Delicious German Pretzels

A wonderfulfully chewy soft pretzel recipe that is a must try!
For the cup of warm milk, it should be 110 degrees, or about 1 minute in the microwave. I usually use brown suger instead of malt powder and after they come out of the oven, sprinking mozzarella cheese on top is a nice option. -- posted by Rachel Lynn

Pumpkin Apple Streusel Muffins (Healthy Version)

This is a modified version of the Pumpkin Apple Streusel Muffin recipe found on this site. It has less fat and sugar and still tastes great! It also cuts down the baking time.
' Fnky' Flour Tortillas

These are really good and maybe I shouldn't name them "Fnky" (funky) just a play on my 'handle'.:). I had not made tortillas since I was really young and they were perfect then..but you know that saying "Don't use it.. you lose it", well it's true. You know how our 'Abuelitas' cooked.. no recipes.. just a pinch of this and a pinch of that and I thought I was doing it right BUT I forgot that I was using "All Purpose" flour.. which makes it so simple and healthier ..no 'lard' or oil.. so here goes. -- posted by Fnkyclmedina

Carrot-Banana Muffins (Or Bundt Cake)

This recipe is a cross between banana cake and carrot cake! It is a healthier version of a cake recipe from an old Bon Appétit Magazine (Oct. 1993). I replaced the oil with applesauce and it is still exceptionally moist and delicious. You could substitute some oil for the applesauce if you prefer. If making the cake, use a greased and floured 12-cup Bundt pan and bake for about 1 hour. -- posted by blucoat

Unknownchef86's French Countryside Bread (Abm)

This makes a first-rate country French bread in your ABM. My family loves it so much I can't make it fast enough! Makes a 2 lb. loaf. This is also an excellent dough to make by hand. Simply let it raise a couple of times, punch it down in between and bake it off in a 400 degree oven for approximately 30-40 minutes (I don't remember exactly how long). Bread should sound hollow (when tapped) when done. -- posted by UnknownChef86

"breaking Bread" Onion Bread for Bread Machine

I love this recipe because the rolls turn out soo nice and moist!! This recipe came from a book i purchased called "More Breaking Bread" with Father Dominic Garramone. In the origional recipe there is only 2T of minced onion and the onion salt is actualy regular and not onion. I ABSOLUTELY LOVE onion so these are very oniony and they same me time because of the bread machine!! Make them for my lunches for work during the week, rolls that i find at the store just don't have the onion taste i want, and these are perfect for me and my boyfriend!! -- posted by Chef GreanEyes

Tyler Florence's Pita Bread (Bread Machine, Dough Cycle)

I don't know if Tyler Florence would approve of the use of a bread machine to knead his pita bread recipe. I think it works wonderfully. Fresh pita bread is like a loaf of homemade bread. The flavor, texture and fragrance can't be compared with the store bought variety. I think this goes well with Paula Wolfert's Hummus which I also submitted to RecipeZaar. This recipe uses a Pizza Stone but I think you might possibly use a hot cookie sheet with good results. Prep time is bread machine time. -- posted by P.B.&Jayne

This is a recipe by Guy Fieri that I saw on Guy's Big Bite. Easy and tasty - a really good recipe. The cooking time is for only one batch of griddling because it depends on how big your griddle is. Great with tzatziki or hummus. Each flatbread counts as 1 WW point.
My Pizza Crust

This is my "one size fits all" Pizza crust recipe...It makes 2 12-14" pizza crusts or 1 thick crust (my fave)....make 1 pizza crust and save the other for a family-sized calzone a few nights later. The semolina flour adds protein and makes the crust a little more crispy than you would get from just using all purpose flour...the whole wheat flour just makes me feel better about the whole thing. -- posted by John's in the Kitchen!

This is a healthier version of our favorite banana bread recipe. It has very little fat yet still moist and light. The maple syrup also adds a nice depth of flavor. I use white whole wheat which is lighter, milder and less dense than regular whole wheat and would recommend it for this recipe.
Crusty Portuguese-American Yeasted Cornbread (No Knead)

An easy no-knead recipe for "pao de milho" is from Nancy Baggett's wonderful new cookbook, Kneadlessly Simple: Fabulous, Fuss-Free, No-Knead Breads". The large, homespun loaf has a mild, go-with-anything flavor and a delightful crusty-chewy top. It has a finer, moister crumb than most cornbreads, the result of the cornmeal being combined with boiling water and turned into a mush first. This simple, seemingly unimportant step makes a big difference in taste, too: Due to chemical changes that occur as the cornmeal begins to cook, the bread is noticeably mellow and sweet, even though no sugar is added. Serve it with meals, along with butter, toast it, or grill it and use in all sorts of hearty meat, cheese, and roasted vegetable sandwiches. This bread is very easy to make, but due to the slow rise, no knead method, you must start this bread a couple of days in advance. -- posted by blucoat

No Knead Pumpkin Yeast Bread

I found this recipe on another website, but there was no printer-friendly format. So I'm posting it here so I and other cooks can print it better. I have changed the procedures to reflect what worked best for me.

Most of the preparation time is letting the bread rise for hours and hours. I made this bread the other day and it was so easy and delicious that I would make it every day. Just let it rise during the night or while I'm at work and bake it when it's convenient. It has a really crispy crust and is soft in the center. To enhance the texture I added 1 tsp of vital wheat gluten for every cup of flour I used. It makes the bread heavier and chewier and helps the dough to rise. All three cups of flour listed in the recipe do not blend into the dough, so try adding flour one half cup at a time. If you want to make plain bread just substitute the same amount of water for the pumpkin.

When letting the dough rise, if it's in a warm spot (say a sunroom) it's good to cover it with a damp towel. If the area is not that warm a dry towel will do. -- posted by Valeria

Semmel Rolls- (Bavarian Bread Rolls)

Delicious Semmels easily made with your stand mixer. These have a wonderful crisp and chewy crust. Great for sandwiches or burgers hot off the grill. Fabulous with butter while still warm. :)

This recipe is more of a hamburger/ sandwich bun vs a dinner roll. I suppose you could make them smaller but would need to adjust baking time.

I found this recipe duplicated on several websites so I am not sure exactly who to credit it to. I made several changes to the original recipe to suit our taste.

The recipe calls for 1/4 ounce of yeast but I often add an additional tsp of yeast if I am going to use all of the flour. I can usually tell by the weather if I am going to need all of the flour (damp, humid). -- posted by Brenda.

No-Knead Ciabatta

This is one of my most favorite recipes. It has very few ingredients but turns out very well. When you take it out of the oven you can hear the crust crackling-very nice! Hope you like it as much as we do.
(If you want to use whole wheat you can add only a half a cup to this recipe -more than that will make the bread dense) Also if you only have active dry yeast- double the yeast amount to 1/2 tsp.
Note* since it is a no-knead recipe it is a pretty flat loaf with a max. height of about 5-7 inches. -- posted by Leah's Kitchen

Yoghurt Corn Muffins With Corn

These muffins are fluffy, soft and very yummy! They feature three types of flour and use yoghurt in place of milk to give them a softer texture. They taste rather sweet if you use the sugar, but you could also turn them into savoury bites by adding some ground chili or other spices to the dough.
Just ran across this solution to the gf pizza crust dilemma and am SO excited to try this! Not exactly "traditional" in terms of flavor, but if you're ok with that and are with me- pizza's all about the toppings (esp veggies), it's worth a try :-) I've lightened it up a bit, but am sure that any gf cheese would work well.

Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

3rd place winner submitted by Beth Mavor. I found this recipe in The Evening Times Holiday Cookbook newspaper. I have not tried this recipe, but I'm posting it for safe keeping. -- posted by internetnut

No-Salt White Bread

Very simple white bread recipe for breadmaker (if you're clever you can adapt for oven!) Whole wheat flour could be substituted. This is originally a medieval Tuscan recipe, created by peasants who couldn't afford the high taxes on salt. Perfect for those of us on low-sodium diets! -- posted by JennyMidget
