundried Tomato or Light Garden Vegetable Cream Cheese.

Pumpkin Pie

This is a great recipe from "It's Just Food"

There are few foods in the world more closely associated with holiday celebrations than pumpkin pie. During the winter you can find them in every grocery store and supermarket, but if you’re having people over, wouldn’t you prefer to have your house smelling heavenly? And if you’re going somewhere, wouldn’t you rather bring a pie you baked yourself? Luckily, pumpkin pie is one of the fastest and easiest kinds to make from scratch.

So If you’re really ambitious, you could cut your trimmed scraps of pastry into tiny leaves, with “veins” made gently with the tip of a sharp knife, bake them separately on a cookie sheet and then lay them on top of the baked pie.

Some people are under the misconception that fresh pumpkin is better than canned for making pie – it isn’t. Using canned pumpkin purée is infinitely easier, and it contains 20 times the beta carotene of fresh pumpkin!

For a maple-pumpkin pie, replace the sugar with ¾ cup pure maple syrup, which is sweeter than sugar so you don’t need to use quite as much. -- posted by Gardening Girl

Sabeyeh B'lebeh (Phyllo Triangles With Sweet Ricotta Filling)

These are not difficult, but they are time-consuming; you have to methodically hand-fold each triangle out of a strip of phyllo dough. But once they are done, you can freeze and enjoy them at a later date. Because the rose water syrup should be ice-cold when served over Syrian pastries, it must be prepared five to six hours ahead of time or the night before to allow enough time to chill in the refrigerator. Rose water is available at Middle Eastern markets.
Yeasted Olive Oil Pastry

This makes a good crust for a galette. Roll thin so it doesn't become too bready. This recipe is from the vegetarian cookbook Mediterranean Harvest. -- posted by Eat Your Vegetables!

Someone's Pastry for a Double-Crust Pie (Or Two Pie Crusts)

This is my mother-in-law's double-crust pastry recipe for pie crusts, and I'm posting it for safe keeping. This is the crust that MUST be under every homemade pumpkin/pecan/any pie for our holidays (or my husband's side of the family thinks the pie is totally gross--haha). I titled this recipe as I did because it could have been my grandma's (her mother's), or it could have come from a church group, a recipe book, a neighbor, or some other source that I am unaware of. We (our family) has made single- and double-crust pies as well as peach cobbler using this recipe. It comes out flaky and tasty. -- posted by Greeny4444

Grandma Velna and Betty Crocker's Pie Crust

This is a single pie crust recipe for one 9 inch pie crust from Betty Crocker The key is rolling the crust between the wax paper so as to not dry it out by adding flour. We use the butter-flavored shortening. That allows for the flakiness of the crust and the yummy flavor of butter. Also, when baking the pie, I suggest covering the crust with aluminum foil until 10 minutes before the pie is done. That helps keep the crust from burning. -- posted by ShortChef2009

My Momma's Fried Pie Pastry

This is the recipe my momma always used when she would make her fried apple pies. I know it has to be at least 50 years old! I can remember coming in from school and my momma would be frying these and the smell, OMG! These are delicious when made with a dried apple filling. In the fall when the apples were abundant, we made our own dried apples specifically for this purpose. Of course, an applie pie was pretty good too! THANKS MOMMA ;-} Preparation time does not include chilling time. THIS RECIPE DOUBLES EASILY TO MAKE 12 PIES. -- posted by By The Lake
