Corny Potato Chowder

From Lansing, Michigan, Lee Deneau writes, “Nothing warms my body and brings back memories of home like a bowl of corn chowder. My mother's recipe was much more time consuming than mine, but I like this one just as well.” With lots of corn, bacon and potatoes, the soothing soup will fill you up on chilly days.
Clifton Country Inn Crab and Corn Chowder

The Clifton Inn was built in 1799 and eventually became the residence of Thomas Mann Randolph, US congressman, governor of Virginia and son-in-law of Thomas Jefferson. It is a stately southern manse in the heart of Virginia with gently rolling lawns that drop off into pure mountain magic. -- posted by Molly53

Creamy Quinoa, Corn, and Vegetable Stew (Vegan)

This recipe is loosely based on 'R's hearty breakfast stew' at R Thomas Deluxe Grill, in Atlanta. It is highly versatile, sometimes I also put spinach and mushrooms in it, but I think there are many more possible additions. I'm not actually vegan, and I eat this for breakfast with chicken. I used to eat a lot of carbs for breakfast, albeit healthy ones, like whole grain breakfast muffins. Since I started eating this, I feel so much better in the morning, it is still filling but I have considerably more energy. -- posted by Cleatuslives

Hedda's Hearty Vegetable Soup - 0-1 Ww Points

A very hearty (and optionally spicy) tomato based vegetable soup. Originally received as a typed handout at a WW meeting - no trace of its source. The only change I made to it was to add pearl or pot barley. A big pot of this soup sits in my fridge when I feel the need to lose a few pounds. It is filling and virtually guilt free eating. Eat as much as you want! All vegetables and quantities are optional and any non-starchy veg would work. Tastes better when reheated. -- posted by Hedda Lettuce in Ontario

Perfect Chicken Corn Chowder

I've never had a better one. Been making this for years. Use a chablis, sauvignon blanc or any not-sweet similar white wine; it need not be a great wine but the wine DOES add that certain something. I've even been known to add a tiny splash of dry sherry at the finish. The soup is filling and delicious. Also freezes well. A vintage recipe, from my "olde" recipe file. I'll tell you how old it is: it calls for 17 oz. cans of creamed corn! I have no idea where the recipe came from originally! -- posted by Jezski

Bean and Smoked Sausage Chowder

A simple and easy to make hearty soup recipe I tossed together one rainy day with just a few things I happened to have on hand. It rivals many soups made from scratch in both flavor and satisfaction...yet, even a young child can combine these ingredients and follow the simple directions and perhaps amaze their Mom or Dad at mealtime. Ready in just 20 to 25 minutes...easy clean-up too! ...just one pot!
Hearty enough to be a main dish too. -- posted by Chef #408832

South Coast Portuguese Fish Chowder

by Jasper White
from 50 Chowders: One-Pot Meals
— Clam, Corn & Beyond
(Scribner, 2000)
This chowder has a relationship to New Bedford and the area New Englanders call South Coast, which includes that part of southeastern Massachusetts west of Cape Cod and a small piece of eastern Rhode Island. The area is ethnically diverse, with a large Portuguese population, but everyone, even those who aren't Portuguese, loves good food. I served this chowder recently to a group at Sakonnet Vineyards in Little Compton, Rhode Island. As soon as word got out that there waschouriço(a dry, spicy, garlicky Portuguese sausage) in the chowder, the crowd demolished it. Almost everyone in this region loves chouriço, which the locals pronounce "shore-ee-soo." All over New England where the Portuguese have settled, chouriço is included in clambakes, clam boils, and other traditional Yankee fare.

With its translucent reddish broth and colorful pieces of bell pepper, tomato, chouriço, potato, fish, and cilantro, this Portuguese-style chowder is very enticing. It has a splendid aroma and a savory spicy flavor, making it an interesting and exciting alternative to milder creamy chowders.

For equipment, you will need a 4- to 6-quart heavy pot with a lid, a wooden spoon, a slotted spoon, and a ladle. -- posted by Dave & Sue Cook for U

Dilo's Chicken Corn Chowder

took me a long time to perfect this, but now that I feel it can't get any better (and the family feels the same). It's definitely a family favorite and requested when people come to visit. I started with basic chicken corn chowder and added sweet potatoes one time and loved it. But it still wasn't quite there, then the key was a bit of cinnamon for flavoring. This bides well on a cold rainy or snowy day. -- posted by DiLo8280

The spice blend can be uses for so many things, I make about a triple recipe, and it keeps well in either a zip bag or a container with a tight-fitting lid.
Vegan Creamy Corn Chowder

This is a very simple recipe. I use unsweetened 'MimicCreme' for all my cream based soups. It is made from a blend of almonds and cashews and is dairy free, cholesterol free, gluten free, 100% natural, kosher and of course, vegan. It can be ordered from mimiccreme.com or Amazon.com. The mimicreme.com web site also lists retail locations where it can be purchased. Of course, feel free to use any non-dairy substitute, such as soy, almond or hemp milk, but it may not be as creamy (you can always thicken with 1 tablespoon flour + 1 tablespoon water or broth). -- posted by CinLin

My Mom ran a little restaurant in a bank building and her soups were the best. The most popular one by far was this clam chowder. The only changes I made were to add more clams than she did. I also wait to add the whole milk until the end, because I like mine thicker and that way you can control the thickness to your taste.
Pantry Vegetarian Chowder

If I recall correctly, this came from a package of dried beans. It's rich comfort food that isn't really too awfully bad for you as most things in the "comfort" category are. You could certainly substitute canned beans for the cooked dried beans and get the same result. (If you do, don't add any salt, as canned beans are already salted.) Time for preparation assumes dried beans and excludes the pre-soaking time of 24 hours. You can use 1-2 cups frozen corn instead of canned if you prefer. Two cans evaporated milk almost makes 3 cups. I use that and add half and half to make the 3 cups. I like to garnish this with some plain corn tortilla chips. -- posted by Cook In Southwest

Corn Chowder With Chicken & Bacon

This is another custom twist on a recipe from my favorite cookbook. The original recipe is for Sopa de Elote, a sweet corn soup from Central America. I don't like vegetarian dishes and I don't like complicating recipes with too many fresh ingredients, so I simplified this and made it meaty.

Consider adding 1-2 tablespoons chopped fresh cilantro or some diced jalapenos to change up the flavor. You can serve this with warm tortillas, cheese crisp, cheesy jalapeno bread, corn bread, whatever. I suggest garnishing with a tortilla strips, a shredded Mexican cheese blend, or even sour cream -- posted by Chef #1534395
