Poblano Corn Chowder with Shrimp

This is slightly modified recipe from Bon Appetit. Their version is served in the Sundown Cafe in Atlanta. I've added more spice and seasoning, and reduced some fat.
Crawfish (Shrimp) and Corn Soup

Hubby had this soup in New Orleans when we were visiting friends. He loved it, and asked for the recipe. He has made it several times since then, usually when he is "on his own" for dinner (its very easy to prepare). Being a vegetarian--I've never tried it, so I don't have an opinion. -- posted by Dee514

Shrimp Chowder

I got the inspiration for this creation while watching one of my least favorite chefs, Email Lagross (who, by the way, is one of only a handful of chefs in the world who has such rare spices as "papa reeka" and "cardamin" in his pantry) on TV. As I watched him standing back and throwing spices, from about 6 feet away, into (or "inside of", in Lagross-speak) the pot, I said to myself, "Self! This is a freakin' cooking show, not basketball tryouts!" Fortunately, since I am not schizo, "self" did not answer "me". Are you with me so far? -- posted by Mille® ™

Seafood Chowder

Are you looking for a quick but delicious seafood soup? Can't wait to make that stock and take all that extra time? Well.. this is the soup for you. It's thick and creamy and comforting. I know many of you out there frown upon the use of condensed soups. But try this.. it tastes like a restaurant quality soup without all the fuss. Use whatever seafood you like. Just use at least 1 1/2 pounds of it. You can even use chopped cooked chicken if you don't like seafood. Want a curry flavor? Just add some curry powder while cooking the onions and celery. You can turn this into a creamy curried vegetable soup by omitting the seafood and using more onions and celery with the addition of carrots and whatever other vegetables are your favorites. Leave out the curry powder for a satisfying creamy vegetable soup. Just try it.. you'll like it. -- posted by luvmybge

Simple Shrimp Chowder

A recipe adapted from a 1992 issue of Woman's Day. This recipe was from an article on family recipe traditions during the holidays. The person who shared this recipe said this was a recipe her family makes for Christmas Eve.
Shrimp & Corn Chowder

All I can say is, YUM! This is a very simple recipe that reminds me of Mom's shrimp thermidor. (I sure wish I had my Mom's recipe...) But in the meantime, this is easy and tastes yummy! Very hearty, and a treat for my family since it has shrimp in it...(I've even made this and served it over Pepperidge Farm pastry shells to try and "mock" my Mom's recipe.) Good copycat, in my opinion! NOTE: Her recipe did NOT include corn, although sometimes she would add peas. -- posted by Stacky5

Shrimp and Scallop Chowder With Coconut Milk

A seafood chowder with a Caribbean accent. Scotch Bonnet chiles are very hot, so use serrano or jalapeno if you like a milder taste. Also use only UNSWEETENED coconut milk, found in Asian sections of the grocery store. WARNING: Use latex gloves to seed chiles, since seeds contain volatile oils, which can get on fingers, and then in eyes or on lips and burn like H***! :) -- posted by mikekey

Soups soothe the soul. You can substitute 1/2 bag of a 32 oz. bag of Southern-style hash browns instead of the peeled potatoes.
Shrimp Zarzuela

Spain is quite famous for its seafood stews, and Shrimp Zarzuela reflects this culinary heritage. Golden Spanish olive oil, unique sherry wine vinegar, sweet paprika and fragrant saffron are the Spanish flavors that give this one-pot meal its character. The traditional seafood dishes of Spain use a variety of shellfish from the Mediterranean Sea; we simplified the recipe by focusing on ever-popular shrimp. Round out this meal by serving a premiere cheese from Spain, such as Manchego or Cabrales.
Truly the best gumbo recipe. The cayenne is adjustable for the amount of heat you want in your gumbo. If you like Cajun this is by far the best gumbo you will ever have. The recipe was given to me by a Cajun about 5 years ago and I finally came to making it and WOW. (this stores well in mason jars. if your not serving immediately only add seafood to the mixture when you are to serve and only when mixture is boiling for a 3 minutes and then take the gumbo off the heat.) -- posted by Chef #457852 - bggio

Shrimp Chowder - OAMC

The winter season is here and it's time to take more substantial things to eat to work, at least out here where we freeze our patooties off!! This is really yummy, it's very heavy. You might want to use smaller portions. I package this in little to go containers with a garlic, cheese and herb biscuit wrapped and tossed into the container for a complete meal.

This is written for the long way .... I tend to cheat a LOT. Using the precooked bacon, frozen pre-chopped onion/celery mix from the freezer, chicken bullion and water, milk instead of cream. However, this is written for the cook that wants to do it the long way (and probably the right way hehe) -- posted by ColoradoCookin'

Poblano Shrimp Corn Chowder

Absolutely delicious and hearty soup that is always a crowd pleaser and the best I have ever had. Not for those highly concerned with fat grams but worth the splurge even if you are. Great served alongside a meal of soft tacos. I frequently use "Better than Bouillon" as a base and I think the lobster and vegetable are equally good. If you want a lighter, thinner version, omit the creams and use another quart of whole or 2% milk. -- posted by Tamram Chef #737987

Creamy Southern Seafood or Fish Chowder

After searching through a bunch of recipes here and elsewhere I couldn't find quite what I was looking for. So instead I decided to whip up my own variation. This will be a work in progress, but as I'm pregnant and dying for a good creamy, but not too unhealthy fish chowder this will do the trick. I'm moderately lactose intolerant, but I'll be sure to include substitutions for lighter, low dairy, or dairy heavy versions. Cheese and cream actually don't have that much lactose in them, so you can use them without much concern about that.. of course you do get the delicious but unhealthy extra calories that come with. -- posted by MC Baker

Jackie Apgar's Shrimp and Rice Chowder

This is a spicy soup/chowder that even our kids love.
Removing the seeds from the chiles lowers the heat, but keeps the flavor.
Being a garlic-lovin' family, we usually triple the amount of garlic.
This is also really good with either grated parmesan or shredded monterey jack cheese.
For some reason, recipezaar doesn't like limes. Use six lime wedges for garnish. -- posted by TinChef

Bouillabaisse With Rouille Topped Croutons

A great Sunday meal, in front of the fire or the TV! Rouille is the classic accompaniment to Bouillabaisse :), this spicy, creamy puree is a delicious dip for fresh bread as well as a topping for the croutons; a luscious way to use up stale bread! We made this at Adelaida's house and they were all watching one of the soccer games. These tasty morsels dress up even the simplest soups & they are very good! We use red snapper in this dish, but cod, haddock, halibut, or other fresh white fillets will work & the Rouille (roo-EE) is traditionally spicy. This is a combination of a couple recipes. Hope you enjoy! ;) -- posted by Manami
