Mexican Style Crock-Pot Pork

I had a small pork roast and wanted to do something different with it. So, I started adding a few things to my crockpot and came up with this. You can use this as a filling for burritos, tacos, chimichangas, or even put it on a hamburger bun. My son thought it was even good cold. :) Submitted to " ZAAR " on July 27th, 2009 -- posted by Chef shapeweaver ©

Marmie's Really Tender Crock Pot Pulled Pork

I was fiddling around with trying to make a yummy Pulled Pork for my stepson Jesse's wedding rehearsal party. I did one butt in the oven without soda and one in the crock pot with soda. I had never used soda pop in a recipe before but I heard it was worth a try and YES it was! The Crock pot recipe turned out so tender, moist and delicious, (according to the thirty something guests...this was a real hit.) Well worth trying and very easy to make. A lovely outdoor or 'big game' meal served with a variety of salads and crusty buns. Oh, and beer. Posted by request for my new daughter in law Lindsey's Mom. -- posted by Marmie's

Candi's Stuffed Pepper Crock Pot Casserole

My boyfriend's mom made a variation of this recipe in the oven, but it was missing something... I added some sausage and some Frank's Red Hot and that was just the ticket to add some kick to the recipe! Preparing it in the Crock Pot slowly, allowed the peppers to cook fully, and really allowed all the flavors to soak into one another. (Also allows those of us who work outside the home, to prepare the meal ahead of time and cook it all day on warm!) -- posted by Candi Anderson

Sarasota's Crock Pot Brisket With Lots of "veggies"

I love this recipes because you add lots of sweet potatoes, parsnips, crimini mushrooms, onions, white potatoes, and some turnips which I love. But you have the option to use whatever you enjoy

This slow cooks and the sweetness of the brown sugar and maple syrup make this a perfect flavor for this brisket.

I like to rub the marinade over the brisket and let it work overnight, then in the morning, add the sauce and add the cut vegetables to the sides of the brisket and turn on low for 10-12 hours. If you need it done quicker 7-8 on high heat. Either way it cooks and will fall apart.

Serve this with a fall salad with walnuts, bleu cheese, and a nice honey vinaigrette. Very traditional, but I love it with fall roasts and of course some good crusty bread. -- posted by SarasotaCook

From crockpot.com Posted as written I use chicken breast and it is very good, just make sure you poke the chicken before so that it does not dry out and check it occasioanlly if possible to prevent drying out. This is not for crock pots that only have the heat element in the bottom. Cook time depends if you cook it high or low. Low will produce better results. -- posted by SarahBeth131

Crock Pot BBQ Chicken & Peppers

I use this recipe many different ways...sometimes I make rice and serve the whole chicken breast on top w/ leftover sauce or I shred and use in BBQ sandwiches! I always like a little crunch in my sandwiches so that's why I've added the peppers, they are sweet and cut thin so they don't take away from the chicken!
Slow Cooker (Crock Pot) Pesto Chicken and Sweet Potatoes

This is from the website crockpot365.blogspot.com by Stephanie O'Dea. She actually has a new book out called "Make It Fast, Cook It Slow". Stephanie spent over a year cooking every single meal and dessert in crock pots. She is really nice; before her book came out we corresponded a few times.
Vegan Baked Beans a La Crock Pot

At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good. I didn't find one for the crock pot however, using dried beans and no tomatoes.....so hopefully this fits that bill for someone else out there! I found the recipe online - http://www.beanbible.com. There are only a few things I tweaked, one being Bakon yeast. Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast & liquid smoke. Adjust the heat as you wish. NOTE: Soak the beans ahead of time (night before). The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. Hope you enjoy! -- posted by magpie diner

Slow Cooker Tamale Pie

Looking for a easy mexican dinner. look no further! My husband and I love this stuff since I work till after 10pm most nights. Smack it in the crockpot at night and my lunch is waiting for me when I wake up the next morning. I leave the seasoning open because everyone has a different taste for heat I don't do a lot of chili powder with the ancho chili's but I love cumin and the other seasoning. Another good suggestion is mixing green onions into the gorn muffin mix, I top with shedded smoked cheddar cheese and a little sour cream. Hope you enjoy. -- posted by Mrs Spencer

Old Fashioned French Canadian Baked Beans

This was a staple for me growing up in Quebec and brings back many happy memories. A perfect winter comfort food!!! I have tweaked an original recipe and wanted to share it with you. Great at breakfast with fried egg and sausage. A hearty meal with crusty bread and salad. It takes some time but well worth the wait -- I hope you enjoy them. Special note: some people prefer using salt pork when preparing baked beans - I use sliced bacon instead. -- posted by Sue's Kitchen

Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1.

If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not. -- posted by Matts Lotus

Vinyl Lager Crock Roast

I bought a six pack of Magic Hat's spring seasonal (Vinyl), and loved it so much I wanted to cook with it. Since I normally use deep, dark beers (like Guinness) to cook, and usually only for beef or vegetable stew, this was a bit of an experiment. All day, my apartment smelled AMAZING. Since I had to buy a three pound roast (the grocery store seems to only have VERY large roasts), and I'm only cooking for two people, this made a LOT of leftovers.
I don't usually measure anything, so I'm guessing on a lot of this. Adjust everything to your taste. As for the veggies, I used two small white potatoes, 1/4 of a large vidalia onion, and about 1/2 cup of sliced carrots. Use what you like! The blend of spices is my usual go-to blend, again... use what you like.
