Avocado Mango Salad

I bruise easily, and Vitamin A is the key. I try to find interesting ways to serve Avocado because it is so rich in Vitamin A. (I don't worry about the fat in Avocado). This goes well as a side dish for Enchiladas, Quesadillas or any Mexican style foods. -- posted by Shannon in VA

A Unique & Yummy Salsa!

I am a a stickler for using fresh ingredients so when my boyfriend from 5 years ago made this up for the first time I cringed! Pardon me for saying so, but if I hadn't have been living with him I never would have eaten it! Hahahaha!!!! The boyfriend is long gone but this is the only salsa I'll eat! If you aren't used to cilantro it may take a few minutes to grow on you - it did me. Give it a chance though. It is seriously yummy!! -- posted by Lottidawe

Mango-Avocado Salsa

This is an easy tropical dish that is full of flavor! I like to serve it with chips, or as a side dish. It would be easy to try slightly different versions by adding lime juice, ginger, pineapple, or jalapenos, depending on your personal taste. If you have any other suggestions, I would love to hear them! Thanks! -- posted by Calla Lily

Mango-Avocado Salad with Lime

This salad is beautiful, refreshing and delicious! I got this from my sister, but originally it came from a cookbook -- I don't know which one. Prep time does not include time to chill before serving. -- posted by Meredith K.

Gallo Pinto (Costa Rican Rice and Beans)

I found this recipe in a copy of Vegetarian Times. Gallo Pinto translates as "spotted rooster", and is a dish eaten by many Costa Ricans almost every day. The addition of ginger and Worcestershire adds a quite unique flavor to this dish. -- posted by Kozmic Blues

El Gallo Pinto (From Costa Rica- Beans and Rice)

I was lucky enough to spend part of the summer in Costa Rica. This is the traditional dish that every Tico eats for breakfast, lunch, and probably dinner. I never got used to it for breakfast, but this is what I've come up with to imitate my travels there. -- posted by alijen

Gallo Pinto (Costa Rican Rice and Beans)

This recipe was actually posted by TheMom51 in her reply to recipe #78747. I thought I'd post it as a searchable recipe. Her original comment was: Just thought I'd add my Costa Rican daughter-in-law's recipe. It uses the traditional Salsa Lizano (you can order it over the Internet) which is probably why Matoszinho didn't think this recipe was quite right

Preparation time does not include time to cook the rice. If you need to cook your rice add an additional 15 minutes to the prep time. -- posted by Chef Johnny Ringo
