Paula Deen's Beefy French Onion Soup

This recipe, from "The Deen Family Cookbook" is different from most in that Paula has added cubed beef which makes it even heartier and suitable for a main course if you add a big slalad and crispy French bread alongside. She uses big, sweet vidalia onions for this soup, saying they give the broth the richest, most delicious flavor. -- posted by Lorraine of AZ

Italian Vegetable Soup

This is a great way to use up fresh garden zucchini if you've eaten enough of it fresh and need to mix it up a bit. I found this recipe from Taste of Home 30 Minute Cookbook, and I love it because a delicious lunch or dinner is done quickly. I used a spicy Italian sausage (which I think gives way more flavor) beef bouillion and red onion, but feel free to vary according to your palate.
Ronnie's Cabbage Soup

Ronnie's was a great Jewish type deli restaurant on Highway 50 on the east side of Orlando. I have fond memories of it from the early 80's on. Sometime in the 90's, I think, it closed. They used to have stainless bowls on the tables with pickles, sauerkraut, pickled beets, etc. I don't live in the Orlando area any more, but my mom does and she cut this recipe out of the Orlando Sentinel for me from a column they have called "Thought You'd Never Ask" where they get recipes from local restaurants. I haven't made this myself yet, but I thought I'd put it here for safekeeping. I will also add this Test Kitchen note: "We used only 1/2 cup sugar preparing this recipe. That amount could even be cut back to 2 tablespoons." -- posted by DeniseBC

Aash- E Anar (Pomegranate Soup)

This thick Persian stew (or aash) is flavored with fresh herbs, tangy pomegranate syrup and tiny meatballs. You may want to prepare the aash a day in advance, it tastes even better the second day, after the flavors have melded. The meatballs may be omitted or substituted with vegetables such as mushrooms. If you cannot find pomegranate syrup, you may substitute unsweetened pomegranate juice and reduce the water. -- posted by Sephardi Kitchen

A beef roast is slowly boiled, even more slowly cooled, yielding a rich flavorful beef soup. The cool roast is sliced and served with salsa verde (which Depalma adapted from a Mario Batali recipe). -- posted by DrGaellon

Italian Hamburger Veggie Soup Like Olive Garden Soup

This recipe was one I came up through trial and error after eating at olive garden last year on my birthday. We don't eat out much and we love homemade soups. I also don't personally care much for canned soup. I had been looking for a new soup to try and after I liked the soup at olive garden so much I decided to give this a try. I personally used a 50/50 mix of ground beef and venison burger for this but use what ever you like. I also like to make my own stocks but I found the Progresso Beef broth works very well for this when I am time crunched. I have done this on the stove top but it works great in the crock pot too. I grow and preserve my own veggies and freeze some soup ready mixed veggies but you can just as easily buy mixed veggies if you wish. Canned works ok for stove top but turns to mush in the crock pot, use frozen for that. Don't feel intimidated by the long list of ingredients, this throws together in about 15-20min and in the crock pot its almost no effort at all. We serve it with a fresh salad and breadsticks so its just like the resteraunt soup, salad, and breadsticks special. I buy frozen breadsticks that are just brown and serve. -- posted by victoriansweets_cakencandy

Potluck Top Ramen

I wanted to take something to church today for a potluck and hadn't planned ahead. I looked around my kitchen and saw beef top ramen in the cupboard, burger in the freezer, and veggies in the drawer and this is what I came up with. I made it in the crock pot to be easy to transport and keep warm. There were no leftovers. You can even simplify it more by using canned mixed veggies, leftover steak, basicaly whatever you have available. -- posted by Big Man's BBQ Queen

Queen Victoria's Brown Windsor Soup

The very soup reputed to have built the British Empire and one that was oh-so-fashionable in Victorian and Edwardian times! This soup was served daily, until recently, in the dining cars of British Rail. This classic hearty soup was also very popular at the castle (Windsor) in the nineteenth and early twentieth centuries. Queen Victoria was particularly fond of it, and it regularly appeared on state banquet menus.
However, this recipe has not had very good press over recent years - drab tinned brands and indifferent, greasy soups served in some lower end restaurants have given it a bad culinary name! I hope to redress that with this authentic recipe from Windsor in Berkshire, England - home to the Royal Windsor Castle. A rich and hearty soup, this makes a meal in itself when served with crusty bread, scones or bread rolls. -- posted by French Tart

This is a great recipe for using up left over meats. You can use ground beef, left over roast or steak.
This can also be made on the stove, just simmer for 3-4 hours.
Using MSG is optional but I use it because I think it adds a lot of flavor. -- posted by Catnip46

A simple and easy to make hearty soup recipe I tossed together one rainy day with just a few things I happened to have on hand. It rivals many soups made from scratch in both flavor and satisfaction...yet, even a young child can combine these ingredients and follow the simple directions and perhaps amaze their Mom or Dad at mealtime. Ready in just 20 to 25 minutes...easy clean-up too! ...just one pot!
Hearty enough to be a main dish too. -- posted by Chef #408832

Green Russian-Style Meat Soup

The idea and most of the directions come from a Russian cookbook. This is a variation on the green schi, a green meat-based soup served with half a hard-boiled egg in the bowl. It is great when made with sorrel (and can be made with a jar of schav), but, lacking that, some spinach and some lemon juice will do. The original recipe calls for an unspecified cut of beef, but I like it with beef heart, the silken texture of which matches the green soup perfectly. -- posted by Anya

Pressure Cooker Vietnamese Pho Bo

Vietnamese has to be my favourite cuisine -- and I am always looking for great Pho, this wonderful beef broth eaten with rice noodles.
Vegetable Beef Barley Soup

This started as my attempt at recreating my husband's grandmother's vegetable soup. But soup, of course, is rarely an exact science. It has evolved over the years and is now my very own and my family loves it. The ingredient amounts on the veggies and barley are approximate, so adjust to your taste and desired thickness. Make it your own. :) You can even add diced potatoes if you're up to it or use pasta instead of barley. -- posted by RaisingKnights

This is one of my all time favorite soups! It's thick and hearty similar to a chili, but has the same flavor as traditional stuffed peppers! Using extra-lean ground beef, 98% fat free beef broth, and brown rice make this recipe surprisingly healthy. It's very easy to make and also freezes well.
Grandma Lee's Meatball Soup

In 1930, my Great-Aunt Lucy was a new bride, and mortified to realize that she didn't really know how to cook. She asked my Grandma Lee for help. Lucy showed me a stack of recipes in my grandmother's handwriting. She and I made this one together. Grandma hadn't made it for me, but my mother made the more traditional (and expensive version), Konigsburger Klopse, with white sauce and capers. This is the Depression Era version. All 5 of our kids now make this. -- posted by Mrs J B

Red Kubbeh Soup

Kubbeh is a small pocket of dough that is stuffed with ground beef. Kubbeh for soup is usually boiled, whereas Kubbeh served on a platter is fried. Grocery stores in Israel and increasingly in the United States offer frozen packages of Kubbeh that are ready to drop into a vegetable soup. Enjoy this traditional recipe for kosher Kubbeh Soup, or Marak Kubbeh in Hebrew.

I found MirJ has a great Kubbeh recipe, Recipe #26755 or you can use frozen store bought kubbeh.

Tri-Colour Stuffed Pepper Soup

Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years.

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe "too bland", which is how we like it---pure comfort food straight from Leave It To Beaver.

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! Using the three colours of peppers just adds some fun and depth to it. -- posted by The_Swedish_Chef
