My take on Panera Bread's Broccoli & Cheddar Soup...it's really close, except for the carrot bits! Kept the fat down until you get to the cheddar ( - try and get block cheese and shred yourself, it melts better than the pre-shredded. )! really easy and warming.
Dehydrator Root Soup With Ham

The roots in this soup include potatoes, parsnips, and turnips, assisted by quite a few other vegetables plus ham for flavoring. Vary the vegetables as you like: Two very good alternatives are dried rutabaga slices and shredded cabbage. An honest, nourishing Sunday night supper-type soup like this goes particularly well with Corn Bread, still warm from the oven. (see related recipe). Serve the bread with a small dish of honey, which complements the saltiness of the ham and the sweetness of the root veggies.

Dehydrator Potato Soup

This soup is creamy and thick and the flavor actually improves if allowed to stand a few hours before serving. Very the herbs as your supply or inclinations allow. Small pieces of dried jerky or bacon bits are very good added to it, too. With a salad, it makes a pleasing simple lunch or supper, particularly on a chilly day. The recipe doubles nicely too.

Cream of Carrot Soup

I made this with fat-free half & half to lighten it up a bit. I couldn't tell from the original recipe whether to simmer the carrots covered or uncovered - doing it covered made a fairly thin soup. If you want a thicker soup, I'd imagine leaving it uncovered would help.
Split Pea Soup With Spareribs

I first had this at my aunt and uncle's, had never heard of split pea soup with anything other than ham in it. Loved this, I definitely prefer spareribs to ham in this soup! Boiling the ribs in the soup and then letting it simmer for hours leaves the meat more tender than the crockpot! As written, it was a bit bland for our tastes, we added an extra tsp of the hickory salt and will try adding more peppercorns next time (I couldn't even taste the pepper this time). I added one tsp of pepper to the leftovers and that seemed to help. -- posted by The Wallaces

Vegetable 'thickers' Soup

This is a really healthy, fat free, vegan soup, which is so think it is almost solid. If you are trying to loose weight, this will keep you full and give you loads of vitamins and fibre without many calories. It is also really tasty and can be a great way of using up left over veggies. You can use any root vegetables, I like it with swede, carrot and butternut squash. I have listed individual pulses, but it is much easier to use the 'soup mix' selection which you can buy in the shops. -- posted by renjack

Phv's Ham and Four Bean Soup

A pretty, flavourful and hearty soup with lovely texture. Great with some crusty bread on a cold day. Tastes best with homemade stock but you can substitute store-bought or boullion for a quick and easy soup. The beans as well can be switched and swapped for what you like, or what you have.

Spicy Black Bean & Corn Tortilla Soup

This recipe is a spicy & hearty soup with a tex-mex taste. I was looking for a filling, good-enough-to-be-a-meal soup that was big on taste and light on fat/dairy. It is best when served with all the garnishes so that each bite has a slightly different mix of the fresh flavor. It can be easily modified to be vegetarian/vegan by using vegetable broth (or base) and soy cheese. -- posted by Ashleybakes

French Onion Soup

My personal recipe for French onion soup. Nothing out of the ordinary, but perfect for me. Makes a brothier soup than most recipes because that is my favorite part. The recipe lists 26 oz of beef stock. Don't worry about this being exact, that just happens to be how much comes in the carton I use- I like Swanson Beef Stock, but of course, homemade would be better. A couple of fluid ounces more or less would be absolutely fine. -- posted by Piaqua

Red Pepper Vichyssoise

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche. Prep and cooking time does not include the chill time! -- posted by breezermom

Slow Cooker Garbanzo Bean and Potato Soup With Pesto

For extra nutrition, leave potatoes unpeeled. To boost nutritional value further, add 2 cups chopped kale (chard, baby spinach, baby beet greens, etc.) to the slow cooker *just*before serving -about ten-fifteen minutes. Kidney beans can replace garbanzo beans if you prefer and for additional color. A sun-dried tomato pesto would be an interesting change in place of traditional pesto.
Hearty Light Chicken Soup

I'm on a diet and I wanted use up some left overs in the freezer and make something that would fill me up. So why not make an original low cal chicken soup? So here's my chicken soup recipe.

If you don't want to buy a bunch of different frozen vegetables just buy a quality mixed vegetable. It usually pretty close to the portions in this recipes.

If you cook at a lower temperature add about 10 minutes to your cook time. -- posted by Erv Kosch

Chicken Pepper Pot Soup

I got this fabulous recipe when I vacationed at Disney's Animal Kingdom Lodge. The soup was on the Boma - Flavors of Africa Buffet. When I inquired about a cookbook with the recipe, the waitress went & got the recipe from the kitchen. This is posted in the same manner I got it, but I'll tell you that finding 1 gallon containers of broth is difficult. So I use 10 14oz cans, it's a little more, but just as good. I also usually use 2 poblanos. Using ready to go chicken tenders is a big time saver. I just sautee them in a little sesame oil & garlic before I dice them. This soup is very tasty and borderline addicitive. I've made several times since I got back. It is absolutley delicious the next day and freezes well. Hope you enjoy it as much as I do. -- posted by Tina & Angie

My Spiced Butternut Squash, Sweet Potato, Carrot and Orange Soup

This was inspired by my other butternut squash soup recipe (#402703). The orange flavoring is optional. I use pre-cut, cubed squash when I can find it. You can also use a small fresh butternut squash. (The prep time assumes you are using pre-cut squash.) I use almond milk in this recipe (I like Almond Breeze) instead of cream or half and half. You can save a little time by roughly chopping the onion and garlic, because the soup will be pureed later. I do chop the ginger rather finely because it is so fibrous, and I don't want lumps in the soup that didn't get pureed. -- posted by coconutty

Three Sisters Soup

"Three Sisters" refers to the wonderful combination of beans, corn and squash -- foods traditionally grown and consumed together by many American Indian tribes. In the garden, the corn is planted in the center, then the beans surround them and use the stalks as a trellis, then the squash is planted around the base to spread out.
Vegetable Soup! If you took away the egg which I myself forgot to add in anyway, it would even be vegetarian and vegan. Completely healthy without the need to add ANY condiments at all, unless you need a stronger taste. In that case you can add pepper/salt/soy sauce/meat/stock but this is for the health conscious who don't mind fresh tasting vegetable soup that is not strongly-flavoured.
A vegan adaptation of a Cantonese-American favorite. Not hard to make but takes some time to stuff the wontons.

Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities.
The Easiest and Best Crock Pot Chicken Tortilla Soup

A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which make it HEALTHY which is alway a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa. -- posted by S.H.E.

Hot Dog Bean Soup

I found this recipe in the 2009 editon of Taste of Home Quick Cooking Annual Recipes. It was sent in to them by Mary Ann Kime of Sturgis, Michigan. After she mixed everything together she warmed the soup in the microwave. Since I didn't want to dirty up alot of dishes, I just decided to heat everything on the stove top. If you want to follow the exact recipe, and have that particular cookbook the recipe is on page 101.Serve with crackers or even a grilled cheese.
Red Kubbeh Soup

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew.

I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh.

Ginger Butternut Squash Soup

The combination of ginger and butternut squash is delicious and addictive. This recipe yields a creamy soup without the use of any cream. I love to whip this soup up with my immersion blender right in the pot. This soup also freezes well. You can serve it with a dollop of sour cream if you desire, although I serve it without a garnish. If you want to make this a completely dairy free soup, use dairy free margarine (Fleishman's unsalted, or Earth Balance.) Oh yeah, and you MUST use fresh ginger. -- posted by Lee Hock

Corn Chowder With Chicken & Bacon

This is another custom twist on a recipe from my favorite cookbook. The original recipe is for Sopa de Elote, a sweet corn soup from Central America. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395

I went on a cruise on the Holland America cruiseline and they served a wonderful carrot soup. The seasonings are a little different, and this is from the Down Home with the Neely's cookbook, so you know it's gotta be good! -- posted by Sharon123

Alabama Living Soup

This recipe comes out of a local electric company magazine. We love hearty soups on the cold, damp days. This recipe fits the bill. Just place everything in the crock pot, go to work, come home to a wonderful soup. This makes a large crockpot of soup. For thicker soups you can use less broth, for thinner soups, use more. The cups measurement for the broth is up to your preference. -- posted by Jellyqueen

Tri-Colour Stuffed Pepper Soup

Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years.

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe "too bland", which is how we like it---pure comfort food straight from Leave It To Beaver.

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! Using the three colours of peppers just adds some fun and depth to it. -- posted by The_Swedish_Chef
