			<title>Rocket and Broad Bean Potatoes</title>

			<description>Baked potatoes stuffed with broad beans, rocket (or baby spinach leaves), tangy blue cheese, garlic and basil; and if it takes your fancy, topped with chopped bacon!  Adapted from a recipe on some 'Good for You' cards from International Masters: a series focussing on health and nutrition.  I am intrigued that 'broad beans' are not in the Zaar Kitchen Dictionary.  So, some information about broad beans!  From Wikepedia: broad beans have a long tradition of cultivation in Old World agriculture, being among the most ancient plants in cultivation and also among the easiest to grow. It is believed that along with lentils, peas, and chickpeas, they became part of the eastern Mediterranean diet in around 6000 BC or earlier&amp;quot;  Reading that you'd expect to find them in the Zaar Dictionary!  Not so!  The entry in the Cook's Thesaurus reads &amp;quot;fava bean = broad bean = butter bean = Windsor bean = horse bean = English bean = fool = foul = ful = feve = faba = haba = habas&amp;quot;.  And my recipe card says &amp;quot;Broad beans are a tasty, almost meaty-flavoured bean that are full of nutritional benefits.  Broad beans are a great source of protein and fibre and also contain vitamins A and B and zinc, iron and folate.  They are available fresh or frozen - if using the fresh beans, you will need to cook them lightly in boiling water to soften them before blending them with the rocket&amp;quot;.  Obviously, you could use other cheeses instead of the blue cheese.  I've made these several times and have used low-fat feta (which I love), and I've also added a handful of pine-nuts in step 3. . 			<description>This is the perfect blend of Tangy/Sweetness, it is remarkably mild,  not oily and is hugely versatile!  Wonderful for picnics, lunches to go or just an added side at dinner. I do NOT like apple cider vinegar but in this recipe it is fabulous, especially for bean salad skeptics like me.  I make it in a one gallon ice cream pail and store it in the fridge, when it begins to run out I add a can of what ever bean I have on hand and a few more red onions.  I can do this until the 'brine' runs out.  Then I just start all over again and always have it on hand.  Fresh cooked beans have a nicer texture and are more cost efficient than canned but canned is yummy too, though do contain lots of sodium.  So if you are on a sodium restricted diet, I would suggest cooking dry beans and fresh green and yellow beans for this recipe. 			<description>This corn casserole recipe is almost identical (at last) to the traditional Jiffy corn mix, sour cream, etc recipe that my family has made for years. Upon diagnoses of celiac disease, this was one of the first things I decided to try and replicate while converting it to gluten free ingredients....and I think Ive got it!! Since we never make this casserole just for my family, many non-celiacs have tried it as well and cannot believe it is Gluten Free! In fact, some relatives of mine have even proclaimed that this version is better than the original! Not bad, eh? :)

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

			<description>This is a filling, low points salad. If you really want to make it lower points, cut the amount of couscous you use (my usual couscous is 9 points per cup). I actually use 1/3 cup couscous for 3 points and leave out the olive oil from the dressing to make it really lean. As written, this recipe provides a total of 12 points but using 1/3 cup couscous and no olive oil gives 3 points only. Serves 2 as a lunch or up to 4 as a side dish. Cook time includes half an hour for the salad to chill in the refrigerator. 			<description>Delicious potato salad recipe that I made up.  I always make it for any BBQs or summer parties we have at home and there is never any left.  Also make it regularly to eat for lunches and it always goes down well with my friends who sometimes ask me to make extra portions so they can have it for lunch at work too :-)  A 1kg bag of potatoes makes enough for 4-8 portions depending on whether you are eating it as a full meal e.g. 4 portions if eating as a meal in itself, or 8 portions if serving as a side at a BBQ etc.

It can be eaten straight away but it tastes better the longer it's left for the flavours to mature.  I usually leave it at least overnight before eating but sometimes even longer, up to a few days and it tastes better the longer you leave it :-)

			<description>I don't know about you, but I'm a bit of a soup and salad person, and once a week I have just a salad or soup/salad, soup/sammy for dinner rather than a heavy dinner. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good.  Now whatever you do ... don't get rid of that cheese - Save!  It makes a great spread on baguettes or makes an amazing spread for a sandwich. It's very good and the corn flavor just explodes in your mouth!
You would never guess that this recipe is mainly cheese and corn.
Make it in the crock pot.   Adjust the amount of cream cheese if you like.
Depending on how thin you like your sauce, you may or may not want to add the half and half.
