Crunchy Apricot Cake

From my grandma....my grandpa's favorite, which is easy to believe because it's delicious! Apricot pie filling spread on the bottom, followed by white cake, and a coconut pecan topping.
*Note: Make sure the cake mix you use is for 8x8 or 9x9 inch baking dish. If you try to make this with a 9x13 inch pan, there will not be enough pie filling to cover the bottom. -- posted by The Wallaces

Sue's Fudge Sundae Pie

One of my favorite dessert recipes from my mom.

*Note: If you'd rather use a 9x13 inch baking dish, just double the recipe. The prep time does not include the time needed in the freezer between making the layers of the pie. -- posted by The Wallaces

Spice-Kissed Pumpkin Pie

I usually don't like pumpkin pie but I had to try this one and I loved it. It's different with the hazelnuts and coconut milk. From the Heidi of the blog 101cookbooks. I didn't do the spice blend and I used only cinnamon. I used a frozen tenderflake crust and I got too much filling and had to put in ramekins. -- posted by Boomette

Cranberry Bread Pudding and Amaretto Sauce

The only thing more comforting than a warm bread pudding on a cold day is one drizzed with a warm Amaretto sauce. The tartness of cranberries is a wonderful contrast to the sweeter elements of this dish, while the nuttiness of almonds and Amarertto takes it from "comforting" to gourmet. Delicious!! -- posted by Chef mariajane

Pumpkin Crisp Plus Lower Fat Variations

This is my husband's favorite dessert. We got the recipe from his uncle Larry. I have made it for may family and it has been requested that I bring it to Thanksgiving again this year. I also made it for a BBQ this summer, and a friend who came to the BBQ asked for the recipe so she could make it for Thanksgiving. It's great anytime, but its a must in my house for Thanksgiving. -- posted by Jennifer Bennifer

Chewy Chocolate Gingerbread Cookies

I originally found this recipe on a baking blog, Cookie Baker Lynn. I made one major change to the recipe; melting the chocolate and incorporating it into the batter instead of using them as chunks in the cookie. I searched here and found two recipes for these cookies each giving credit to Martha Stewart's website. Both used chunks of chocolate rather than incorporating in the batter. I think this is a significant enough change to warrant another recipe and to claim my own spin ;) These cookies are thin chewy chocolatey goodness in every bite. Prep time includes chill time. -- posted by invictus

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068

Fresh Corn Custard Cups

Wait! I know this sounds bizzare but you must trust me when I say that this tastes wonderful! Think about it like this, we put sugar on our cornflakes and we eat sweet popcorn and this is really just one step past that. Once you get over the idea, you'll be glad you made this I promise. The natural starch in the corn thickens the custard naturally, the same way as processed corn starch does.
Tender and Spicy Molasses Cookies

This is a highly modified version of Old Fashioned Ginger Cakes by Rachel-Snachel . It is interesting because it uses no milk or eggs, and is devoid of refined sugar.

This recipe's flavours are equilibrated for Blackstrap molasses, if you use regular molasses you might have to reduce the spices.

Spiced Baked Pears

This is a perennial favorite for Thanksgiving! It's adapted from a recipe for Spiced Baked Apples by Lorraine Chausse on allrecipes. The pears make a really lovely presentation for dinner parties and can cook while you eat dinner.
The recipe states 6 servings, but you can also halve them and just ladle the sauce over the half. These are yummy served by themselves or with some vanilla ice cream. -- posted by Heidigal

Fluffy "cut-Out" Sugar Cookies

Have you ever had those sugar cookies at publix that are really fluffy and cake like? Well hear is that recipe. I think its the sour cream that makes it so fluffy. I also roll them out maybe 1/4 in thick and under cook them a little but thats probably a personal preference. They do take a little work just like any cut-out cookies but this is something that anytime I ask someone in our family what I can bring for dessert they always say this! I use my kitchen aid but before that I would use my hand blender as long as I could and then mix the last part of the flour in by hand. Hope you enjoy. -- posted by 998171

Peanut Butter Cookies

This recipe makes enough for a family reunion (I halved the recipe and still had 4 dozen cookies). I've posted the recipe as originally written. I really like the seasonings--cinnamon, ginger, and cloves. It makes a nice twist on a classic treat. Next time I'll skip the shortening and use real butter (just a personal preference). I'd also dip my fork in white sugar and press them in a criss cross pattern after they come out of the oven instead of before.
Pecan Pie Brownies -- Version II

Here's how to please chocolate lovers and pecan pie lovers with one scrumptious bar. These are the creation of Camilla V. Saulsbury and appeared in her book: Brownie Mix Bliss. These bars have a bottom of chewy chocolate brownie topped with the familiar brown sugar pecan goodness of pecan pie. The author prefers a cakey brownie to contrast with the pecan filling which is why she calls for the three eggs in the brownie batter. But if you want a fudgy brownie, reduce the eggs to 2. Do give these a try! -- posted by Lorraine of AZ
