			<description>When my mother died, my brother was still living in the house. When he moved, he sold everything without telling me and all my mothers' recipes were in the stove drawer. I could have killed my brother because the one thing that meant the most to me in that drawer was her Heavenly Hash recipe. I've been searching since then for something close, cause I always got home from school just as she was finishing the fudge. I sure miss hers. So this is kind of close to it. I got it from a NOPSI cookbook they printed and sent out free at the early part of the introduction of the cookbook. The recipes used to be furnished in a little brochure they had in the buses and street cars. I still wish I had my mother's recipe. I am still working on the crunchy, crumbly &quot;crust&quot; but this recipe for the filling is the closest I have come to the real deal. If you are ever in the neighborhood of New Orleans during late April or early May, stop by Jazz Fest and try out the Pone. It will be in the same vendor tent as the Greenbean Artichoke Casserole. 			<description>Killer jambalaya! No tomato in this one and consider yourself warned: careful with the peppers in the seasoning mix. I usually cut the various peppers to 1/4 of the listed amount. I use my food processor to chop the vegetables. Do them separately to get them the right size. Have all the ingredients prepped and ready before you begin cooking because if you don't pay attention, you'll burn it. Make every effort to use homemade stock or sodium-free stock. 			<description>This is a great recipe for anyone who wants to try out their hand making authentic gumbo for the first time. It may seem like a lot, but don't let it scare you. It's easier than it looks. I like using chicken and shrimp in mine but you can use just about any kind of meat(s) you want. 			<description>This is a recipe I developed by combining a few together, and it is one of my husband's favorite things that I make.  If I am eating this, I cook the sausage on the side.  At the end, I pull out a portion of jambalaya for myself and add the sausage to the rest for everyone else.  Keep an eye on it after you add the rice. The preparation and cooking times are an estimate.  The onion idea comes from a fast food restaurant that used to be in the area, Short Stop, that served Diablo Burgers:  cheeseburgers with onions and bell peppers sauteed in butter and Tony's. Great side for just about anything  (especially grilled foods) with a light flavor - which doesn't end up competing with your other dishes.  Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things.  :)  We tend to like the gorgonzola cheese lately, but feta also works really nicely.  It all depends on what your main dish flavor is and your preference.
