Chocolate Torte Cake

I found this recipe in the Hershey's Chocolate Lovers cookbook. I've had it for many years, but just tried the recipe this year and it is FANTASTIC!!
Hershey's Chocolate Raspberry Dessert

I cut this recipe out of a magazine. I've never made it, but it looks and sounds amazing! There is a note on the recipe that says you can substitute 1/4 cup raspberry preserves and 1 teaspoon of water for the raspberry-flavored liqueur. It also gives the option of making a Double Raspberry Chocolate Dessert by substituting Hershey's Raspberry Chips for the Semi-Sweet Chocolate Chips. ***Prep time does not include several hours of chilling. And since I have never made this dessert, I had to guess at the prep and cook times. -- posted by momofM&M

Chocolate Lava Cake

Moelleux au Chocolat… A French classic that literally melts in your mouth!!! This dessert is usually made in individual ramekins, but see the serving ideas below for other possibilities.

Tips:

You can definitely prepare your chocolate lave cake recipe ahead of time, and then bake 10 minutes before serving. I always do it this way!

In terms of buttering the ramekins: butter the bottoms first, and then butter the sides, wiping from the bottom up to the top. It helps the chocolate to rise even more.

In terms of baking time… well, it depends on how runny you want it! I like it with a super-liquid-oozing center -- so do my guests! For this, you want the top to be cooked through, but the center to be liquid. You can check with a toothpick after 10 minutes of baking.
If you don't like liquid-center chocolate desserts, just cook for a little longer, and you will have an incredibly moist chocolate cake. So, either way, you can't go wrong!

Serving Ideas:

You can, if you want, serve your chocolate lava cake recipe with a Crème Anglaise (English Cream) or a Coulis aux Framboises (Raspberry Sauce). Personally, I always serve it as is (no sauce). And honestly, everyone FALLS IN LOVE with this dessert!!! How could they not?!!! -- posted by Shesbittersweet

Chocolate Chip Cookie Cake

This recipe is from a Cooking For Kids cookbook. It is my DD#2's favorite cookbook. I like that it uses a boxed cake mix so it is easy for her to help with. Servings will depend on how thick you slice them. I didn't shake my chocolate chips with flour to coat them so they all sank to the bottom. You might want to flour coat the chips to keep them from sinking. -- posted by *Z*

The World's Fastest Chocolate Sour Cream Cake!! Maybe the Best!

So so so good! So so so little work. Well, yeah, come on, you DO have to measure the ingredients. And a simple glaze would be good. But if you are really, I mean REALLY, pressed for time, place a paper doily on the cake, sift confectioner's sugar over it, lift carefully and there you have it. And this is sooo much better than a cake mix. I use an 8" square scalloped pan; that makes it look really special. Nawww, that's not cheating. It's just taking a little help where you can find it! Recipe was found somewhere on the internet April, 1998. That's how long I've been making it. -- posted by Jezski

Bread Pudding Ummm . . . Best Ever

I had never had Bread Pudding before I went to Vegas and had it at a buffet. Well, I fell in love. My obsession use to be chocolate, but since I've lost 52 lbs. I gave it up. NOW, my obsession has become THIS version of Bread Pudding. ( I have to be careful how much of this I make, so I don't gain all of that chocolate weight back!) I found this recipe on the "Momswhothink.com" website and I hope it is ok to post it here. This is true comfort food. Do not over bake or you will lose the eggy texture of the bread. The cinnamon, nutmeg, and vanilla are the key ingredients to the rich flavor of this dessert. I use french bread, and have even used dry bread that has been sitting around a few days. I even used wheat french bread once and it turned out great! The sauce is more a vanilla, butter, cream sauce. I usually make about 4 times (yes, that is what I said!) in order to smother the bread pudding. One recipe of it is just not enough. Ummm. Make the sauce while the pudding is baking and you will save time. You can also use a Hard Sauce if you would rather. (recipe # 102574 sounds like a good one.) Even if you have never tried Bread Pudding, be daring, and try it. I use to turn my nose up at it, and now, I cannot wait for an excuse to make it, again and again. Enjoy! -- posted by terriers2

Lemoniest Lemon Squares

These are the best lemon bars I've ever tried. They have a fabulously buttery crust, a not too sweet or too tart curd-like lemony filling, and a thin chewy top. The recipe is from San Francisco pastry chef Emily Luchetti's cookbook, "Classic Stars Desserts". With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.

NOTE: The squares can be made a day in advance, covered and refrigerated. Bring to room temperature before serving. Dust with confectioner's sugar before serving. -- posted by blucoat

Microwaveable Chocolate Ganache

No double boiler needed! Use it for icing or filling a cake, or to make truffles. Recipes vary slightly so I wanted to post my go-to ganache so I can find it every time. And you can easily double or triple this one. My basic ganache uses a 2:1 ratio of dark chocolate to heavy cream, 3:1 ratio of white chocolate to heavy cream, somewhere in between for milk chocolate. Those measurements don't translate perfectly in a measuring cup so the 2:1 ratio is below (most common) The better the chocolate the richer the ganache. I love mixing semi-sweet with bittersweet. At room temperature it's a perfect truffle consistency. It can be flavored with extracts or liquers. Hazelnut extract makes it so yummy! Grand Marnier would be good too, but is delicious plain. -- posted by Chef #1530933

Sachertorte, one of Austria's most famous desserts, was created in the 1830s by baker Franz Sacher. Here is an updated version of the classic recipe, made into individual servings using a muffin tin. The moist, light cake is topped with a glistening chocolate icing and served with a dollop of warm Cointreau spiked apricot jam. A lovely special occasion dessert!
A Mere Trifle! Strawberries and Clotted Cream Trifle

Luscious fresh strawberries nestle amongst light sponge cake sandwiched with strawberry jam, which are then covered with creamy custard and topped with clotted cream. Simple! This trifle may be simple but it is the star on any tea-time or dessert table and if you cannot obtain clotted cream, use whipping cream, heavy cream or double cream instead. Madeira is used in place of sherry in this trifle, which gives a mellow flavour to the trifle. This is a recipe that my mum sent to me, from a cutting in a British magazine promoting Devon and Cornwall in the West Country - home of the Cream Tea! If you wish to serve this to children or non-drinkers, substitute the Madeira with fruit juice of your choice. In the summer scatter some pink rose petals over the top for the ultimate and romantic finish!
Pain D’Épices - Spiced French Gingerbread Loaf With Honey

A French classic and one that I will me making myself from now on, having just paid a small fortune for a tiny, if delicious loaf from my local boulangerie! This is a cross between sticky ginger parkin and a gingerbread cake or a tea loaf. It is not as moist as parkin or gingerbread, but it is extremely good when spread with butter or even better, when toasted.......divine! It is also surprisingly good when served with cheese. Another idea that I discovered in a local café, is to serve it warm with a dollop of crème fraiche and a little bunch of fresh berries on top, a perfect dessert for an elegant dinner party! This improves with keeping and makes a wonderful gift for a foodie friend or hostess – wrap in cellophane and attach a ribbon with serving suggestions. If you cannot source Quatre Épices, I have a recipe on zaar to make it at home!
The best way to translate the name is “folded cake”. This is one of the most famous and loved Slovenian dishes.
