Basil Chicken Merlot With Wild Mushrooms

From crockpot.com Posted as written I use chicken breast and it is very good, just make sure you poke the chicken before so that it does not dry out and check it occasioanlly if possible to prevent drying out. This is not for crock pots that only have the heat element in the bottom. Cook time depends if you cook it high or low. Low will produce better results. -- posted by SarahBeth131

Crock Pot BBQ Chicken & Peppers

I use this recipe many different ways...sometimes I make rice and serve the whole chicken breast on top w/ leftover sauce or I shred and use in BBQ sandwiches! I always like a little crunch in my sandwiches so that's why I've added the peppers, they are sweet and cut thin so they don't take away from the chicken! I have also used the leftovers in roll-ups for lunches...so many possibilities. -- posted by Rollin in the Dough!

Prize Winning 3 Bean Chili

Well, this is the result of being "volunteered" to represent my husband's motorcycle club in an annual chili cookoff. I truely think the quality of your spices will determine the quality of the finished product so buy the best spices you can afford. I've found that the local health food stores often sell really good spices in bulk. This is not a terribly spicy chili but does pack a bit of a kick - adjust the spices to your taste. I did end up winning 1st place - over 42 other teams - not bad for less than a week's notice! I like to preassemble everything I'm going to need the night before - makes it easy to throw together the day of and just let it cook. -- posted by HSingARMYmom

Leftover Pork Tenderloin Crock Pot Chili

This recipe came out of a need to serve leftover pork tenderloin in a completely different way - my kids hate to eat leftovers of the "exact" same thing they ate the night before. I kept it pretty mild for tender palates, but you could certainly add any type of chiles, hot sauce, etc. Also, for the kids I put it into tortillas with cheese for burritos while my husband and I ate it in bowls as chili. The sky's the limit to the variations -- posted by 2hot2handle

Chicken Taco Soup

I found this hearty recipe online several years ago and often make it instead of chili. Made mostly of canned ingredients, this soup lets the slow cooker do the work for you so you can go about your hectic schedule. This recipe is very adaptable to your personal taste. To add more kick simply omit the one can of diced tomatoes and add a second can of diced tomatoes with green chilies. -- posted by Chef #396295

I came up with this recipe during my first phase of atkins and I needed a break from straight meat and green beans (God, would I love a piece of pizza right now) Nevertheless, I basically just used what I had available at the time, however, my roomate tried this soup and thought it was great.
Chili Con Carne

This recipe came from my Pillsbury Cookbook. This has been my favorite way to eat chili since 1995. The recipe listed here includes my modifications. When in season, I have substituted the green chilis with a habenero and another time with a habenero plus 2 tabasco peppers. Both of these, especially the latter, made it a HOT chili. -- posted by Scrivener1

Sweet Orange Glazed Pork Chops

I love chinese food and my crock pot, oh yeah, and pork chops, so this is what I came up with. It is sweet though, so if you don't really like that you can try cutting some of the brown sugar of course, but I'm sure that this will effect the glaze if you take out too much. Think of the sweetness of chinese orange sauce, like on orange chicken only on tender, slow cooked pork chops. I know it sounds like a little bit of work at the end but it's really not. Don't worry about putting the chops back in at the end if you don't want to, you could just put foil over your platter.
I served mine on a bed of mashed sweet potatoes and parsnips (just boiled and mashed, but you could try puree) and a side of green beans. The colors of the mash and chops were great and I really feel like the sweetness of both were really good together. You may want to do 1/3 regular potatoe, 1/3 sweet potatoe (or yams), and 1/3 parsnips if you don't want it to be too sweet.
I also think that this would be great on a pork loin too, shredded up with the glaze for like a sweet pulled pork sandwich, or maybe chunk up the chops with the glaze in a vegetable stir fry : ) -- posted by soulcandybt

Indian Butter Chicken Slow Cooker

I have been looking for a good Butter Chicken recipe that can be done in a slow cooker for quite some time. I found this one on http://crockpot365.blogspot.com. I am yet to try this recipe but wanted to post it so I wouldn't lose it. These notes are posted with the recipe: This is so good! I could have gone with a bit more cayenne, because I'm a nut, but the depth of flavor is wonderful. You can tweak the amount of garam masala and curry to your own taste---it's fine to add more at the end of cooking.

Holy Chicken and Rice

This is just one of those really simple recipes that's good and very feeling. Especially on one of those chilly evenings. I made some corn bread to go along with it. I used a combo pack of breast and thighs of chicken and California style Veggies. My family loves it. I hope you will too. -- posted by Mrs.Ward

These are great for football parties! You can make the meat spicy with the hot peppers or for the wienies use mild (I'm teasing!) The leftovers are awesome made into quick chimichangas. Put the meat into a tortilla, roll and fold, and fry. Use more or less meat and peppers depending on the guest list. -- posted by Little Mommy

Slow Cooker (Crock Pot) Pesto Chicken and Sweet Potatoes

This is from the website crockpot365.blogspot.com by Stephanie O'Dea. She actually has a new book out called "Make It Fast, Cook It Slow". Stephanie spent over a year cooking every single meal and dessert in crock pots. She is really nice; before her book came out we corresponded a few times. This recipe seemed so different than anything else that I could find on Recipezaar. I have not yet made this layered meal, but it does sound great! -- posted by dogsandwoods

Vegan Baked Beans a La Crock Pot

At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good. I didn't find one for the crock pot however, using dried beans and no tomatoes.....so hopefully this fits that bill for someone else out there! I found the recipe online - http://www.beanbible.com. There are only a few things I tweaked, one being Bakon yeast. Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast & liquid smoke. Adjust the heat as you wish. NOTE: Soak the beans ahead of time (night before). The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. Hope you enjoy! -- posted by magpie diner

Crock Pot Pork Chop Chili

Adapted from a recipe by Jen Santiago (http://www.recipezaar.com/member/137839): I needed a pot of chili to take to a Cook-Off, and had pork chops on hand. I tweaked Jen's recipe for pork chops with chili sauce, then I added tomatoes and kidney beans in the last 2 hours of cooking to make a pot of chili. Got great reviews from my friends! -- posted by Chef LovenStamps

Crock Pot Pork Loin Roast

A great recipe for a rolled pork roast like the ones from Costco that tend to be a little dry & tough. The sauce can be thickened with a flour/water sauce for a flavorful gravy with pepper added. No salt is necessary as the condensed soup adds plenty! Sometimes I add 1/2 pkg dry onion soup mix sprinkling it right on the meat before cooking, Increase spices according to your taste. -- posted by Janie Cooper

Slow Cooker Tamale Pie

Looking for a easy mexican dinner. look no further! My husband and I love this stuff since I work till after 10pm most nights. Smack it in the crockpot at night and my lunch is waiting for me when I wake up the next morning. I leave the seasoning open because everyone has a different taste for heat I don't do a lot of chili powder with the ancho chili's but I love cumin and the other seasoning. Another good suggestion is mixing green onions into the gorn muffin mix, I top with shedded smoked cheddar cheese and a little sour cream. Hope you enjoy. -- posted by Mrs Spencer

Pork Roast to Die For

I needed something tender and delectable--moist and melt-in-your-mouth like, that didn't require a whole lot of fuss. One pork roast and a crock pot's help later, perfection. I can't even tell you. How. Good. It. Really. Is.

NOTE: When I say "boneless pork roast," it must be one of a boneless "blade/Boston/shoulder" cut. Every store labels them differently, but look for at least one of these labels. If it doesn't say that, don't bother. The roast should be well marbled, and have a decent layer (1/4-inch?) of fat on one side. -- posted by Battle in Seattle
